  • Enchiladas are one of my favorite Mexican dishes. They can be time consuming to make traditionally, but today I'm showing you how I use some shortcuts to make these vegan black bean and sweet potato enchiladas that taste incredible!

    I'm a type 2 diabetic. I am not vegan or vegetarian, but I don't eat much red meat and mostly consume chicken and seafood. I also eat a ton of vegetables and try to have a meatless meal at least once a week. I am so glad I found you. You given me so many great ideas. In fact, you inspired something I have on my stove at the moment, a vegetable dish with cauliflower rice and a coconut curry sauce.

    I make enchiladas like this once a week, and it's a great way to use up leftovers! I save bits of beans, corn and potatoes, sweet or white, and just throw it all in there -- delicious! Have even smeared the tortilla with leftover mashed potatoes before adding the rest, and even that was amazing. I often pop one in the microwave for breakfast and eat it with a mango-avocado salsa, holds me 'til lunch.

    I think I will char the corn first, then add in with beans. I appreciate your recipe techniques and shares at the end of your visually stunning recipe presentation. We have not had enchiladas in years (we decided we did not like enchiladas after trying the canned ones from ALDI). I believe we are going to enjoy enchiladas, almost like, for the first time. Thank you for this recipe. I love one pan meals.

    This is very similar to a recipe I make nearly every week. I cook up three sweet potatoes and chop them into large chunks (skinless). add a can (or two) of drained black beans (or fresh, if you have some), chop one bunch of cilantro, add 2-3 corn off the husk (uncooked), 1-2 avocados cut into chunks. and half a bottle of hot Pace picante (unless I have a better salsa around the house or feel like making fresh). I mix all of this together and I have enough to make burritos for work all week. It's my quick and easy go-to. Try it! It's awesome and healthy.

    I have only been vegan a couple months but watching and making the dishes in your videos makes the journey so much fun! I also remember probably a year ago you said what kept you going was having supportive people and family which can be found right here in this community.     We will dip both sides of the tortillas before rolling for more flavor and pliability. I also always use gloves when prepping hot peppers. I can never seem to get the oils off my fingers. Except into my eye an hour later

      😂 if you rub your hands together with another oil like olive, for example, it cancels out the spicy oil or using rubbing alcohol on your hands, help too

      I've always frozen enchiladas and these seem as though they would handle the freezer well. I usually wrap a "rack" of two or three enchiladas (one serving) in saran wrap or parchment paper and then tightly in aluminum foil. They reheat well in the oven, wrapped in the foil only, or unwrapped and in the microwave.

    Why did you put corn in it? Is it like, vital to the dish or can I skip it? I am not a big fan of corn lol

      you know, im not 100% sure. as a guess, about 25ish - 40ish grams per meal... 3 meals a day. if i snack its usually about 8 - 10g.

    So much going on here! First of all, the Vitamin C in that red bell pepper... BOOM! These flavors?! ALL belong together. It's like they hang out in nature. Me and Baby Whisk had the same weekend. Except I was in my brother swimming pool. He heats it with a wood stove so he opens it in April in Michigan. Always makes me laugh. We're so country BAHAHAHAHAHA! And when do kids preferences change? I think when they're 26? Friend, that gray handled knife... Time for it to meet a wet stone. And why are you always hiding stuff?! What's the secret? Do tell :). But limes would be amazing. Sorry for the ramble. Like limes, stay amazing and PEEEEEEAAAAAAACE!

    Authentic enchiladas dont have to be cooked in the oven a second time, just after they are dipped in the sauce and then cooked in hot oil you add the filling and fold them to be served

    Looks good but those are not typical Mexican enchiladas, just saying. Also enchiladas don’t normally go in an oven.

      He doesn’t say they’re authentic. We always bake our enchilada’s in an oven, not sure what you do. Each to their own.
