NY Style Gourmet Cookies - 3 Flavors with using basic dough

Recipe:
Basic Bakery Style Cookie Dough
• 1 cup unsalted butter, softened to room temperature
• 3/4 cup brown sugar
• 1/2 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 cup cake flour
• 1 3/4 cup all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt

If you're adding one egg at a time, why crack both of them into a separate bowl? Wouldn't it be easier to crack them into the mixing bowl 1 at a time?
