    My Gluten Free Flour Mix • How to make Jilly G's ...
    Today I am going to show you how to make THE BEST Gluten Free flour tortillas I've made!!!
    These tortillas really are so close to regular tortillas...although it has been many, many years since I have had a regular flour tortilla..but I think they are the best ones yet, even if they look a little rustic!
    These tortillas are easy to make, and can be made with or without a tortilla press.
    Minimal ingredients too! No xanthan gum, only one GF flour, and easily made dairy free!!
    * There are many different brands of Cassava flour and they are all just a little different from each other. Some require more liquid and some do not. So as I mention in the video, we are going for texture and consistency rather than exact amounts of liquid.

    For the Cassava Flour Tortillas:
    2 1/2 cups Cassava Flour * see note above amzn.to/3GxCMM7
    1/2 tsp Baking Powder amzn.to/3W1gmIL
    1/2 tsp Salt amzn.to/3W07h2Y
    2 Tbsp Butter, Olive oil, Shortening or Vegetable oil
    3/4 cup Water- I ended up adding in and extra 1/3 cup or so of water
    Rub the butter into the flour. Add in the salt and baking powder. Add in 3/4 cup water. If needed, add in more water a little at a time until the dough comes together and feels damp but holds together. Portion the dough into balls. Roll out between 2 pieces of parchment paper, using very little flour for dusting. Heat a large nonstick skillet over medium heat. Cook tortillas until brown spots appear. Flip and cook on the other side. They may seem too dry and stiff, but once cooled they are very flexible!!

    Hi Jill, the Apricot Almond Muffins turned out very nicely. You had them with our coffee for breakfast. Delicious! Harriet and I have never made Tortillas from scratch . But here goes. Your
    recipe looks very straight forward. That is what we like about you, Jill. The recipes are simple and straight forward. We will make it with Taco fillings and have them as snacks spreading

    I'm glad that you have a lot of recipes without xanthan gum. I've heard a lot of bad things about it and I avoid that and other gums and carrageenan.

    Yours turned out better than mine in the past. I will have to look at my recipe. (My memory seems to think these are really close to mine.) I'm looking for a good recipe that I can make homemade burritos. My tortillas keep cracking and splitting, but otherwise they are good. This is another awesome video!! Thanks for keeping us inspired!

And I have made a pizza crust out of it and it too is one of the best gf pizza crusts I have made! My circular shapes need a little work, but that's ok lol! As I am writing this, my cat is sitting on my lap! They are both doing good, thank you for thinking of them! Both of our cats are so loud! I would say it is old age for them both, but my male cat has been loud since he was a kitten!

    Those butter tortillas look better for buritos to me look like they have the same qualities of regular tortillas. You could use your Olive oil ones for making mini pizzas. Once I hunt down some Cassava flour , I will make these and then use them for an Enchilada recipes. I put a link the other day in for your flour blend for my pasta bake. I'm getting better at remembering. I did put it in my Community post for my Top 5 sites for the year.

    Great idea. I have 2 bags of cassava flour and will try this recipe. Do you think bacon grease will work as the fat?. Thanks Jill!. I just harvested some of my own cassava I grew and can't wait to eat that one as well.

    I cannot stand the taste of cadsava. I get those cassava -- they're big and round, and I get them at a local farmer's market. He loves them, I despise them. So I'm guessing I would not like tortillas made with cassava flour.
