How to Make White Cake

  • This recipe yields a fluffy, snow-white cake that’s light and soft but still sturdy enough to stack or cover with fondant.

    Ingredients
    6 Tablespoons unsalted butter softened to room temperature 85g
    2/3 cup canola oil or vegetable oil 160ml
    2 cup sugar 400g
    1 Tablespoon clear vanilla extract
    2 2/3 cup + 2 Tablespoon all-purpose flour 345g
    1 Tablespoon baking powder
    1 teaspoon salt
    1 cup milk room temperature preferred (235ml)
    6 large egg whites room temperature
    Double batch Vanilla Buttercream Frosting
    Instructions
    00:00 Introduction
    00:22 Preheat oven to 350F and prepare two 8-inch round cake pans by lining the bottoms with a round of parchment paper and generously greasing and flouring the sides. Be sure to shake out excess flour.
    00:39 In a stand mixer (or using an electric mixer), beat butter on medium-low speed until creamy.
    00:54 Add sugar and oil and beat until all ingredients are well-combined and creamy.
    01:34 Scrape down the sides and bottom of the bowl and then stir in your vanilla extract.
    02:13 In separate bowl, whisk together your flour, baking powder, and salt.
    02:42 Measure out your milk.
    03:00 With mixer on medium speed, gradually alternate between adding the flour mixture and the milk, starting and ending with the flour mixture. Stir until each one is almost completely combined before adding the next.
    03:48 Pause occasionally to scrape down sides and bottom of bowl.
    03:59 In separate bowl, combine your egg whites and, with a hand-mixer on high-speed, beat until stiff peaks form.
    05:26 Using a spatula, gently fold your egg whites into your batter. Take care to scrape the sides and bottom of the bowl so that ingredients are well-combined, and take care not to over-mix.
    06:27 Evenly divide cake batter into prepared pans.
    07:37 Bake on 350F for 35-40 minutes, or until a toothpick inserted in the center of each cake layer comes out clean or with few crumbs (should not be wet). For best results, rotate your cake pans halfway through baking to ensure even baking.
    07:49 Cakes will be a light golden brown when done baking.
    07:54 Remove cakes from oven and allow to cool for 15 minutes. Run a knife around the inside rim of each pan and invert each onto a cooling rack.
    08:17 Allow to cool completely before covering with buttercream frosting*. I used a double batch of my recipe (linked above) to thoroughly cover and decorate this cake.
    Notes
    If you don't like buttercream frosting, my favorite chocolate frosting or favorite cream cheese frosting would also taste great with this recipe!

    This recipe was easy thanks to your tips and techniques! My family LOVED this cake!!! White cake with white frosting (used your ermine frosting recipe) is my husband’s and mom’s absolute favorite combo. He likes buttercream, and she likes whipped cream frosting so ermine was the perfect middle ground. THANK YOU!

    I've adapted this to my dairy allergy, swapped butter for more oil and milk for canned coconut milk, and it's devine. I've never had vanilla cake so moist and soft.

    I made this cake today and as the first white cake I've ever made that was not poured out of a box, I've got to say, I will definitely be preparing my white cakes with this recipe from now on. This is so delicious and fluffy and flavorful. I normally love chocolate cake but I made a white cake for my friends son's birthday and the store was out of white box mix, so I found this and it is just simply amazing. So delicious!     Definitely making this tonight. It looks so good. And people laughed when I bought a 25# bag of flour from sams club back in December. To keep it fresh put it in mason jars and use a vacuum sealer.

    Using only 300g of granulated sugar, and almond extract instead of vanilla, I made your cake today and it turned out white (as promised), moist and fluffy - delicious 😋.
    But it´s still sweet for our liking (we don´t use sugar at our house). Next time I´ll bake it with even less sugar (or may add 1 extra tsp of salt).

    this type of cake is not normally made here in the UK but i will be trying it. when mixing in the egg whites, use a large metal spoon as it cuts through the egg whites better and will not beat out any of the air that the egg whites have

    Thank you so much for this recipe! I made cupcakes using this batter, and they came out soooo beautiful! I’ve never made a White Cake mix from scratch, because egg whites make me nervous, but I literally followed your recipe step by step, even making sure to read your blog to make sure I can even make them into cupcakes, and I am so excited with the way they turned out!!!

    TY Sam! Great idea to utilize egg whites for this white cake Unfortunately I only have pure vanilla extract because that's what I use a lot when I bake. I can reduce the vanilla extract if that may help. Stay safe

      The pure vanilla extract will just tint the cake a little bit. Personally I would rather have the flavor but if you need the pure white you may want to try reducing it a bit. :)

    Looks amazing! Can I make a suggestion? Try using the wire-like beaters when mixing batter and the flat beaters when beating egg-whites. The thin beaters might not make as much a mess when using them in a batter as the shape of it allows the batter to flow thru rather than up (if that makes sense?)... I see it's a very strong hand mixer so this may help to minimize mixing messes :-)

      Sugar Spun Run what happened to a “low” speed on hand mixers. Mine died recently after 30 years, (seriously) and I bought 2 new ones and hate both of them. 😢 they beat too fast.

      You could split it into 3 6 inch pans without any issues but I’m not sure how long they would need to bake.

      Hmm very tall I’m not sure. I know others have made it 4 layers tall without an issue but I’m not sure how high you want to go with it

      Turned out great!!!!! It was just the raw dough batter that tasted funny. It is exactly the classic cake dough I was looking for. Typical birthday cake. Very flexible and adaptable. Making another one now to take to school! 👍🏻❤🎂ps i used a half the sugar oil and salt. Was still really good on a 2.5cm thick cake. I will try food coloring and chocolate soon.

      The white cake is going to be softer and fluffier. Both will hold up to fondant but the vanilla cake will probably hold up little better to fondant. 😊

      It will, but you will want to be careful stirring in the egg whites as to not deflate them.

    All of your recipes are delicious. To make this cake fit into a half sheet pan how many times should I repeat the steps in batches to fit my pan. Another question can I just add almond extract instead of the vanilla extract?

    This recipe looks good. I believe the addition of oil certainly helps to keep cake moist. I have two questions: 1. Can buttermilk be used instead of milk or will that throw off some of the other ingredients? 2. Can I use cake flour instead of APF?

    Hi there. I literally just took these cakes out of the oven to cool for 15 minutes but they sunk in the middle. Did a toothpick test and it was clear. Look like they could have baked about 5 more min. I did a entire 40 min. Next time I'll do 45. A good taste thou. Would there be anything else that would have make it sunk.

      O no! I’m so sorry this happened! If they sank but were clean with the toothpick you’ll want to be careful not to overmix the batter next time. Over mixing can deflate the egg whites which will cause the cake to sink. 😔

      I have not tried almond extract, but if you do you will want to use less because it’s much more potent than vanilla. 😊

    So I finally made this cake. Its moist and delicious. There is only one problem. I feel like its a little yellow. Maybe bcz I used yellow salted butter? Its kind of hard to get my hands on unsalted white butter where I live. Any advice?

      Unfortunately the yellow from the butter will make the cake slightly tinted yellow. I have this issue sometimes. Some of the butter I can get is much more pale than others so if you can find one that is a really pale yellow that may help you. :)

      In till it's done u will know that if u take a toothpick stick it the cake and if it's wet it's not done if it isn't wet that means it is done.hoped I helped😁

    Can you make this cake with a pastry cream as the filling? My sister and I were thinking about making this cake for our brothers birthday in a few weeks, and wanted to know if we can use a pastry cream as the filling for this cake your recipe?

      You mean in between the layers? That should work fine. You'll just want to put a dam around the edges so it doesn't squish out when you stack the layers. :)

      Honestly I’ve never baked it in a 6 inch pan so I can’t say for sure. This will make more batter than you need for 2 6 inch pans so make sure to not overfill them. 😊

      They are only 2 inches deep. If you want to fill your 3 inch deep pans you'll need to increase the recipe by 50%. :)

      You would use the same amount. The buttermilk will work, but it will make the cake slightly more moist. The whole milk allows this cake to be just a little bit fluffier, so that’s why I use it here.

      I will just do the cake in cupcakes next time ; the cake was great, but one of my layers were bigger than the other in my 9 inch pans ; I tried to make sure I had the same amount of batter fit each pan; so I need to learn to level the layers off!!

      I actually weigh my batter in the pans if I really need an exact amount but a cake leveler is also a great investment. They are pretty cheap. I’m glad you enjoyed it! 😊

      I don’t recommend it because they can be very difficult to whip to stiff peaks and the stiff peaks are vital for this cakes success. 😔

      The vanilla cake will work, but like you said the colors won’t be quite as vibrant. The yellow of the vanilla cake may also tint lighter colors leaving an undesirable color

      Hi Bellinda! You'll want to increase the recipe by 50% for three 9-inch layers. Keep in mind your cakes will cook quicker in those pans.

      You definitely don't want to introduce egg yolks here. It can dry out the cake pretty quickly and mess with the texture.

    i've noticed that american butter seems really white compared to what we have in australia. our butter is really yellow so its hard to get a really white cake or white buttercream.

    Looked good- white cake is my favorite. But I don’t understand why you had to make meringue or whip the egg whites like you did. Can’t I just add the egg whites to the batter as is and then mix?

      The whipped egg whites are for the structure/texture of the cake. You won't get the same nice airy texture if you just mix them in.
