    Green Apple Mojito Igloo
    Ingredients:
    Green Apple Mojito Cremeux:
    1 Green Apple skin (removed and cut into pieces)
    ¼ cup Green Apple Syrup
    1 tbsp Caster Sugar
    2 tsp Corn Flour
    1 tsp Veg Gelatin
    ¼ cup Water
    Green Food Colour
    30 gms Unsalted Butter
    ½ tsp Lemon Essence
    ¼ tsp Peppermint Essence
    Method:
    Prepare and Set the Cremeux mixture as shown in the video.
    Lemon Mojito Jelly Insert:
    2 tsp Corn Flour
    1 tsp Veg Gelatin
    ¼ cup Water
    ½ cup Water
    5.5 tbsp Mojito Syrup
    2-3 drops Lemon Yellow Food Colour
    Method:
    Prepare and set Jelly Insert as shown in the video.
    Almond Cake/Jaconde Insert:
    ¼ cup Almond Flour
    25 ml Maida
    25 ml Caster Sugar
    10 gms Unsalted Butter
    5 gms Oil
    50 ml Milk
    1 tsp Baking Powder
    Method:
    Prepare Batter and Bake as shown in the video.
    Lime Mascarpone Mousse:
    200 gms Mascarpone Cheese
    4 gms Lemon Zest
    300 gms Heavy Cream
    14 gms Custard Powder
    ¼ cup+1 tbsp Water
    200 gms Milk
    36 gms Caster Sugar
    3 tbsp Powdered Sugar
    1 tsp Lemon Essence
    50 gms Unsalted Butter
    Method:
    Prepare the Mousse and assemble the entremet as shown in the video. Finally Unmold, Garnish and serve as shown.
