I’m a new sub. I used your recipe with some modifications. No flour, bread crumbs instead. No tahini, added chopped toasted walnuts in its place for texture & did a finely shredded carrot in addition to the mushrooms & red beans. Came out fantastic! They held together nicely & wasn’t mushy…soft yes, but not bad. Thank you for your recipe!
These look great. I usually add a bit of semolina and finish off my red bean burgers in the microwave for a minute or two after browning in the pan to get that chewy supermarket burger texture.

You can, but it's gonna be a bit different. I used refined coconut oil because it's high in saturated fat and it doesn't have any flavor. So if you use olive oil, the flavor, and possibly the texture, are going to be different.

Do they hold together well? That's the worst thing about most veggie burgers, they squeeze out the side of your burger bun while you are eating them or worse still, they crumble and fall out the sides. Yours certainly look the business :)
They hold together well enough, but they are soft in texture; not firm like the imitation patties. I totally know what you're talking about. There's no real way around that unless you use seitan, xanthan gum, or some other kind of binder. I've been meaning to try one with tapioca starch, but just haven't gotten around to it yet.

Yo wash your beans and soak your lentils overnight. Or else you'll screw up your stomach and nutrient absorption eventually and trust me its hell getting back to normal

Good tip , I use potato starch and leave overnight in fridge
Masa is very similar in texture to ground semolina but has better binding and more nutritional benefits.

Masa is corn flour. You could probably use all purpose flour in substitute and it would be just fine.

Chao Cheese is a vegan cheese made by Field Roast. It's available at most grocery stores, usually in the produce section by the tofu.

Yeah, it is quite a lot. If I remember correctly, this made about 6 to 8 patties. If that's too much, I'd halve the recipe, or freeze the extras.
Dont cook grains with salt not good they take forever to be done add the salt later just a tip from an other Chef great job with this vid
