Great recipe. I have tried this twice now. If you don't like "fatty" bacon, then don't use 2 layers of bacon. The inner layer will still be "soft" while the outer layer is crisp. A great addition to our family menu. The gravy is to die for.
There are two tricks to make the bacon nice and crisp. First, make sure that you don't overlap the bacon too much. And second, keep the temperature lower when searing it after taking it out of the foil so it fully cooks through. Happy to hear you enjoyed the gravy.
