  • No butter, no milk, and no eggs needed! Wacky Cake, Crazy Cake, Depression Cake, this super simple, one-bowl cake recipe goes by many names.

    Ingredients
    1 1/2 cups all-purpose flour 190g
    1 cup granulated sugar 200g
    1/3 cup natural unsweetened cocoa powder 35g
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup water
    1/3 cup canola or vegetable oil 80ml
    1 Tablespoon white vinegar
    1 teaspoon vanilla extract
    ICING
    1 1/2 cups powdered sugar 190 grams
    ¼ cup natural cocoa powder 25g
    2 tablespoons water
    2 teaspoons vanilla extract
    ⅛ teaspoon salt

    Instructions
    00:00 Introduction
    00:31 Preheat oven to 350F (175C) and lightly grease an 8x8 glass baking dish¹.
    00:36 In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
    01:14 Make a well in the center of the bowl and add the water, oil, vinegar, and vanilla extract.
    01:45 Whisk or stir all ingredients together until batter is smooth.
    02:01 Pour batter into prepared baking dish and bake on 350F (175C) for about 35 minutes or until a toothpick inserted in the center comes out clean. Do not over-bake or the cake will be dry.
    03:03 Allow cake to cool before frosting.
    ICING:
    03:24 To prepare the icing, whisk together sugar, cocoa powder, water, vanilla extract, and salt until smooth. Icing should be a thick and fudgy consistency, but should be spread-able. If it is too thick, add additional water one teaspoon at a time until the proper consistency is achieved.
    04:51 Once cake has cooled, gently spread frosting evenly overtop. Enjoy!
    Notes
    ¹If you bake this in an aluminum baking dish it might cause the cake to have a metallic taste. If you only have this type of dish, you can line the pan with parchment paper to prevent this.
    This cake may instead be baked in a 9x9 or 11x7 baking dish, but keep an eye on it as the baking time will be reduced.
    You can make this a vanilla cake by leaving out the cocoa powder.
    STORING: Store covered at room temperature for up to 5 days. Cake will keep even longer if stored in an airtight container in the refrigerator by the fridge may dry out the cake a bit.

    I tried this recipe today! IT'S SO good. This will be made again. The cake is super moist and the icing is awesome. I substituted strong coffee for the water. You can't taste the coffee but it enhanced the flavor. So good!

    I have used this recipe for decades. It has always been a huge family favorite. It is great for anyone that is allergic to eggs or milk, and chocolate. And a note on the chocolate ONLY if they can handle the cocoa power, but otherwise can't have chocolate. It is a heavy moist cake that lends itself well for cake decorating; although I rarely put frosting on it, it stands well on its own.

      Have you tried using carob powder? It's just as good with carob powder. That is what I use in this recipe.

    I made this cake about a month ago and shared it with my Home Depot coworkers. (2 of which had dairy allergies: I wanted something that everyone could enjoy). It was A SMASH!!! I used half Almond extract and half vanilla extract in cake "and" frosting. My coworkers were AMAZED at how moist and delicious 😋 it was. This recipe is a keeper, dairy allergy notwithstanding 👍🏾😃

    I made this but doubled the recipe and made two cakes and on top of one put cherry pie filling and whipped cream, then stacked them and put whipped cream, maraschino cherries, and shredded chocolate for a kind of simple black forest cake. Worked out great. Thanks for the recipe! 😋

      YES that was always my favorite way to eat wacky chocolate cake and it used to be my birthday request when I was a child. Mom usually just did one layer though and topped it with cherry pie filling and whipped cream.

    I spent hrs. looking for this childhood crazy cake. A friend of mine loved baking and she would teach me to make cakes, cookies and pies from scratch (no Hines/Betty Crocker box cakes in her kitchen baked). This crazy cake she modified a bit using mixture of carob chips, mini marshmallows and chopped walnuts (i picked out of another friend's almond/walnut orchard). Making a crazy carob Mississippi mud carob cake. As well as Pecan or actually a Mock Walnut pie. But you are first I found of the crazy cake recipe, that I was going crazy trying to find to make. Thank you for keeping the recession era recipe cake alive.

    Folks the longer this cake sits the moister it gets. Ive been making this cake for about 48 years. If you google depression cakes there are numerous versions/flavors. Enjoy!!!😊

    I received the same recipe from my grandmother. I mix all the ingredients in the glass pan that I cook it in. Because it is so moist I don't put icing or glaze on my cake, instead after it is completely cooled I just sprinkle powder sugar on the top.

    This is JUST what I need! I have limited ingredients in my pantry. If I make a vanilla version do I substitute equal amount of flour to cocoa powder?

      To make it vanilla flavored you would just leave out the cocoa powder and add about 1/2 teaspoon more vanilla. 😊😊

    Just a quick question: how many pieces can you make with this recipe? We want to make around 8 pieces (2 for every person) and we don't know if this recipe would be enough because the cake looks very small.

      It’s in an 8 x 8 pan. I typically cut it into about 9 pieces which makes them about 2.5 inch x 2.5 inch squares

      I honestly haven’t tried it. There would probably need to be other alterations made if you leave out the cocoa powder

    Hi have you ever tried putting it in fridge or freezer..and thaw it for sometime ( just in case that you wont be eating it yet) will it still stay moist and fluffy,how about it's shelf life...im using canola oil always .wanna try this cake with whip cream frosting..or maybe sell it to my friends😍

    I used a recipe like this when I am lazy but I want a fast chocolate cake and I make it in a large coffee mug in the microwave. Yes, the microwave. I know it sounds crazy, but it works, and it's super fast. lol
    It's 6 tablespoons of flour, 4 of cocoa powder, 4 of sugar, 3 of oil, 5 of water, 1 teaspoon of baking powder, and 1 of vanilla extract. Then add as many chocolate chips as you desire and microwave it on high for 2 and a half minutes.

      @@SugarSpunRun It is! I mean, it's not as good as a cake baked in the oven, that is super moist and delicious. Nothing in a microwave ever is. But it's good when you want your fix really fast with very little cleanup.

      @@SugarSpunRun If you do make this, depending on humidity you may need to add a little more or less water. You basically want it to have the same consistency as the one you made here. And a scoop of vanilla ice cream on the top never hurt anyone either. ;)

    Thank you. So glad you call it but the right name, it's crazy cake, not "wacky" cake like some of these clodpates would have you believe. My grandmother wouldn't lie to me, and "wacky cake” sounds dumb.

    We call it Lazy Chocolate Cake. And Corn oil has best taste. In fact never buy vegetable or canola oil. Only oil to have is Avocado for high heat, corn for baking and light and dark olive.

    first time i made it and it was perfect.
    second and third it comes raw. like mushy inside.
    any idea why this happens? seemed like i did everything the same. maybe too little flour?

      I honestly haven’t tried this with cake flour. I think it should work, though you probably will need to use a bit more cake flour as it is lighter. I believe the substitute is 1 cup all-purpose flour = 1 cup + 2 Tbsp cake flour (if you are using weights you would use the same weight that is listed).

      Sure thing! That will up the chocolate flavor a bit. I would just reduce the water in the cake by however much coffee you add. :)

      Using weights, yes it’s the same. The amount varies when using cups. 😊

    Does that icing surface get hard and grainy like the awful donut icing you get most places now? If so, why go to the work to make a beautiful cake and then put anything but rich, creamy icing on it that doesn't end up like a hard layer of cheap candy?

      It will crust over but it won’t be hard and crunchy. It should not turn grainy either. 😊

      @@SugarSpunRun Thanks, but I don't want crusty cake icing. Think Nutella creamy. That's where I'm coming from. Or even Betty Crocker. I made your Crazy Cake a couple days ago, and it turned out well.

    Why is a glass ware better to bake this cake in?

      If you bake it in an aluminum baking dish it might cause the cake to have a metallic taste. If you only have this glass pans, you can line the pan with parchment paper to prevent this.

    I hate cooking recipes with their cups and spoons. I don't know what things are. I'm pretty sure I can find a spoon that's bigger than a cup and vice versa. How am I supposed to draw any meaningful information out of these measurements? Might as well have replaced those with "a bunch" and "a bit"

      @@SugarSpunRun ok, sorry for the negativity of the original comment, I baked this cake after writing it and it turned out pretty nice.
      At the point of writing it I did look at the description and printable recipe and some of those measurements didn't have metric versions, but after looking at it again there was no reason for me not to just multiply 80ml by 3.
      Teaspoons and tablespoons are still missing and can vary from spoon to spoon, but I guess teaspoons being a form of measurement is more of my general pet peeve about recipes, American or otherwise.

      @@zeratulrus142 - in America we don’t use cutlery for cooking but actual teaspoon & tablespoons utensils so it doesn’t vary from spoon to spoon.
      I can see how it’s confusing if you don’t have these types of baking utensils available where you live. Glad to hear you still tried the recipe & it came out well. 🙂

    Tried this today and it was the worst cake I've ever baked in my life. So doughy and not nice at all. I weighed out every ingredient and followed the exact instructions but it just wasn't nice
