I would have loved to see the inside texture of the finished muffin. Must say, there are lot of fat sources in this recipe (butter, coconut flour, almond flour, sour cream & pistachio) I will have to make some substitutions when I make these. 1 muffin has like 240 kcals, 15 g fat, 2 g fibre & 25 g carbs (1.5 carb choices)
looks good, looks good. I was wondering if instead of the almound and coconut flour if I could just use the all-purpose flour since its what I have lying around the house. Would it change the taste dramatically? Also Im just guessing but Im too sure about the almond and coconut flour as being diabetic friendly but thats just me.
hi chris! thanks for this recipe, it looks really great! i was wondering if you had ever tried stevia, it's a real plant that you could grow yourself (or make or purchase a liquid tincture that can be used in recipes... around 5 drops = 1 tsp sugar) and can doesn't raise your blood sugar. splenda uses a sugar called maltodextrin as a filler (4cal/packet). if you're concerned about this and the side effects (gastro problems, rash, etc.) of using splenda in quantity and in long term please do some research. i experienced the negative side effects and want others to be informed. my friend grows stevia in michigan so it can be grown in canada. just sayin'.
Dairi Made oh yeah, in the early 90's when i first heard of it i got some extract powder and yes it had a horrible bitter aftertaste. i don't recommend getting the white stevia powder and using the packets because they contain the same multodextrine filler that the other sweeteners have. the liquid has water as filler and alcohol or grapefruit seed extract as preservative. the liquid while i wouldn't eat straight because it is very strong will leave no aftertaste in food or drinks. the flavored stevia liquids are interesting also. you can also get the dried powdered leaves and i'm looking into finding an organic source of those.

@shanu722: splenda is a sugar substitute. To me, it tastes like sugar, but lighter. Almost like powdered sugar.

Stevia can have a slightly bitter after taste; for some Stevia causes nausea. True it does not raise your blood sugar.
