As I started watching this video and seeing the ingredients, I"m like... Oh, a summer salad. I then found myself waiting for the chickpeas to show up (because I didn't read pasta salads in the title). Then suddenly... ELBO MACARONI! (Insert GASP!) This video made me realize I haven't seen a macaroni salad at a family event since Mom died in 2015! I had forgotten all about them! She used to make salads in those big 5 quart Tupperware bowls with the snap on lids. A Midwestern mom necessity. It was as if those bowls were part of a societal "starter kit" for women in the 50's and 60's. UHG! So many thoughts swirling through my head. This was one of Mom's summer staples. How could it have gotten so forgotten?! Macaroni salads are SOOOOOOO versatile and customizable. Mom would always use hard boiled eggs and tuna in her salads. Why this is my memory I don't know? One of the key herbs I would encourage you to consider.... DILL! Mom's salads always popped with dill. And your comment about not wanting to be on the receiving end of.... So; Who made the pasta salad? I almost spit out my coffee in laughter. Thanks for all these memories. HAPPY FATHER'S DAY! Stay amazing and keep up the great work! PEEEEEEEEEEEEEEEAACCCCCCCE!
Love this one!! The "concrete" Tupperware's LOL! Those things should be heirlooms.... I didn't show me cutting it but i added dill, because MOM's know best! You can see it in the final shot of that first one (the mac one). I am so so happy I was able to help encourage the memory bank. Great memories are worth more than everything! thanks for sharing! 🤗

I love pasta salads the first one is how I make mine. I also make a ranch pasta salad, MLT pasta salad like blt but mushrooms and a regular Italian one I was full of pasta two months ago it’s all I ate so yummy thanks for this video

That first salad is soooo German! 😅 But we prefer sour gherkins instead of the sweet Gherkins aka Cornichons... And I like to boil the pasta in vegetable broth for more taste...

First- LOVE the beard. Second, great videos as I am learning a great deal on more Vegan recipes. I'm not vegan but do like to incorporate vegan meals and sometimes vegan days into my diet so having this resource is great. Wish I could do more, but living/travelling in an RV limits my culinary choices so simple, great tasting recipes are what I am looking for.
I made the first salad (with some substitutions for what I had on hand). It was delicious! I'll be making it again. My substitutions were: bowtie pasta instead of elbows, white onion instead of red, no olive oil, Japanese mayo but used less ( for lower calories) and added Greek yogurt to make up for the quantity, I didn't have sweet pickles, so I use cornichon (and juice) which I always have on hand, I used honey instead of sugar/agave, and since I don't have a blender, I just hand stirred, and finally I forgot to add scallion, but I would have subbed garlic chives because that is what I always have growing in my garden. It's a lot of changes/subs, but goes to show what a great recipe it is, that you can use what you have on hand and it still results in deliciousness!

you certainly can! but as long as you dont wait too long when you take it off the stove and drain, it wont keep cook so much that its going to be a awful texture.

Where does one go shopping for vegan ingredients? I’ve tried multiple stores and I haven’t found one where I can buy almost if not all vegan ingredients example cheese or yogurt.
I went to my aunt’s 90th birthday party and one of her daughters made this very pasta you’ve described. The dressing was yummy, and the pasta was the perfect texture, not over cooked or squishy and not too may veggies. It was so simple and so good. 😊 I love pasta with slivered carrots, zucchini, herbs and a good squeeze of lemon juice are Parmesan 🤤
I have a question. Without trying - wouldn't it be better to NOT toss the pasta with oil and toss it with your dressing to start? If you toss your pasta with oil, it seems like that would keep it from clinging to all that yummy dressing you're making... Wouldn't the flavors ve better if you first toss the pasta with your dressing and then your add ins? Just curious if that would make a difference.
great question!! You want to toss your past with oil because you have to give it time to cool down and during that process not stick to each other. The past is very porous, especially when heat it up, therefore the tablespoon or less of oil that is used to help it not stick will technically be sucked up for the most part. You may not want to use the dressing because of a few reasons. You will have less dressing when bringing the whole salad together, the dressing is heavier than just oil so it may trap the steam and that may cause it to become "watery". Hope this helps!

That is what I do too: I make a mix of veggie and chicken stock powder to boil pasta in an I always have it at hand. Delicious. 👍
