    It's very easy to separate eggs by breaking them all into a bowl, and then cupping your fingers, slightly spread, to pick each yolk out with your hands. Go slowly, and it's done so much more quickly than using a cup separator. (I learned to so this in our Mennonite bakery when I was a child, making meringue for 100 cream pies at a time.)

      i can't stand separators; I just use my fingers to separate them individually. If you put all the eggs in a bowl THEN try to pick them out you run the risk of breaking the yolk and ruining your bread.

    Game Changer! The 12 raw whites plus 40 g powdered whites & 40g whole egg powder recipe is a game changer. I have had trouble with being able to digest the original egg white bread recipe - it sat in my stomach like a rock. I found it hard to chew, hard to swallow, and hated the texture. The 40/40 bread texture is so much better to me and more like bread (I like that name - 40/40 bread). The crust felt a little leathery, but I saw the ketogenic woman say to try putting the egg white bread in the fridge overnight - so I tried it and yep, this morning the crust was soft. I toasted two pieces and had a fully loaded bacon cheese burger for lunch. Thank you so much for this! I also learned a trick. If you put a small dent or trench down the middle of the bread before putting it in the oven the sides don't cave in as much. Now I'm off to try the "easiest" egg bread with the 40/40 powder split at the end to see how that works out. :) I had given up on this egg bread thing - THANK YOU!

    Following all of the instruction here, I've a few tips for those of us using less than optimal equipment. I make half-batches using a cheap little hand mixer in a 2 quart Pyrex. I can get the whipped egg whites to the stiff and "slipping point" when I mimic the motion and air introduction of a high end stand mixer with a whip. That means I go noisily around and around like the orbital pattern of good stand mixers. It also means I go up and down at the same time because my tiny little beaters (2.75 in) are quickly submerged such that I am no longer introducing air. Inexpensive stand mixers I saw online did not all have orbital motion and some only had little beaters (not a whip) so folks could end up with a partial fail not taking these two things into account. Also, my measures for the cream of tartar err on the generous side. I, too, separate eggs into a small bowl one by one then transfer each to ensure only successful/clean whites. Hope this helps!

    I saw a life hack recently where you cut the top off of a plastic bottle, for example a water bottle. You turn the top upside down, and place it into the base of the bottle, then crack the egg in it. Supposedly it holds the yolk at the top. I have not tried it yet, so I cannot confirm that it works. 😊

I would love to see the other recipes you mentioned like pizza crust, calzones, etc, AND anything else using this bread. BRING 'EM ON!     I just made this bread again and I added one extra ingredient another RUclipsr suggested - 1 tsp. of nutritional yeast.
    Just that little bit made it taste more like real bread, it's amazing!
    Just thought I'd pass that along.

      I saw someone suggest 3 tablespoons of nutritional yeast so I tried that and didn't like the flavor of the bread at all (even though I like nutritional yeast!) I'll try again with just 1 teaspoon and see how it is. Thanks! I'll go check out @lovingitonketo ☺️

    I would suggest separating the eggs over a small bowl & then add the whites to the jar. that way if a yolk breaks it won't spoil the rest. Also, using a plastic mixing bowl can prevent the whites from whipping.

      ​@IndigoNili Does anybody know what I am doing wrong? Toward the bottom of the loaf of egg bread it is like rubber and uncooked. Tried it twice and is still the same result. I tried cooking it longer, but it did not seem to help.

    I have had the experience of different loaves turning out quite differently. It really does change from batch to batch. It all is good to eat. The really important thing to remember is to poke the mixture down to eliminate holes.

    I made this a couple months ago. I swore I'd never waste money/time on this styrofoam again. Then I found this video. Had to wait for a non-humid day. I wish I knew exactly what I did first time because this time it turned out great by following Nili's instructions. Also made the egg rounds but need to work on that a bit. I used my USA bread pan. Love USA pans. Expensive but worth it. No spray - nothing. Bread slid right out. Not a bit stuck. I'm a new fan here! Thank you.

      @@IndigoNili Thanks. I forgot to mention I'm using a VERY old stand mixer. It belonged to my mother-in-law. It has to be at least 50 years old. I thought I might need to buy a new one but so far I'm getting by. I just ordered more USA pans - mini loaf and mini rounds to try some of the other things you're doing. I was going to buy silicone like you use but the bread pan worked so well so I thought I'd stick with it. Next time I will try the nutritional yeast as discussed below. btw - I discovered you because of this video. Your life is so much like mine or what mine used to be. Love watching.

    I tried this recipe and so far it’s looking good (it’s cooling at the mo). As I did not have a stand mixer, I used a hand mixer for 10 minutes. The egg white were not as stiff but worked well. I added 2 egg yolks and used erythritol instead of Allulose. My bread brown to a light brown, not as dark as in the vid. Thanks for a great tutorial!!

    Thank you so much for so many details. I've never been lucky making bread of anytype , regular or low carb, and my Low Carb Loaf adventures have collected many tears and kilos of trash. My best "bread" experience has been the Oopsie Bread that is made with whipped whites and folded in yolk and cream cheese, and I make them into fruit spread danishes. Then there are chaffles, and those are nice too. I've wasted ingredients making Lupin 'bread" and I've pretty much given up on Low Carb "sandwiches" all together.
    I'm hoping, with so much detail, advice, warnings, guidelines and general wonderful step by step directions you have, that maybe I can finally make something that will resemble sliced bread in function.
    My mate likes to make fun of my "fake foods" , so it would be nice to have something that looks and acts "normal" so that we can share meal experiences without having two separate things for everything. It would be nice to have a nice pizza or calzone crust that is not too heavy. I don't mind fathead bread, but my mate complains it's TOO filling for Pizza since it's already cheese based, LOL!

    I used 1 & 1/4 cup of Wegman's brand of pre-seperated egg whites in a carton. The secret to success in using "pre seperated" egg whites is allowing them to come to room temperature AND patience. It will take 45 minutes to an hour of whipping them at full speed but it WILL happen! So far the bread (for me) has turned out perfectly every time. YUM!

    I blew it. Everything was going great until I forgot to turn the oven off during the 30 minute cooling off time. Caught it 15 minutes in, turned off the oven and hoped it would still be okay. It wasn't terrible, but I know I can do better. I'm still going to have sandwiches. I may try spices in the next one. Thanks for all the tips!

    Thanks for all the tips. I have done an "artisan" type loaf just mounding it on a silicone mat. I sprinkled sesame seeds on top and it turned out beautifully. The slices reminded me of a good rye loaf. I reduced the egg white powder from 1 cup to 2/3 C and it made it less dry for me but then I had to redo the macros in cronometer to adjust.

    You can use the egg yolks and make a lot of custard for pies, filling donuts, cakes and more.

    I'm new to your channel and looking for alternatives to traditional Fat-head dough as I'm allergic to almonds. I've made FH dough with cashew "flour" and its fine, but very carby and expensive! In one of your other vids you mentioned that FH dough pizza is cheese on top of cheese, and I do agree. I think this is a much better alternative.

    My daughter does keto, I do psmf/keto. She starts back to work tomorrow, and I know she enjoys making her own calzones/hot pockets for work. She's heard about me making the bread, but hasn't tried it yet. I'd love to see how to make hot pockets and things like that, if I can make a few and take over to her place, maybe she'd be interested. Thank you for the tips video, especially since my last 2 loaves in the smaller bread pans have VERY dark bottoms. I had put them lower in over thinking they'd rise like the big loaves, without realizing they'd actually burn there.

    Thanks for the heads-up on not using whey protein powder. I've got a whole jar of the stuff here and I hate it in drinks. I'm going to have to figure out another way of using it up. Maybe I'll hide it in almond flour brownies or something...

    I love all your tips. Made some yesterday and it didn’t rise very well. But with your tips I think I know what I’m doing wrong. I’m whipping in the egg protein. I start out mixing in slow but then speed it up. I am getting a kitchen aid mixer. I’m tired of the hand mixer. Definitely ordering the bun pan. We would love those. I love how detailed you are at instructions. 😁

      Karen~ I've found what works best for me is to actually fold the egg white powder in by hand. I realize that sounds contradictory to the issue, but for myself, I'm usually speeding up the mixer because I'm getting impatient with that step & want to move on =) Doing it by hand w/a spatula really forces me to slow down & it turns into a more enjoyable step~ if that rings for you, it might be worth a try. Bonus is you are guaranteed amazing, tall bread- whatever the shape. ~Samantha in AZ

    wow...99 cents for dozen eggs? Here in Switzerland we pay a least 4 to 5 francs, something like 5 to 6 $ and these are the cheap ones not organic... I think I will move to the US.. thank you for this recipe.

      I don’t get my eggs from chickens or where Nil can. I have to get them at the supermarket and I pay 5.99 for vital farms. they are organic cage free and natural foraging chickens. I would prefer from my own chickens, but I’m in an urban area America.

    I also use regular eggs, it works so much better. The price here is best for eggs. I am in Michigan right now, usually I’m in south Texas. I use Judee’s now. Price is so much better

      I keep it in an airtight container in the fridge for up to a week. It freezes well too!

    Great video, like usual. I bought silicone pans for egg white bread ( the loaf pan and the red round shallow muffin pan) but my bread, cinnamon buns and mini pizza stick to the bottom of them because they are silicone. Do you know the reason? Should I grease them? Thank you!

    Been using your recipe with the egg yolk powder. I find the crust a bit bitter and dry. I find this with all the various recipes for this type of bread. Wondering if there is any way to help? If I want to cut off the crust, it’s almost impossible to cut off, I get so many crazy shapes on top. Never comes out uniform. Any tips for that?

      I just put them in an airtight container. In the fridge they keep for up to a week but you can freeze them for longer.
