I've had a few guys try and use the "do you like anime" question as an ice breaker and it's kinda... Uncomfortable.
I really love anime, but for some reason it doesn't sit well with me if that's our biggest thing in common.
It's also uncomfortable because they always ask about Naruto, One Piece, and/or Bleach. All of which I haven't read/watched (I started some, but they just couldn't keep me into them for hundreds of books/episodes). The PROBLEM is that then they dive into how I HAVE to watch them and all the reasons why. Dude, I've been into anime since elementary school - if I haven't seen one of the big classics it's not because I don't get why people think they're good, they just weren't my cup of tea.
And then of course there's the whole discourse of "manga vs anime" which somehow always gets brought up in that first discussion and I am firmly in the "I like both" category which somehow makes both side try to prove I'm wrong.
In short, this isn't the topic you dive in with. Anime itself is a red flag for a lot of people, even if you like it just a bit. Save it for a few dates in so they're already interested in you and it doesn't shut them down.
Weebs want weebs. They ask that because they want a girl who watches anime. Simple. I don't see why they would wait a few months to find out if you like anime when they are into it a lot.
