So many Mexicans don't realize how big vegetables and flowers are in authentic Mexican cuisine. Mexico had no horses until the Spanish came. Landlocked rurals ate what they could forage and hit over the head with a stick.
One of the best tacos I ever ate was: nopales (strips of cactus paddle), and squash blossoms, lightly sauteed in a kind of HOT sofrito with a raw, salty, jicama "slaw" on top.
The puns are humorous and strange. The vegetable tacos are eccentric and filled with aromatic flavors 🌱🌮🥙
Agree with Ian nit sure why we had to have the meal explained twice but other than that, great episode. LOVE TIG🥰

I live in a city were vegan and healthy are usually replaced with flavor and seasoning. Mexican cuisine is one of the few styles that can pack almost the flavors without a lot of compromise. Cashew nacho cheese is the only caveat.
You aren’t hitting up the Chinese joints. There are loads of vegan friendly dishes and tofu is always available.
