    My grandmothers (from Alcamo, Sicily) would whip it after it solidified, to use for filling cannoli instead of ricotta. Stir in some chopped chocolate after whipping. My family still does this today!

    Can i leave the almond chunks in? I love cooked almonds. They turn quite soft but have a bite

    What is the purpose of the sugar? Is it simply to make it sweet or can I do without sugar?

      The sugar will help stabilize the pudding, Im not sure what would happen if you left it out

      I made it without the sugar and it was fine. I did some research and found out that it’s the starch that stabilizes the desert, as it is a substitute for egg and flour.
