Made & Ate 1 KG (2.2 lb.) Hamburger Steak Sousou no Frieren / Frieren: Beyond Journey’s End

- In Sousou no Frieren (葬送のフリーレン), AKA Frieren: Beyond Journey’s End, we see Frieren the elf mage make 1 KG Hamburger / Hamburg Steak (ハンバーグステーキ) for her party consisting of Fern the human mage and Stark the human warrior, as it's Stark's birthday (chapter 26 in the manga). Eisen the dwarf warrior, who was in Frieren's previous party, would make these absurdly massive hamburger steak as a way to honor the warriors from his village which were also made for birthday gifts, like when he made them for his party and his student Stark. I'll show you fellow warriors how to make the Warrior Honoring 1 KG Hamburger Steak based on the official Sousou no Frieren anthology manga.

Ingredients:
1 kilogram (2.2 pounds) beef
200 grams bread crumbs
2 eggs
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 small onions or 1 large onion
Olive oil or butter as needed

Recipe:
1. Dice onion(s)
2. Heat frying pan on stovetop at medium heat, add either olive oil or butter into pan, & when hot enough add diced onion to sauté
3. When onions are an amber color take pan off heat & turn off stove. Put the onions aside to cool down.
4. Put 1 kilogram of beef in a large mixing bowl
5. Add 200 grams of bread crumbs to bowl
6. Add 1 1/2 teaspoons of salt
7. Add 1/2 teaspoon of black pepper
8. Add 2 eggs
9. Add sautéed onions
10. Mix everything thoroughly
11. Put mix in a large pan on the stovetop, recommend a 12 inch cast iron pan, & turn heat on to a little above low heat
12. Put thin layer of olive oil or butter in the pan before putting in your beef mixture
13. Compress meat into a big patty shape, including rounding off edges, as much as you can
14. Push divot in center of the patty
15. Leave hamburger steak alone to cook on low heat for 6 minutes
16. Loosen sides of the patty with a spatula then moving the patty onto a large plate
17. While wearing heat resistant oven mitts turn over pan used earlier & cover hamburger steak on plate then flip both together so patty is back in the pan with raw side down
18. Put pan back on stovetop & cook the raw side again for 6 minutes
19. After 6 minutes add about 250 milliliters of water into pan, enough to cover top of hamburger steak
20. Turn heat up to medium then cover the pan with a lid; cook meat for about 15 minutes
21. Check if meat is done by sticking a toothpick in middle & if it comes out clean it's done
22. Transfer hamburger steak to a large plate then enjoy eating your 1 KG Warrior Honoring Hamburger Steak made by Frieren to honor the warriors she, Fern, and Stark are as well as Stark's birthday present.

Several tips from Germany here, mix the eggs and the breadcrumbs beforehand and don't be shy to add one or two more eggs if that mix turns out too dry. And you can bake this in an oven too, just make sure your pan is oven-ready, ie. has no plastic.

Great tip! That is another option to ensure a tasty dish! I actually made this 3 times trying to get the recipe as close to the original source as possible but still turn out delicious, changing the amount of seasoning, the stovetop heat, and the amount of of egg. Great to know the dish is enjoyed all around the world in its own local variation.

My advice is to form the cake with your hands and to leave it in the fridge for at least 30 minutes, that way it’ll keep it’s shape better. It’s better to use beef with 80/20 meat/fat ratio.
Also another way to check doneness is to use a thermometer, it should be done at 160F.
That's a great tip for forming the hamburger steak. I based my steps on the manga. Yep, that's the beef ratio I used.

@@RC-ky4lf before refrigerating, as the meat cools the fat will take longer to render and thus keeping it’s shape. 30 minutes is the minimun but overnight would be ideal.

I must've subconsciously wanted to make the hamburger steak. This week I suddenly bought a can of corned beef out of the blue and tried to learn cook it, a jump from my current sausage and crab sticks diet. When I got home I was hit with the realization that rats had raided my garlic and onion stock weeks ago. They ate all the garlic and whatever left of the onions have dried up. So, I just cooked the corned beef with an egg mixed it with rice and sweet thai chili sauce.
In the process I cut my finger(I was still recovering from a bad cut to my toe due to a sharp broken tile piece) from the can's sharp edge and then dropped the rest of the can's content on the floor.
I wish I have kitchen magic like Frieren.
Magic would make life more convenient, even making grapes sour for those who like it sour (Eisen).
I get that sometimes, when it rains it pours as they say.

I was surprised at the size of Freelen's hamburger steak. Hamburg steak is one of the most popular Japanese home-cooked dishes, along with curry and rice. This recipe is also the same as the one commonly used in Japan, although the quantities are different. I sometimes add milk, and Personally, I prefer not to fry onions beforehand. Also, sometimes nutmeg is added in addition to pepper. If I could give you one piece of advice, it would be more delicious if the outside was browned and the inside was juicy.
Yes, the hamburger steak is super big! I like to eat hamburg steak with demiglace sauce. I cooked like Frieren in the anthology manga lol, juicy inside from the 80% beef & 20% fat and cooking it in water. I also like a nice sear with my hamburg steak.

Yep, it's very practical and doesn't require much or fancy ingredients. The steps to make it are relatively easy too, just need some strength for lifting and turning the cast iron pan.

To flip the hamburger over, use two plates. Cover the pan with one, and flip the pan over. Cover the first plate with the second, then flip it over. Cover the second plate with the pan again, and flip over. That should help prevent ot from breaking.

Chapter 26 is the original source which the anthology mangaka followed up on in chapter 1 of the anthology. It was nice to see more of Frieren's thoughts and emotions while she was making the hamburger steak and thinking of her current party while also being reminded of her old hero party.

In the US, meatloaf is a common dish, and it’s basically the same recipe, only baked in an oven. I made the recipe as shown this evening and it turned out fine, though I think I would have preferred it in the oven, as it gets crispy around the edges. Great video. I appreciate you demonstrating in real life, what we’ve seen on our favorite show.

you can knead or shape the steak beforehand and let it rest in the fridge for about 30minutes. That way, it will be shaped into a cake.
As for flipping the patty, I find it easy of putting the plate a top the pan, then flip it, then flip that plate(with the patty on) back to the pan. Sliding the patty off the pan will result to have your patty lose its shape.
I think if using a cast iron. it's better to have those cast iron pan with side handles instead of the single handle pans
That's a good tip for shaping the steak and putting it in the fridge.
For flipping the patty I too would normally put the plate on top then flip it but for the cast iron pan it's quite heavy along with the 1 KG hamburger steak and I'm afraid it's too heavy for some to flip both at once. Rather than have an accident happen where someone can get burned or injured from a fallen pan I suggested sliding it off the pan which is more doable.

This is a nice recipe, and I'm definitely gonna try (a smaller version of) it!
Couple tips I got from working near restaurant folks, for cutting onions. Besides a sharp knife, keep the knife tip pointed downward when cutting onions. Leading from the tip of the blade reduces the effort needed to slice through veggies exponentially, and reduces the tears from onion-cutting. Also, if you cut the vertical slices of the onion first, then you don't need to laterally cut the onions either!

9. 볶은 양파를 추가합니다.
10. 모든 재료를 잘 섞습니다.
11. 쿡탑의 큰 팬에 섞은 재료를 넣고 12인치 주물 팬을 권장하며 약한 불보다 약간 높은 불로 가열합니다.
12. 쇠고기 혼합물을 넣기 전에 팬에 올리브 오일이나 버터를 얇게 펴 바릅니다.
13. 가장자리를 둥글게 다듬는 것을 포함하여 고기를 가능한 한 큰 패티 모양으로 압축합니다.
14. 패티 중앙에 움푹 들어간 부분을 밀어 넣습니다.
15. 햄버그 스테이크를 그대로 두고 약한 불에서 6분간 조리합니다.
16. 주걱으로 패티의 양쪽 면을 풀어 큰 접시에 옮깁니다.

18. 팬을 다시 쿡탑에 올려놓고 익지 않은 쪽을 다시 6분간 조리합니다.
19. 6분 후 팬에 햄버그 스테이크 윗면을 덮을 정도로 물을 250ml 정도 추가합니다.
20. 불을 중간으로 올린 후 뚜껑을 덮고 약 15분간 고기를 조리합니다.
21. 이쑤시개를 가운데에 꽂아 고기가 익었는지 확인하고 깨끗하게 나오면 다 익은 것입니다.
22. 햄버그 스테이크를 큰 접시에 옮긴 다음 프리렌이 슈타르크의 생일 선물 겸 자신과 페른, 슈타르크와 같은 전사를 기리기 위해 만든 1kg 햄버그 스테이크를 맛있게 먹습니다.

I would cook this in an oven, not on a stove. Also, one small cup of milk instead of a second egg would be better in moistening things and keeping it all together.
Great point! In the anthology manga they also recommended it can be cooked in the oven rather than water steaming it, though I did it as Frieren did in the manga. I just saw another recipe for Stark's hamburger steak and they used milk and 1 egg as well, though it was much smaller in size and not warrior size lol.

@@KariAustin39 I told him before to add sugar when cooking savory things to balance the flavor out and he tried it in this dish, it also helps with the browning of the crust and it looks amazing! He also added his homemade demi-glace sauce for the condiments. I'm eating it with a bowl of warm rice and it was heavenly.

I assume in the world of Frieren sugar isn't too expensive, as Eisen would treat Stark to the Jumbo Berry Special, but maybe something extra to carry which wasn't necessary during the Hero's Party travels like salt & pepper were. No unlimited item bag space for them.

Tip for chopping the onion, you don't need to do those side cuts. The layers of the onion will naturally do that for you as it cooks.

The bread crumbs seem too fine. If the base is a hamburger Steak made in a Japanese home, the bread crumbs are much grainy. I think it would be better to make your own by tearing regular bread into pieces of appropriate size.
Also, I don't think it is sufficient to just press it down with a spatula. I think you should press down firmly with your hands to release the air. It is originally a dish that is baked after it is properly formed by hand and the air is removed.
This recipe is from the world of comic books, so it may be different from Japanese home cooking.

This video is very helpful for the grilling procedure. This is a recipe for a home made hamburger steak made in Japan.
I noticed Japanese breadcrumbs is sometimes panko, which you might be using? Panko can be used as a substitute for the breadcrumbs. I used which are common in American cooking, usually in meatloaf which is similar to hamburger steak.
I normally use my hands to mix my meat but I wanted to be like Frieren who did not use her hands as she did not like the sticky feeling of touching raw meat. As I do not have magic using a spatula was my choice, though I do recommend in the video for people to use their hands instead, even gloved, for the best results.

An easy trick for onion cutting, get paper towel (or any sort of cloth), soak them in water and put beside the cutting table as you're cutting the onions. I don't know the logic behind it but I'm guessing it absorbs the gases that would make us otherwise cry.

This is pretty close to how I make mine~
I use panko, and a tablespoon of Worcestershire sauce for extra flavor.
And instead of just water, I usually finish cooking them in gravy
Panko is an option to substitute it with, similar to the Japanese way of making it. Worcestershire sauce does add a nice flavor component.
Do you cook it in a brown gravy? Sounds like with gravy you finish cooking it in the oven?

I caramelize twice as much onions, and put half to the side to mix into that gravy too (sauteing some mushrooms too if I have em)

It was tasty! Yes, it would be very good with rice and maybe if Sousou no Frieren was set in Japan they would have eaten rice with it rather than a croissant like the manga or a loaf of bread like the anime.

Haha, reminds me of the Bob's Burger episode where they needed to find a huge bun for a huge hamburger only to find out the bakery they went to didn't sell buns as big as the plastic one in their window. They ended up covering the huge hamburger in between a bunch of regular sized buns.
Read this part on the manga not too long ago and remembered this appeared in my recommendations a while back. A few weeks ago I tried doing Ratatouille's (the movie) Ratatouille (which is actually a Confit Byaldi), it didn't go 100% perfect, but it was soooo tasty. Definitelly gonna do the big ass Frieren burger for either Christmas or New Year to eat with my family and friends (maybe with some C. Byaldi sauce lol).

@@KariAustin39 We did it! One of my friends happened to know how to cook hamburgers so he helped out a lot. We changed the seasoning a little bit cuz some of us couldn't handle spicy food, but it ended up pretty good.
The recipe is actually very similar to another brazilian plate called Kibe, but because the meat is so thick, it tastes different.
Moral of the story, the taste was "expected", but everyone smiled upon coming face-to-face with the mighty burger mahaha
I'd say it was worth it.

Quick question, why not form the steak outside of the pan and then drop it in as one piece? It seems like it would be easier but I am no good cook so just curious.
Others have mentioned molding it and putting it in the fridge to help keep its shape before frying it, it is an option. To be able to imagine how to cook it before you even made it is a sign of a good cook.
I simply went with how it was made in the manga, molding it in the pan, to stay as true as I can to it.

We make our cooking videos so anyone can replicate it, even a beginner! Doing it step by step helps everyone, even how to cut an onion.
Ngl i will try this but essentially roast it like meat loaf in my skillet at 350 degrees f for 30-45 minutes. Last 10 minutes I'll glaze it with hamburg steak sauce
The manga did say you could cook it in the oven after lightly cooking the outside. Though as we saw in the anime Eisen cooked it with seriously nice grill marks. It is a giant meat loaf so I don't see why not lol. A glaze would make it tastier. Enjoy making it and eating it too! Let us know how you like it.

Eisen probably made it super soft and caramelized for Frieren for her to enjoy it in the 10 years they traveled together. After all, she was eating it 4 times a year, 4 birthdays a year for the 4 party members.
It's weird that you call it a hamburger steak when "hamburger" is itself a shortening of "Hamburg Steak Sandwich" because the patties of ground beef were served as steaks in the German town of Hamburg.
Funny you say that as I'm actually saying it the American way to not confuse English speaking viewers. I say "hamburger steak," vs. the Japanese way of "han-ba-gu su-tee-ki" which is closer to the original "hamburg steak."
