Eggs------------------------------3 egg yolks+2 whole eggs
Sugar----------------------------1/4 c +2 tbsp

Very nice tweak to the custard making,which makes your techniques all you own.howevever what is your opinion on uht milk which comes in these cartons,or would you prefer full cream milk.Nice going Mahima on a old favourite.

I tried the caramel pudding. As i have done the before by baking... this recipe i steamed...
But i had to put some more time than 10mts on low flame as custard wasn’t firm.
But it came out well... the pudding, it was cooked through...the taste all fine...caramel was there ( top & bottom)
But full caramel didn’t come out from the mould ...i had greased the mould too..
What could be the reason? Is it because i cooked for a longer time or caramel was thick on the mould..

If the caramel layer is too thick , it will not get time to melt during cooking. So pour thin layer of caramel.

Mahima chechi. Njan use cheyunnath microwave convection oven aanu. Ee waterbath'll vachulla method microwave convection ovenil cheyaan pattumo? Or is it possible only in OTG?
You can bake the same way in convection too

One QN on caramelizing. do we need to add water in beginning or do it after sugar turns brown? i tried plum cake receipies. And if I add it in beginning, sugar dissolves in water, and it boils until water evaporates and starts turning brown.
Both way you can caramelize.
