We eat yuca (you-cah, not yuck-uh) regularly as a side item in Cuban cuisine. It takes a long time to cook so we usually buy it frozen where it’s quicker. Then we pour “mojo” on it (lime juice, onion, garlic and evoo that’s been cooked down). Thanks for this recipe! I have cassava flour and want to make some tortillas for breakfast pizzas.

It’s Yuca (yoo-ka) not Yucca. Biggest mistake most stores make. Yucca is a plant with inedible roots. Yuca comes from the cassava plant and it’s yummy! Yuca is wonderful for making fries, chips or mashed potato replacement.
Thanks for this recipe; I have difficulty getting the rolled out tortilla off the parchment paper. It sticks to the parchment paper and breaks when trying to lift it off to place on the griddle. What do u think is wrong?
One recipe suggested cutting on all sides a gallon freezer zip lock bag. Then rolling dough between those 2 sheets. Also sounds like a warm kitchen and too much water?
I had my mom make me these tortillas because I’m a spoiled brat....kidding, no because she’s a pro at making tortillas. My family is as Mexican as they come. My sister is celiac so she can’t eat flour tortillas, my dad liked them, my sister liked them. They came out great and everyone was happy. So I’m gonna have my mom keep maki h them so I do t gain weight during quarantine 😉 spoiled
There is more to making this dough form, I made this with the exact same ingredients, same steps you did, and my dough looked like quick sand nothing I did adding more water, more cassava flour made a difference, so I added wheat flour and that binded the dough, not true that the cassava dough will bind, I'm sorry to say but you are misleading people.

I cook cassava roots in my meat and chicken stews and black beans. Its delicious, you should try. That's how they do in Brazil

I use any left over plastic bag that food come from, like frozen vegetable bag.

Tortillas come out really easy to make with this. But the cassava flour when cooked taste like play doh

All this cassava recipes are from Africa. Africans used the cassava in a bunch for as long as we can think.
