Anxiety. I am a hibachi chef myself, i deal with what this chef deals with, new tricks kill me, but i want something new all the time, my hands shake like they are not mine, my heart beats like crazy, cant control myself anymore and I know they see it, which brings me more stress... leaving me no choice but hoping i can get over with it soon. .. I learned something... I do this coz I can! and no one else! and I do this just because I can!

kairat kert hey I am a hibachi chef myself an the best way to deal with anxiety doing new tricks is actually not caring at all about the mistake. Just practice a few times in the back kitchen. Get comfortable doing it like it’s a no brainer. When u get a table don’t think, just do it. You will get satisfaction just attempting it . And if you do it perfect the first time then it’s a bonus. Every time I mess up and we all do, just play it off and say Japanese mistake or come back tomorrow and move on from it. Remember our job is 90 percent feeling and 10 percent thinking. 5 percent of thinking is how to cook each table order and the other 5 is how to keep the customers comfortable when it get extremely quiet. Remember go with the flow. Feel fluid and remember if you are comfortable so will your guests. Hope this helps you. Took me few years o understand this perspective and even doing this for 10 years I get nervous sometimes too.
If you ever go to Benihana or a similar kind of place, always get the fried rice. It's the best part of the meal because of all that garlic butter they put in there. God it's wonderful.

Back in the day (late '70s) when I went the first times as a kid to a Teppanyaki, it was in Hartford CONN if I recon, this style was not at all common and the performers were real japanese artists with decades of training...I remember them doing crazy tricks with knives and flames, manipulating eggs (still in the shell) with those paddles like crazy without braking them, the shrimp for instance would be cut, cleaned and flung directly (perfectly) in each customers plate. And each time was different. Now it's about 10-12 years that most do the same routine and some can't even do that (like this guy).

I guarantee that'll give the costumers a chuckle,been working for 6 hibachi resto and it works everytime for me!

I took my girlfriend to Benihana in Chicago. I live in Tennessee, She lives in Milwaukee and I was helping my sister move dorms in Chicago. For the price you pay at benihana, I was expecting a LOT more of a show than what they give you there. I was utterly disappointed. My girlfriend had never been to a Japanese steakhouse before, so she was impressed as this was her first experience. I told her "if you think that was impressive, wait until we go to the place I like to go to in my hometown (Chattanooga, TN)". About a month later she came down to Tennessee, and we drove down to Chattanooga and went to a local place called Ichiban Japanese Steakhouse and Sushi Bar. The show that the chefs do at this place is way more entertaining than what Benihana does, and even better is that the average price per person is half of what I paid at Benihana. In short, i think Benihana plays off the fact that they were the first ones to bring the art of Teppanyaki to the United States. In my opinion, they need to become more creative when it comes to the entertainment the chefs provide. This opinion was formed based on my personal experiences and watching several other Teppanyaki chefs in action on RUclips
thanks for sharing the insight. I think because Benihana is such a popular chain, they need to have standard and consistency in their show across all restaurants. Whereas standalone non-Benihana restaurants have the opportunity to go big without worries.
It's really a fun and delicious dinner! This particular Benihana location closed down during pandemic unfortunately but there are still other Benihana locations around the world.

@@daveware4117 yup, they're a big chain and i think have the same training to their chefs, but each chef adds their own flair to their table. Also though they learn the same tricks, the chef decides what they want to do for you. Pricing and quality should generally be consistent since they're a chain.
You're standing there probably tired from doing a hard job all day. And on top of that you're cooking and trying to put on a show in front of people that are doing nothing but watching and recording you the whole time. I personally would suck at this job. You have to be an extreme people person with a lot of patience. Props to the chef, I think he did a really good job.

I do not have a grill top like that (wish I did). 2. I do not know how to make really good Japanese foods. 3. Made me jealous cause I'm not on the receiving end of the food. 4. @@TravellingFoodie i live in alaska. There is a location in anchorage i live about 40 min away. I am curious if you know anything about other benihana locations. Are they fairly uniform in there service, pricing, food quality, entertainment, ext, ext.

@@daveware4117 yup, they're a big chain and i think have the same training to their chefs, but each chef adds their own flair to their table. Also though they learn the same tricks, the chef decides what they want to do for you. Pricing and quality should generally be consistent since they're a chain.

You're standing there probably tired from doing a hard job all day. And on top of that you're cooking and trying to put on a show in front of people that are doing nothing but watching and recording you the whole time. I personally would suck at this job. You have to be an extreme people person with a lot of patience. Props to the chef, I think he did a really good job.

Love the video. Thanks for sharing. I've noticed a few things but I'm no judge and we all are nervous at one point or the other. But there are 4 things I do not like about this video: 1. I do not have a grill top like that (wish I did). 2. I do not know how to make really good Japanese foods. 3. Made me jealous cause I'm not on the receiving end of the food. 4. It's 2:39am and you made me so darn hungry I can cry.
