    My husband says he doesn't care for the texture of canned ground beef. However, if I use it in a dish and don't tell him, he never complains about the texture.

      Because he's tasting with his head instead of his mouth. I believe that a lot of the texture issues are caused from this

    My fiance wasn’t sure about the texture. I made tacos with canned ground beef and didn’t tell him it was canned meat. He didn’t even notice and went back for seconds!

    The restaurant supply store here had a sale on bulk 80/20 ground beef for $2.50/lb last month. I snagged 120 lbs and canned it all up. It’s still shocking and upsetting that $2.50 was an incredibly low price nowadays, but at least I have it for less than they’ll charge tomorrow. I also boiled out and saved some of the fat to use later. AND the best thing I did was I bottled up the gross goopy dregs at the bottom that are little crumbs and gelatin juice and I stuck it in the fridge to mix a little with kibble every day. My doggo loooves me for it. I didn’t use my handy dandy electric canner for this kind of heavy duty bulk job…cough cough 💜

      The gelatin is wonderful for dogs. It gives them extra minerals for bones. I make homemade dog food for my 10 yr old border collie who is slowing down, but he's got a 4 month old female Anatolian Shepherd puppy who weighs 45 pounds already. She really can use the bone broth or gelatin.

    I add my seasonings to it before jarring or while pre cooking. Like onions, bell peppers, salt&pepper. That way it doesn’t have that off scent.

    Leisa, I think you are the one that I watched years ago when beginning to can meat. All I`d canned prior to was the normal veggies, fruits, jams, etc. I have never looked back!! :) My pantry`s not complete with out canned meat. So much ya can do with the ground beef..add to spaghetti sauce, sloppy Jo`s, tacos, chili, ground beef & noodles with beef gravy....the list goes on & on. Learning to be creative with meals now might save heartache down the road when things get really bad. You`ve picked a good time for some refresher courses!

    I have canned an amazing amount of ground beef. At first, I wasn't thrilled with the smell either. However, if you put it in a cast iron pan with some bacon grease and fry it up, it takes on a whole new flavor. I don't raise pigs, but I do save my bacon grease in pint jars in the fridge. Use it with eggs, or beef, or hash browns,... whatever you want, it helps with flavor. Then you can use the ground beef in anything like sauce, casseroles, burritos, etc. Can until you can't.

      I use bacon grease on my cast iron loaf pans for making our bread! Can’t taste I in the bread, awe shucks!

    Maybe not everyone would think this is a good idea, but what I do is can a 50/50 mix of ground beef and ground turkery. The turkey maintains its texture just like freshly cooked, but when opening the jars it has a nice beefy taste.

    We love Taco Tuesday nights with our canned meat. So fast, so yummy. Just brown up, add your packet and the water that is in the jar is enuf to mix the spice with. Easy Peasy

    I watched your video while having my coffee, 20 minutes later I’m at my local supermarket to buy items for dinner…and low and behold….they had ground meat on fast sale for 99 cents a package (1lb packages)! I got 19 lbs of ground meat for $19!!! Meatloaf mix ( beef, pork and veal), ground veal and ground turkey. What a windfall!!

    Just a suggestion from my learning:
    As someone who started pressure canning in smaller jars for quite some time, use caution where the smaller jars are located in the pot. If the smaller jars are in certain older canners or (if stacking in the canner) on the lower tier, it can change the density of the final product or cause over heating (especially in the older canners) of the bottom of the glass. My cats and kids were unhappy with the denser ground beef. And the cracked jars were my learning curve. I have 2 newer canners now.

    Canning ground beef is the same texture as Taco Bell meat (which I love) for various meals.

    I learned in 2020 from you to do this. I use 80/20. I cook it, drain the fat, fill the jars and I use beef broth.
    I use it for tacos, goulash, enchiladas, anything you would use ground beef for. I have had no problems with a different taste or texture. Use spices when you are about to eat it.

    I'll be checking the Wednesday sale ad for some ground beef to can and a roast or 2 for vegetable soup. Also, the extra turkey that I bought before Christmas will be coming out of my freezer for roasting, broth making, and canning. I have lots of empty pint jars that need to be filled after eating from my pantry this past winter. Thank you for your video!

    This instructional video is one of your best ones on canning ground meat. It is very thorough , clear, and concise, straight to the point. I will save and will recommend this one for beginners and a refresher for the more experienced who have not canned in awhile.

    I’ve been out of work for a couple of months and the meat that I have canned has really helped me and my family out. Like most new canners I was scared as heck to use the pressure bomb lol. So once the first batch was done I was hooked on it. I grab a jar dump it in a pan heat up some instant rice and some veggies and dinner is served in about 10 minutes.

    Smart move on your part! I actually watched your video on canning meat and put up ugly chicken and beef. I just used up the last jar of beef and it’s on sale the next two days and I plan on going both days, because they are limiting it to 10 pounds. So, my sweet husband has agreed to follow me with his own cart and buy his limit too! He seems to love the Burrito in a jar and eat all 12 I made in January already.😂🥰

    USDA canning guide has an excellent chili con carne recipe. Having plain canned g-beef is handy for quick meals - tacos, enchiladas, SOS, spaghetti; any recipe that calls for ground beef. It doesn't stink to me and seasoning once opened is the trick.

    Tomato juice is an approved liquid. My 1st try canning GB, I used TJ since wasn’t sure about flavor; figured I could use it for spaghetti sauce or chili.

    Our ground beef is on sale this week for $3.49/pound. I have some ground beef canned but my husband thinks it has a weird texture. I'm fine with it. But the deal is that we still have to use what I've canned. I do think that it kinda smells like dog food until it's reheated. Then it's just fine. Meat is meat if you ask me. And I love it that it's shelf stable. That goes for all meat though.

    Funny that you did this today. My son and I canned ground beef this weekend. We didn’t save the liquid from the browning. I used beef broth instead. However, I have at least 10 more lbs to do and will save the liquid and add to it.

    I had seen someone who, instead of cooking it like you did, they blanched the
    ground meat. That was a royal pain! I may try this with ground goat meat. (Yes, I raise meat goats). The meat has a richer flavor than most ground beef. Makes WONDERFUL meat loaf or stuffed peppers.

    being single, I like to can my ground beef, with onion and mushrooms in broth, in 10 to 12 oz jars. Each jar is just the right size to pour over a baked potato. This makes it easier for me because I get enough meat with no waste and no over-eating. But if I do meatballs, i have to use pints. Using the right size jars saves money.

    Texture sensitive.....my family didn't like it BUT the dog did....oh well, live and learn. I feel if I can roast, chicken, sausage and bacon I can put more ground beef in my freezer. Love watching your channel....I learn so much from you!

    Had a first yesterday while canning broth, my funnel would not go down inside jar, yep mason jar. I thought what the hey here? Filled my others lidded them and put in canner looked at said jar. It was not round!😳😳😳 never seen that before. It was a jar a friend gave me with questionable contents I had dumped and cleaned al jars, didn’t notice this one. But it went to trash after I checked with another funnel, and proving it was wonky! Will never forget that experience.

    Just did a load yesterday! Great minds think alike 😊 I use boiling water to clean my lids and since not using vinegar any more all my lids seal. Before that when I was using vinegar I kept having fails! Love watching your videos - thank you!

    I wasn't a fan of the taste raw packed but it was fine with spaghetti sauce or taco seasoning. It also came out of the jar in a big clump that you have to break up. The last time I cooked it first and added taco seasoning for tacos and nachos and it's pretty good that way.

    Slowly but surely over time I've swapped out to all wide mouth jars simply for a few simple personal preference reasons. 1. Consistency, they are all the same so I don't have to grab or stock multiple ring and lid sizes. 2. Easier to get stuff in and out of. 3. Big hands so easier to get down inside if I have to clean out something stubborn. Only exceptions of course being things that aren't nearly as easy to find in wide mouth like half pints etc. I still have few regular mouth jars here and there but they usually get used for gifted canning stuff and get replaced. I do find a slight consistency difference with canned burger vs fresh burger but not enough of one to really care. Taste wise I prefer using broth to plain water because it's a flavor bonus.

    Kroger has ground beef right now, buy 2, get 1 free. It's not the leanest, but I did a test a couple months ago, fried both 85/15 and 73/27 and there was only a 1.5 ounce difference per pound. So if I buy 10 lbs and get 5 pounds free, that's $2.39/lb. - a savings I can't pass up for minimal loss to the fat content. I'll just drain off most of it and add some hot beef broth to the jars. We don't mind the texture. Like you said, "It's MEAT".

    I'm not crazy about the canned ground beef, so my compromise is to cook the ground meat and dehydrate it. This works better for me.

      @@lisashowalter6083 Yes, I've been doing this for a couple of years now. I only use the 90-93% lean ground beef, cook it in a skillet until all the pink is out, then spread it on the silicone mats on my dehydrating trays. Once they are dehydrated, I put it in Mason jars, then vacuum seal it. I know this is probably overkill, but the meat has a great taste once I rehydrate it by pouring boiling water over it and soaking it. You can also add it to soups, stews, spaghetti sauce, etc.

    Lisa please help. I made 4 qts of tomatoe juice and forgot to put my citric acid in them. I processed them and they sealed, do I have to throw them out? Thanks I watch you all the time. Liz

    Oh, I also have a second question. If you can half pints, I know you process for the same amount of time as pints. How do you get the jars above the water line, though? If it were 3 quarts or 3 inches of water, wouldn't it cover the half pint jars? Do you just stack up several racks to get the jars above the water line if you are doing half pints? Thank you so much.     1st batch I did was too much pressure and it tastes over cooked .Save it for dog food😊.I have a 15 weight and 10 is what I was supposed to be.

    I have figured out that if you are having trouble with bands seating, if you turn the opposite way, they will sit, and then you turn the other 😮way .

    I love canned ground beef! I have pressure canned my ground beef. It’s so versatile to use in your dishes💖 i can 80/20 cuz I feel it gives more flavor to have a bit of fat in it. I was also told the water you add to the jars must be non chlorinated water. So I use bottled water when canning. Is that true or it doesn’t matter? Anyone know the answer? If so why

    I can my ground beef the same way as you do. I do however add salt to the jars while filling them with the medium fried hamburger. I tried the raw pack ground beef once and yep, never did it again. It was all just a big clump...
    I use my caned ground beef in basically everything that I would put ground beef in, unless I have fresh ground beef on hand.
    I have actually also managed to make both meatballs and meatloaf from the caned ground beef. You do however need a "binder" and, I use eggs and breadcrumbs to create that binder. Otherwise, I just follow the recipe for meatballs or meatloaf. I'll a lot of times add more than just ground beef to my meatloaf. Such as onions, garlic, bacon, black olives, salt/spices and whatever else pops into my mind, that I think will taste good and I have in my pantry. Hubby has not been able to tell the difference between the meatloaf made of fresh ground beef and caned...😁 Could also be due that I seldom make the meatloaf with the same ingredients so, he's used to it tasting a bit different but, he still claims that the consistency is the same. I'd say that the only thing I do different between fresh ground beef and caned, is that the caned ground beef I'll usually make in a bread/loaf pan, whereas the fresh beef I'll make into a roll and roll it up in tin foil when going into the oven.

    I noticed you used a ForJars pressure canner. It states you can use it on glass top ranges. Have you tried it on a glass top? I have an All American canner, and was thinking about getting a Presto to use with a Cadco element. But, if these really work on glass tops, that would be wonderful. Thank you.

    Leisa could I cook the meat & pour out the liquid, then pour in beef broth in the pot and heat it up just until it is almost boiling ? Would that help it to taste better? Just wandering.

    I may have missed this part, but did you brown your ground beef in a separate pan and then move it to the roaster pan to keep warm (with water added), or did you actually brown it in the roaster pan, drain the grease, and then add water? I have a roaster pan I have never used yet and am really new to all of this. Thank you!

      Nope, Cooked it in the roaster. The water is optional, I did it because my roaster runs hot and I didn't want to overcook the meat
