- This bread is extremely addictive! I first discovered it working in Massachusetts in a restaurant called the Outback Steakhouse, they kept bringing it out! When I was sent the recipe I had to give it a go! More clone recipes • DIY Outback Steakhouse...
I think the other main reason I like this recipe is that it has cocoa powder in it! Warning though, if you do decide to give this a go, it is extremely moreish indeedy!

Ingredients list:
For the bread
350ml warm water
50g brown sugar
90g honey
3tbsp molasses - or use treacle
1 sachet fast action yeast
1tsp salt
60ml rapeseed oil
350g bread flour, plus extra to dust
190g wholemeal flour aka whole wheat flour
3tbsp cocoa powder
For the whipped butter
110g butter, room temp
1.5tbsp milk

My favorite part of the bread is the end bit, aka the "heel".
I live in Korea now and the Outback here serves the bread with a mango whipped butter. I prefer the regular whipped butter. They also give you as much bread as you want while eating in restaurant AND free bread to take home.
I like the heel too, especially on loaves with nice chewy crusts.

I'm shocked Mrs.B doesn't like the ends of the bread 😱 That's my absolute favourite part! My mum and I always fight about who gets to eat the end bits 🤣 I love how the extra crust? around the bread gives it and even more crunchy moreish texture after you toast it 😍Especially if the it's homemade bread that we make or the fresh bakery loaves.
I like the heels in toast (regular or French), but I don't like them as part of a sandwich. Might be a texture thing, being on the spectrum as I am.
The crust on a loaf like this is my FAVORITE part of the bread!
I love the heel of bread! Especially when it's toasted with butter! I've made a version of Outback bread and it was amazing, way better than the restaurant. The version I used also called for cocoa powder but it also had espresso powder in it. I would have to make this one to compare but I'm sure they're both delicious!

@@cloudythursday9937 sounds like you copy Barry's and add espresso powder, can't be that hard to add 2 tea spoons of it and if that's not enough add more next time.

To those who aren’t familiar with molasses, from someone who is familiar with it: I find it highly suspicious that “brown sugar can be a substitute for molasses”. If you have the opportunity - taste the two. I believe you can DIY brown sugar by blending in about a teaspoon of molasses to a cup of white sugar. Perhaps that gives a sense of how (very much NOT) interchangeable they are. Replacing all of the white sugar with brown sugar in a recipe could make up for a hint of missing molasses, but there’s no way that you can use brown sugar to wholly make up for entirely missing molasses.
I grew up in California, and for 30 years my husband and I would do an “Outback” night every couple months. Besides their amazing prime rib, Bloooming Onion, and Caesar salad, the “Outback bread” was what kept us coming back. Once I asked a waiter if he knew what was in the bread. He said it had both cocoa and molasses in it, but they also add food coloring to give it that rich dark brown tone. And he mentioned that the whipped butter had a tiny bit of honey added to it. A year ago, I moved across country to an area that doesn’t have any Outback’s. Missing their addictive bread, I did a Google search for a copycat recipe today. Your recipe was the one that had enough sweetness to sound most like their sweet, cocoa rich recipe. I’m making some tomorrow! Thanks for sharing it, and the secret of whipping in a bit of milk with the butter to keep it soft even when cold!
In Northern Ireland, the ends of the bread is called "the heel." That bread looks awesome. I just took 4 loaves of homemade ciabatta out of the oven and it's incredible. I've been making homemade bread for 3 years now. We haven't bought any bread from the supermarket in 3 years, lol. Great recipe Barry. The cocoa powder was definitely a surprise ingredient. Lee :)

I’ve made this and it’s really good. Had some in an outback restaurant earlier in the year when hubby and I were over in the USA. So I had to hunt down a recipe to recreate it and I wasn’t disappointed with my outcome.
You can get molasses in Sainsbury’s. It’s with the vinegar and oil and jars of olives and stuff
in the states we call the bread ends HEELS, like on the foot heel . thats what i grew up knowing it as . nice job on the bread , looks delicious .

Oh Barry!!! You have just brought back a lovely memory for me. In the 1950s mum used to buy us this brown loaf that must have had molasses in it because it was quite chewy and sweet. It was a local bakery, not a branded one. I am salivating here. I must try this recipe very very soon. Thanks Barry.

I delivered this bread years ago to Outback Steakhouses back when they would get it fresh. They switched to frozen quite awhile ago now at least around here but the fresh stuff was great. And you could trade with other vendors to get anything you wanted if you had "Outback Bread".

For the butter, we had a whipped butter and skyr yogurt mix in iceland, absolutely recommended.
We always called it the crust in our home growing up (in Canada) but I've also heard it called the "heel". That might be an American term.
While some of us in the UK call it the ends, apparently up in Scotland they're sometimes called "siders".
called the crust in Wales UK too, it can hold moar butter than normal slices of bread without leaking out the other side.
We definitely do call it the "heel" here in the US but not sure if anywhere else does.

I love the ends of the loaves when it is homemade or if I have a big ol' bowl of soup or chili. Slap some butter on it and use it like a spoon to scoop up soup and chili.
Haven't had Outback bread in a long time, but found a fantastic "steakhouse" bread recipe that calls for the cocoa and a couple tablespoons of instant coffee. Makes a perfect dark bread to have with sweet butter.
Looks delicious and will have to give this a whirl. May not get to eat any if the stepson is about though! Great recipe!

The Outback bread is sooooo good. Yes, the moose spoke. There was a squirrel, too, if I recall correctly. Haven't been inside one in years, but my roommate and I occasionally order from our local one via UberEats. I loooooove their Blooming Onion. They used to have racks of lamb, but I haven't seen that since COVID. One of the pandemic culinary casualties, I guess.

Most definitely going to have to try this recipe. My favorite bread recipe to make is "Peasant Bread". Easy to make and Oh So Yummy! As others have stated, the end of the loaf is referred to (in the states) as the "heel" but I have also heard people refer to it as the "butt" of the bread. I too, agree with Mrs. B.....Give it to the birds!!!!

My favourite bit of bread, especially homemade, is the heel (end/crust).
It's the heel of the bread (yes, I'm American) and it is the most fought over part of the bread in our house.
You know how some people say that American bread is like cake? While TB was talking about their bread in general, I reckon this recipe is the definition of bread being cake.
Also, I was gonna say "canola oil is just what Americans call rapeseed oil", but apparently canola is derived from rapeseed cultivars bred to have a much lower amount of erucic acid, since said acid is bad for your heart.
As for Phoebe's painting, it looks to be coming along very nicely.
I think the brown bread with the oats on top is from The Cheesecake Factory. It is my favorite bread on the planet! The brown bread from Saltgrass steakhouse is a very close second. Then Outback’s brown bread. Needless to say, I love brown bread. It’s so good!
Now I have to try to make it myself!

When I was a kid we always used the call the end crust the nob end without a hint if inuendo :)
There was an outback in Enfield north London and Staines in Surrey that I knew about. I went to the one in Enfield but passed the other one often years ago when they were there.
As kids, we used to fight over the fluffy bit in the middle of 2 joined loaves. Many a time it didn't make it up the drive to the house from the box at the farm gate.
For some reason I always thought that the Outback bread was a beer bread but now that I look into it, Saltgrass Steakhouse (a competing chain) is the one with the Shiner beer bread. Both are super good if you ever wanted to do another bread video. Also the Oat bread is for sure from Cheesecake Factory.
I thought it was a sweet pumpernickel.
If you want, save the ends of homemade bread (by freezing), and when you’ve got enough, you can either make croutons or stuffing/dressing (although stuffing is more of an American thing, especially around this time of year for our Thanksgiving).

There is nothing like homemade bread, be proud of your results. I'm always the 1st one to eat the heel.
The crusts are the best bit of the bread. Also molasses is readily available as a horse feed/supplement. Or black treacle is the closest thing I have found that available in mosts supermarkets.
The problem is finding molasses that isn't Blackstrap. Or at least it's hard in New Zealand. Never thought about that given to horses. Now to find a stock food outlet.

On a freshly baked loaf, the "heels" are my favorite pieces, but from a store-bought sliced loaf, they get left for bread crumbs, croutons, meatloaf, dressing, and such... possibly french toast or grilled cheese.
Black treacle can be used a sub for mollases.
You can also freeze your uncooked dough as well and use it when you need

In the states (at least in the South) we've always called it the heel of the loaf. Not sure why.
i went when in vegas and became addicted to the onion bloomer thing and the honey mustard sauce. we went 4 times on our 10 day trip lol
we call it the Noggin end which is slang for 'head' but called it that for bread and French sticks and baguettes etc

Barry, as you have twin ovens can you try an experiment for me. Make a bread dough and split it in two (exact same recipe and conditions is what it is needed to be fair), when you bake them put a tray of boiling water in the bottom of one oven and then see if it make the bread rise better and a better crust. I was told this is what the steam does when I was taught but have never actually tested it!
I put the boiling water in the tray in the bottom of the oven and the bread definitely rises faster.
You can substitute treacle for the molasses.

I bought a tin of molasses in a Morinsons supermarket in Grays (a small village/city at the Thames at the north shore 2w ago. Not sure if it is available everywhere. (In the netherlands I’ve never seen it. I believe its also called treacle in the UK.
If the cocoa powder sounds crazy, try making Russian black bread. It isn’t traditional, but many people have come to add cocoa powder in that bread as well. Ironically, it is now my favorite bread.

Molasses is known as black treacle in the UK, you should be able to find it in stores there.
You can get molasses in sainsbury's. It's by Billingtons and in a box like brown sugar. X

you kind of can, Warburtons make strange 'sandwich thins ' that look a bit like MRE bread. (Not very appetising looking, google them!)

What they are great for is a quick and dirty pizza base, a bit of tomato pasta sauce, cheese and a bit of pepperoni 👨🍳

The ends of the loaf, crust/heel or whatever you want to call it are there to keep the other pieces from drying out before the loafs finished 😆
I´m with Mrs B, I leave the bread butts too lol or leave them for my hubby ;)
