Yall do yourselves a favor and 86 the hocks and just go ahead and use neckbones... less fat, a decent amount of meat and if they are smoked they add more flavor. If they are fresh they they tend to cook a bit more tender.

(and many of us put a dollop of ketchup on top..... don't bash it til you try it).................................................. this a a polish/german and definitely not southern US food...... my great-g'ma who was born in Minnesota in 1898 and then lived her entire life in Montana........ and never had any southern roots at all...... made this and passed it down to her children/grandchildren.............. it's a topic of family conversation because some love it and some hate it. My family are on the love-it side............. I even have kids who ask for it for birthday meals!!!!! HAHAHAHA.

Just saying... I call this depression style cooking..... My grandma would say that every once in a while she would get in trouble for letting the beans "run dry" while her mother was working....... that was the families dinner at that time, so if you screwed it up it was a big thing.... they didnt eat!...... I also cook like this and understand it... No, no one is going to starve, if I mess up, but Im not .... Low and slow, on the back burner...........Everything in the pot all at once!

The ham hocks are more for the flavor than the meat. Smoked ham hocks taste a lot like smoked ham

That is hard to say. Beans can vary as far as cook time for a number of reasons. I just cook them until they have the consistency I'm looking for

Yes. also if they arent soaked the means can split and you end up with something resembling mush (which is good also)
