Instructions
00:00 Introduction
00:31 Preheat oven to 350F (175C) and lightly grease an 8x8 glass baking dish¹.
00:36 In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
01:14 Make a well in the center of the bowl and add the water, oil, vinegar, and vanilla extract.
01:45 Whisk or stir all ingredients together until batter is smooth.
02:01 Pour batter into prepared baking dish and bake on 350F (175C) for about 35 minutes or until a toothpick inserted in the center comes out clean. Do not over-bake or the cake will be dry.
03:03 Allow cake to cool before frosting.
ICING:
03:24 To prepare the icing, whisk together sugar, cocoa powder, water, vanilla extract, and salt until smooth. Icing should be a thick and fudgy consistency, but should be spread-able. If it is too thick, add additional water one teaspoon at a time until the proper consistency is achieved.
04:51 Once cake has cooled, gently spread frosting evenly overtop. Enjoy!
Notes
¹If you bake this in an aluminum baking dish it might cause the cake to have a metallic taste. If you only have this type of dish, you can line the pan with parchment paper to prevent this.
This cake may instead be baked in a 9x9 or 11x7 baking dish, but keep an eye on it as the baking time will be reduced.
You can make this a vanilla cake by leaving out the cocoa powder.
STORING: Store covered at room temperature for up to 5 days. Cake will keep even longer if stored in an airtight container in the refrigerator by the fridge may dry out the cake a bit.

I tried this recipe today! IT'S SO good. This will be made again. The cake is super moist and the icing is awesome. I substituted strong coffee for the water. You can't taste the coffee but it enhanced the flavor. So good!
I'm so glad you enjoyed it! :)
I have made this cake for years and it is really good with just some powdered sugar on top.
I have heard that from a few people now. I’ll definitely have to give it a try. 😊
@@SugarSpunRun the glaze is not cooked, is that edible?
I love this cake with Fresh Cut up Strawberries and whip cream, no frosting... Soooo Gooood!!!🍓
Love that too!
Such a great idea. Thank you for sharing.
I have used this recipe for decades. It has always been a huge family favorite. It is great for anyone that is allergic to eggs or milk, and chocolate. And a note on the chocolate ONLY if they can handle the cocoa power, but otherwise can't have chocolate. It is a heavy moist cake that lends itself well for cake decorating; although I rarely put frosting on it, it stands well on its own.
Have you tried using carob powder? It's just as good with carob powder. That is what I use in this recipe.
@@mimaberry excellent vanilla cake without the cocoa or change out the water for different flavored juices to make other flavors
I made this cake about a month ago and shared it with my Home Depot coworkers. (2 of which had dairy allergies: I wanted something that everyone could enjoy). It was A SMASH!!! I used half Almond extract and half vanilla extract in cake "and" frosting. My coworkers were AMAZED at how moist and delicious 😋 it was. This recipe is a keeper, dairy allergy notwithstanding 👍🏾😃
I'm so glad everyone enjoyed it so much! :)
Decided to make this cake on a whim and love the simplicity of the recipe. Can't wait to get it cooled off and start frosting it
I hope you love it! 😊
Thank you for sharing an easy recipe for this time when we are self isolating!
Enjoy! 😊😊😊
I made this but doubled the recipe and made two cakes and on top of one put cherry pie filling and whipped cream, then stacked them and put whipped cream, maraschino cherries, and shredded chocolate for a kind of simple black forest cake. Worked out great. Thanks for the recipe! 😋
That sounds so awesome! 😊
Yum. Sounds so delicious. I think I'll try doing that.
YES that was always my favorite way to eat wacky chocolate cake and it used to be my birthday request when I was a child. Mom usually just did one layer though and topped it with cherry pie filling and whipped cream.
I was so excited when I came across this recipe on a list of enduring Depression foods! I make this all the time (recipe from an old cookbook) because it is so easy, and it is my son's favorite.
It’s so good! 😊😊
Love your inspiration
You are amazing!! Thank you for your wonderful recipes.
You are so welcome!

Glad you like it! ❤
Agreed!! 👍 I first heard about this over ten years ago… I make it often, since it’s so easy. I also usually make a similar frosting.
It's so good! :)
@@SugarSpunRun Yes! And the recipe is all over, from cookbooks of the Depression and WW2, and the internet of course. I found it on the King Arthur Flour website.
I just love you and your recipe too!
Thank you so much! :)
I have made it before in the pan, but going to do it this way today!! Thanks

Yay! So glad you did one like this since I ran out of butter! 👍💃💗
Exactly! You always need to be able to make sweets. It’s a staple in the food pyramid 😂😂😂
True!😂👍✔💗
This is an amazing cake, I love chocolate cake but not all the fat that goes into it, so this really works for me! thank you & very nice presentation!
Thank you so much! Enjoy 😊
This sounds good I will b trying this

I'm sure I will
I made it today, delicious 😋
Glad you liked it!
Muy buena receta , ayer la hice y se terminó toda , gracias por compartir.
So glad you liked it!
I will try look great
Hope you enjoy
I spent hrs. looking for this childhood crazy cake. A friend of mine loved baking and she would teach me to make cakes, cookies and pies from scratch (no Hines/Betty Crocker box cakes in her kitchen baked). This crazy cake she modified a bit using mixture of carob chips, mini marshmallows and chopped walnuts (i picked out of another friend's almond/walnut orchard). Making a crazy carob Mississippi mud carob cake. As well as Pecan or actually a Mock Walnut pie. But you are first I found of the crazy cake recipe, that I was going crazy trying to find to make. Thank you for keeping the recession era recipe cake alive.
Yes, finally someone who uses carob products. Awesome. I thought I was the only one lately using carob.
This is the standard chocolate cake in my family. It stays moist when left covered, and tastes great!
It's such a great cake! :)
My mother in law used to make this. Makes me think of her
Food is so good at bringing back memories. :)
My family have made this for years and we usually put powdered sugar on it, but this frosting makes it taste more yummy!
Totally agree! 🥰
Nice.
Hi, so I made your cake tonight to get a head start on Thanksgiving and surprisingly it came out really good. Hopefully for Thanksgiving it'll taste good even though being in the fridge with cellophane covering it. So thank you for this really good and easy and fast chocolate cake♥
I'm glad it turned out nicely! You can store it at room temperature--storing in the fridge might dry it out 🥰
Wow what a easy recipe & it looked delicious, I'm for sure gonna give it a try the next time that evening sweet tooth flares up😉🤤
Hope you enjoy ❤
Folks the longer this cake sits the moister it gets. Ive been making this cake for about 48 years. If you google depression cakes there are numerous versions/flavors. Enjoy!!!😊
yum
Wonderful
Thank you!
I received the same recipe from my grandmother. I mix all the ingredients in the glass pan that I cook it in. Because it is so moist I don't put icing or glaze on my cake, instead after it is completely cooled I just sprinkle powder sugar on the top.
It’s so easy and so tasty! 😊
A similar recipe was in a Marlboro cook book. I got it for free with a carton if Marlboro Red.❤❤❤❤😊😊😊😊😊
Thanks for the post ma'am it's simple and tempting I can't wait to dig in. Yum yummy God gracious to you and your loved ones ma'am. Medical student Malaysia. 😋✌👍
I hope you love it! :)

I use a spatula to clean batter bowl. It’s amazing how much more you can get. I try not to waste.
Great idea! :)
Good
So excited that I had all the ingredients!! Just made this cake and is currently in the oven! 🤗...thank you Sam for posting this 😘
That’s awesome! I hope you love it! 😊
Can I use Dutch processed cocoa if that's what I have?
Hi! Thanks for sharing such amazing recipes, I'd love to try it out! I just have one question in mind, can this be used in making petit fours or would you recommend your chocolate cake recipe?
I think either would work here. I personally like the chocolate cake more but they are both good. :)
@@SugarSpunRun Yay! I'm so excited to try it! Thank you for your response. I really appreciate you hearing and helping us all out! 💖
Unrelated but instead of foraging for the cookie video I made your worst chocolate chip cookies last night and oh my I am not even sure what I have been making before all this time...
That’s awesome! I’m so glad you enjoyed the cookies so much. 😊😊
Delicious cake and super simple to make. Is this cake vegan since there are no butter or eggs?! We are definitely baking our way through this quarantine with you Sam. Keep the yummy recipes coming!!!
I had not thought about that but yes I suppose it is vegan. I’m so happy to help you and your family make it through these tough times. Happy baking! 😊😊
Yeah, it’s vegan
This is JUST what I need! I have limited ingredients in my pantry. If I make a vanilla version do I substitute equal amount of flour to cocoa powder?
To make it vanilla flavored you would just leave out the cocoa powder and add about 1/2 teaspoon more vanilla. 😊😊
@@SugarSpunRun thank you for patiently responding to questions even if the answer is included in the recipe! I got excited so i forgot to read the recipe before asking a question. You deserve more subscribers! Your recipes are awesome. Making this right now!
Can I use brown sugar
Mama made this cake. Very moist good
It's so good! 😊
This looks so yummy! ❤️
Just a quick question: how many pieces can you make with this recipe? We want to make around 8 pieces (2 for every person) and we don't know if this recipe would be enough because the cake looks very small.
It’s in an 8 x 8 pan. I typically cut it into about 9 pieces which makes them about 2.5 inch x 2.5 inch squares
@@SugarSpunRun ok thank you 💕
I learned to make this cake in the Brownie Scouts, but I'd lost the recipe. Thanks for reminding me.
Do you know if it can be made in the microwave?
I do not know how to make it in the microwave. 😔
Fabulous easy vegan cake. And you could fool any non-vegan with this. Thank you x
It’s so tasty! 😊😊
Hello! What if i wanted to make this recipe in different flavor, like strawberry. What amount of strawberry flavorings i will add. I will just omit cocoa and will use juice powder if ever. Thank u! 😍
I honestly haven’t tried it. There would probably need to be other alterations made if you leave out the cocoa powder
Hi have you ever tried putting it in fridge or freezer..and thaw it for sometime ( just in case that you wont be eating it yet) will it still stay moist and fluffy, how about it's shelf life...im using canola oil always .wanna try this cake with whip cream frosting..or maybe sell it to my friends😍
I make it into cupcakes and they freeze great, Wrap well to avoid freezer burn.
I used a recipe like this when I am lazy but I want a fast chocolate cake and I make it in a large coffee mug in the microwave. Yes, the microwave. I know it sounds crazy, but it works, and it's super fast. lol
It's 6 tablespoons of flour, 4 of cocoa powder, 4 of sugar, 3 of oil, 5 of water, 1 teaspoon of baking powder, and 1 of vanilla extract. Then add as many chocolate chips as you desire and microwave it on high for 2 and a half minutes.
I have heard of a that kind of cake before. I have never made one but it certainly sounds tasty! 😊😊
@@SugarSpunRun It is! I mean, it's not as good as a cake baked in the oven, that is super moist and delicious. Nothing in a microwave ever is. But it's good when you want your fix really fast with very little cleanup.
I always need a quick dessert! 😉
@@SugarSpunRun If you do make this, depending on humidity you may need to add a little more or less water. You basically want it to have the same consistency as the one you made here. And a scoop of vanilla ice cream on the top never hurt anyone either. ;)
can I use self rising flour....out of all purpose flour.....do I leave out the leavening agents ?
I wouldn’t recommend it here. I haven’t tried it so I can’t say for hay alterations you’d have to make or how it would turn out. 😔
Thank you. So glad you call it but the right name, it's crazy cake, not "wacky" cake like some of these clodpates would have you believe. My grandmother wouldn't lie to me, and "wacky cake” sounds dumb.
Sending Anguiano love ♥️ always
Thank you! :)
Is baking soda the same as bicarbonate of soda or baking powder
Baking soda and bicarbonate of soda are the same, but baking powder is different. I actually have a post on my blog that explains this: sugarspunrun.com/baking-powder-vs-baking-soda/ 😊
We call it Lazy Chocolate Cake. And Corn oil has best taste. In fact never buy vegetable or canola oil. Only oil to have is Avocado for high heat, corn for baking and light and dark olive.
Can I use a cream cheese frosting on this?
Sure! 😊
first time i made it and it was perfect.
second and third it comes raw. like mushy inside.
any idea why this happens? seemed like i did everything the same. maybe too little flour?
Oh no! Are you making any substitutions? How are you measuring your flour?
could I use coffee instead of water?
Good question.
Yes that will definitely enhance the chocolate flavor. 😊
Thanks for the recipe. Quick FYI: the ingredients list has baking soda but your instructions mentions baking powder.
You’ll need baking soda here. Sorry for any confusion. 😊
Can I use cake flour for this recipe
I honestly haven’t tried this with cake flour. I think it should work, though you probably will need to use a bit more cake flour as it is lighter. I believe the substitute is 1 cup all-purpose flour = 1 cup + 2 Tbsp cake flour (if you are using weights you would use the same weight that is listed).
Can I make this cake without white vinegar???please tell me..
Try substituting with lemon juice
Can we use little bit of coffee too?
Sure thing! That will up the chocolate flavor a bit. I would just reduce the water in the cake by however much coffee you add. :)
Hi, can I put 1 cup hot water + 1 teaspoon instant coffee instead of just 1 cup water?
Sure thing! 😊
@@SugarSpunRun thank you for your response 😊
Water is warm?
It can be, but it's not required. :)
Hi..can I use cake flour instead of all purpose flour?
You can, just make sure to make the proper substitution. :)
If I use cake flour, is the amount also 190g?
Using weights, yes it’s the same. The amount varies when using cups. 😊
Noted. Thank you so much for your reply.
I wish it just popped out of the screen
Wouldn't that be nice! 😂
Does that icing surface get hard and grainy like the awful donut icing you get most places now? If so, why go to the work to make a beautiful cake and then put anything but rich, creamy icing on it that doesn't end up like a hard layer of cheap candy?
It will crust over but it won’t be hard and crunchy. It should not turn grainy either. 😊
@@SugarSpunRun Thanks, but I don't want crusty cake icing. Think Nutella creamy. That's where I'm coming from. Or even Betty Crocker. I made your Crazy Cake a couple days ago, and it turned out well.
Can I use Nutella instead of Coco powder???
Unfortunately I don’t think it would work here but it could make for a nice frosting. 😊
Why is a glass ware better to bake this cake in?
If you bake it in an aluminum baking dish it might cause the cake to have a metallic taste. If you only have this glass pans, you can line the pan with parchment paper to prevent this.
the glaze is not cooked, is that edible?
Yes, none of the ingredients in the glaze require cooking to be safe to eat 🙂
You are on to something.
I did a small pan of the cake. Soft and tasty 🤗. Didn't get the icing right 🤭
I’m glad you enjoyed the cake! 😊
I think during the Depression, most people didn't frost their cakes because they didn't have the money.
do you eat alle of your cakes or do you share ?🤨
I share a lot with my family.
My mom called her his the payday cake.
Sub coffee for the water.
Idk why my icing fails 😭
What's the issue? It's a little tough to help if I don't know exactly what's going on.
@@SugarSpunRun it's fine now. I did not use powdered sugar thats why. Anyway, can I double the quantity if I bake? I need to make it thick. :D
I hate cooking recipes with their cups and spoons. I don't know what things are. I'm pretty sure I can find a spoon that's bigger than a cup and vice versa. How am I supposed to draw any meaningful information out of these measurements? Might as well have replaced those with "a bunch" and "a bit"
Well you’re in luck! Because I recognize that not everyone is in the US I also put metric measurements in the description. It’s not feasible to say them both while filming. Have a great day! 😊
@@SugarSpunRun ok, sorry for the negativity of the original comment, I baked this cake after writing it and it turned out pretty nice.
At the point of writing it I did look at the description and printable recipe and some of those measurements didn't have metric versions, but after looking at it again there was no reason for me not to just multiply 80ml by 3.
Teaspoons and tablespoons are still missing and can vary from spoon to spoon, but I guess teaspoons being a form of measurement is more of my general pet peeve about recipes, American or otherwise.
@@zeratulrus142 - in America we don’t use cutlery for cooking but actual teaspoon & tablespoons utensils so it doesn’t vary from spoon to spoon.
I can see how it’s confusing if you don’t have these types of baking utensils available where you live. Glad to hear you still tried the recipe & it came out well. 🙂
Tried this today and it was the worst cake I've ever baked in my life. So doughy and not nice at all. I weighed out every ingredient and followed the exact instructions but it just wasn't nice
Hmmm I wonder if it needed more time in the oven. This shouldn't turn out doughy at all.
