    POUR SAUCE in a little bit FIRST. Then put a few meatballs then more sauce. That eliminates having to de-bubble as much.

    I like this recipe but I do add Salt, Oregano and some other spices. I like the Italian taste of it. One thing I like to do when canning large amounts of ground Beef or Chicken is to put the meat on a large cookie sheet. Then I sprinkle the seasonings through the meat. It makes it easier for me to mix like this. I’m not a Pro like you & so many others on RUclips but I always try to give suggestions that help me out. I am disabled and have had multiple shoulder surgeries years ago and it has left my hands weak. It’s hard to grip if I have the meat in a big bowl. One other ingredient I like to add to the meatballs is Good Season Garlic & Herbs dressing mix. I hope this will help you next time you are working with ground meat. I also do the same when I am canning Chicken, Pork, or Beef chunks. Thank you for sharing so much with us all.

    I did 7 pints of hamburger today and 3 jams yesterday with apple pie filling i did carrots the other day I love doing this its fun and very fulfilling

    I watched a video where to woman patted her meatball mixture into a baking sheet, then used a puzza cutter to cut it into equal size squares. She then rolled each square into a meatball. I haven't tried it yet but it looks like it would make it easier and quicker to make the meatballs.

    I always start with and inch of sauce in the bottom on the jar. As you add the meatballs the sauce covers. Then top off

    I'm subscribing. You are one of the few canners out there that cans the right and safe way. Once you said breads, rice and grains are not safe...I knew you know what you're talking about.

    I can meatballs in gravy, but I use Clear-Jel as my thickener.

    I haven't canned meatballs in~ 30 years, won a blue ribbon at the cou ty fair (i giess for looks) they tasted like dogfood, recipe from the ball blue book ..growing ip in NY & NJ and having a german step father who was a great cook and an Italian Aunt, I knew great meatballs, and now with the better knowledge of canning do's & dont's and this video am willing to try again...thanks, ❤️

    I made this today. Some with tomato juice and some with beef broth. They look and smell great. Since it was my first time, I put in the seasonings I wanted and fried up a small patty to help adjust the taste; it helped a great deal.
    I loved your idea of adding powdered mushrooms and dried onions, it added a lot of flavor.

    I made these along with watching your video in 2021. They turned out so delicious. I have a crock pot full of these in my crockpot for supper tonight.     Mix crushed pork rinds with ground beef and herbs / spices. Helps as a binder for meatballs and adds some pork flavor.

    Canned meatballs are AMAZING! I did it for the first time because of this video. I did just 3 quarts and a pint just to see if we liked them. We LOVED them. I canned them in water because I added salt to the meat. The juices in the jar I then used to make my Swedish meatball gravy instead of broth called for in my recipe. So good! Making more now to have ready on my pantry shelves. Thank you!

    When my wife and I first met I told her I can't eat mushrooms. I'm not allergic but they just make me ill. It's also a texture thing they tend to feel yucky to me. Well she kept trying to sneak them in recipes on me and I would always find them. Once she got them through my mushroom defense system and made gravy with cream of mushroom soup and it was really tasty she was so proud of herself up until the point where I started hugging the porcelain throne 🤮 lol.

    When I make things like the meatballs, I always put some of the sauce in the jars before adding the meatballs to the jars. Doing this has always seemed to work well and avoid any air pockets. I do it that way with any kinds of meat meals. Let me know if you try it cuz it’s always served me well! Happy Canning Friends

      i do this also, add some fluid first, then fill with fruit or veg . No problem with air pockets.

    Our shire is going into a snap lockdown as @ midnight tonight, 18/09/21.
    Hmmmm My plan was to go shopping Wed on payday to get ground beef to make meatballs.
    ACTION STATIONS - tore to the meat wholesaler before closing, picked up 15lb/6.8kg ground beef 4 lb sausage meat for sausage rolls and 2 pieces of corned beef,.
    Looks like it's going to be a long night. It's 6pm at night, I have 2 large trays of meatballs baking, and another 2-3 to go. I have 24 quart jars ready (not enough pint or pint and a half jars ). Pressure canner ready to go.
    Coffee you are my constant companion lol
    ** I got 10 quarts and 1 pint, topped with beef broth. 7 quarts in the canner now - process 90mins @ 10lbs pressure.
    ** I held back enough meatball mix to make 6 rissoles for dinner - quite nice

    Lesa, I usually use half 80/20 ground beef and then grind our own equal amount of pork butt. We made beef cheeks in the instapot the other day and the texture with the collogen, fat and muscle fat made me wonder what the beef cheeks would add to this dance party so I also ground an equal amount of the cheeks and threw that in. Three lbs each. We tested the blend as burgers on the grill and it was two thumbs up. I added dehydrated tiny diced mushrooms instead of the powder you do. If figured they would soak up something wonderful as they rehydrate during the oven roasting of the meatballs. Canning quarts tomorrow morning! I'm excited to see what texture develops after canning.

    If you have a kitchen aid or some other kitchen machine it works great with the K paddle attachment works great for mixing the meat.

    They looked delicious. I think the jars with the sauce are a great visual to demonstrate what an air pocket looks like. I watched your last video with the meatballs and I like to make old school meatballs fresh when I make them. I was worried if canned meatballs would be rubbery or fall apart when canning, but they look great. My daughter-in-law and grandson have Celiac and cannot eat any grains, so I like your suggestion for the mushroom powder for the binder, plus someone in the comments mentioned using dehydrated bean powder. I will can up a pint jar with broth and one in sauce when I have my next pint canning session to see how they turn out. If they turn out the way I think they will, then this will be a game changer when I make my meatballs for the family. I can open up a jar of these meatballs for my daughter-in-law and grandson so they can enjoy meatballs too.

    I pressure canned for the very first time today!! UPB (Ugly Pork Butt). Only 7 jars, I bought a small hunk of critter in case I screwed things up. One didn’t seal :( but that’s ok, since that means we have an excuse to eat it tomorrow (its in the fridge now).

    I’ve done it with broth. But haven’t done with sauce. Glad to be able to watch your Tutorials. I also was thinking the broth meatballs would be great for Italian meatball soup. And as well as beef gravy or chicken broth for gravy and noodles or rice. Once again I’m adding this to my list of to do’s 😎Hugs to You and Phil. For my Birthday I got a steam canner that I saw on CANUARY. Can’t wait to start using that for water-bathing.
    And my son mailed me a Sues dive a temperature water cooker for meats etc.. I just learned I can do LIMONCELLO quiker than waiting a couple months. Really looking forward to that as well. Wish I lived closer I would bring you some. I haven’t made it in awhile a couple years. I’m due , lol 😎

    Could you put sauce in first, maybe halfway, then the meatballs and finish with more sauce. It may be easier for debubbling. Idk, woulď have to experiment:)

      I thought the same thing.. sauce in first.. half way.. add meatballs.. yes you will either have to add a tablespoon or 2 more. But the air pockets wouldn't be an issue. I love this by the way.

    I never thought about canning meatballs. What a fantastic idea. This may be a stupid question, but I am still learning something new all the time with canning. Could you add a few scoops of sauce to the jar first then add the meatballs? By doing so, I think it might cut back on the air pockets, Maybe???? Then add meatballs and sauce as needed to the correct line.

    So funny. I made chicken pot pie from canned items. I added ground mushroom powder in the gravy. Delicious and I am not a mushroom fan. It’s a texture thing for me. I’m powdering all my dehydrated veggies and greens to do the same thing. Yup. I’m not a green veggie lover either.

      When you were growing up, didn't your mom make you clean your plate and eat all your vegetables - don't you know how many starving people there are in the world? At least that was what we were told, till we stopped saying we didn't like this or that vegetable and just gave up and ate all of them.

    2 nights ago, inspired by your video I canned 8 pints beef/dehydrated onion/Worcester sauce and smoked paprika meatballs. They were small due to the scoop so I got 12 in each jar. I used beef broth from the store (2% sodium) with a tablespoonof Worcestersauce from Aldi. Parcooked in the electric skillet first. Debubbled very gently with a plastic chopstick. Processed 75 minutes. Dummy forgot to wipe the lids with vinegar so I had to pop the tops, clean thoroughly with vinegar then reprocess. They look really pretty. At any rate, even though I wasn't perfect I am still proud of them.

      USDA does not recommend adding noodles, other pastas, rice, flour, cream, milk or other thickening agents to home canned soups. Noodles, other pasta and rice will become mushy.

    Could you add your meatballs in your jar one layer at the bottom then add a little pasta sauce, more meatballs then a little more pasta sauce until you have the Jar full? I know this would be more labor-intensive but would it help eliminate the air pockets?

    Meatballs are on my list for December. I can't believe how much I've been eating since I've been canning it!! I'll need a wheelbarrow to haul my butt from the table to the couch by Xmas!! 😆

    Can't wait to try it! I like driving myself crazy too. When I plan on canning I will thaw or buy for three different recipes than realize after the first day that I can't possibly get it all done.

    If u want to can hamburger in a jar.....as hamburger crumbles.....you can put a mountain of hamburger in your biggest slow cooker.
    Just check every 30 min or so and use ur hamburger chopper upper to break up the clumps and go about your business.....when its cooked about 1/2 way, u can put it in the jars and finish in your pressure canner.....🖐🏻☺️

    Wish I'd known this last Fall when we canned 31 quarts of pasta sauce. Mmmm, meatballs added would've been SO good! Husband fusses about "that green stuff" I add to soups and sauces, so I disguise it by dehydrating things like plantain and sweet potato leaves, onion and garlic tops, oregano, parsley, basil, carrot tops, and celery leaves. Grind it up and add some to whatever I'm cooking. He can't see it :-) Dehydrating seems to take the bitterness out of some of those, but I have to be judicious about quantities since the Italian herb flavors still remain. Am definitely going to make meatballs with our next tomato harvest. Thank you!

    Would it be better to alternate sauce then meatballs to avoid bubbles in the jar?
