    Totally agree with you, canning vs freezer. I forget to pull the food out of the freezer and I find that I miss things in my freezer, they get buried under other things.

    Nice Video!! I love my canned meatballs, like you said so versatile, Swedish, Sgetti, Meatball Stew, Asian, etc. . . Sometimes when in a hurry, just open a can of Mushroom Soup, Canned Meatballs, boil some noodles and Wa-La, dinner in 10 minutes. Thanks for bringing us along

    To lubricate the seal on my canner I use mineral oil, available at grocery stores, which I also use to seal/protect my cutting boards. Totally safe and can also be used as an intestinal lubricant, does not mold or go rancid. And thanks for the tip on using dry onions instead of fresh, your tip will make for a better meatball.

    I am soooo glad you posted this recipe!! I canned some last year...using just a small amount of instant potato flakes. I did use fresh onions & sometimes they fell apart...but since I only used them in spaghetti sauce, was ok. lol . They were good..but could have been better. I like your list of ingredients..sounds like the flavor I like. Now eager to can some of these!

    Interesting. Ive only made traditional Italian meatballs where you need to add egg, milk soaked bread, seasoning. I didn’t think it would hold together without the egg and bread to bind the meat.

    Good to know about the NEW Pur lids! I will try them. The older white gasket ones didn’t work so well for me. Only about 75% success rate 😏

    I have a large mini muffin pan that I use to make my meatballs. Put the meat mixture in the cups and bake for 15 minutes and makes perfect meatballs without the hassle of rolling them. When I take them out of the oven I put them on a large cookie sheet and freeze them. When frozen I toss them in a 2 gallon zip lock bag and can grab what I need for whatever dish I’m making. I can just about everything that can be canned and never thought about canning my meatballs. Definitely something to add to my list. Thank you!

    This morning I opened a can of these meatballs, made a gravy from the broth, added green beans I’d canned and baked a potato. The texture of the meatballs is normal, and they are delicious! These will make super quick meals! Thanks so much and these meatballs will be a staple in my pantry!

    I just did a bunch of meatballs a week or so ago. Mixed plain ground pork with my beef and did some Italian style and some plain ones. Have thought about canning some but waiting to see exactly what pantry space vs freezer space I need.

    Made these yesterday. Right out of the oven before canning they were delicious.. The broth was delicious. Had a jar of them for dinner tonight. Was a no go for my family. For us it reminded us why we don't like canned ground beef. The texture for us was the same as canned ground beef. I love your channel and canning recipes but for me this one didn't work.😒 Look forward to your new recipes (non ground beef)❤

    I loved this recipe it is beautiful in the jars and tasty wonderful I added tomato powder to my mix! I want to try a Mexican style cilantro. Tomato, onion, garlic, powder.

    I too am a Retired Nurse...yes we do get dry hands. God bless you for your great videos and I love that I finally learned how to pressure can Foods. I’ve got an All American canner and I use Vaseline it does work the best. God bless 💫❤️🇺🇸

    I can't stop canning meat but I took a break this week and canned your charro bean recipe. They turned out great! Love to watch your canning videos/recipes. Asian style chicken is next recipe I'll can this coming week. Meatballs will be on the list to can in 2 weeks and I'll be adding potatoes because I love them.

    I love all of your recipes! Finally getting back to watching vids since my husband passed away this year. I do have a couple of questions. Have you canned meatballs with marinara? If so, did you like them? Also, can you use commercially canned marinara sauce? Thank you for sharing your amazing recipes!

      I did can with marinara and did not like it, the marinara way over cooks and tastes scorched. You can use the commercial as long as it doesn’t contain thickeners, but you will need to thin it out.

    Everything looks fabulous; with my severe allergy to seafood I could never eat this recipe because Worcestershire sauce has anchovies in it. Will try this concept with my regular mix. Thanks!

    I canned Italian beef not long ago and had siphoning too. Ugh! If I have that problem, it's only with meats. I'm not sure why. I try so hard to avoid it 😒
    I'll be trying this because I love meatballs but hate having to make them all the time!
    Wondering if you have ever canned any of the sweet and sour or Thai style condiments from Ball? I've only ever done the plum sauce and a Thai chili sauce. Both are great but I have a goal to venture into more of my own condiments this year and less store bought. I'd love to see if you make any of these 😄

    Help needed - question below...
    I just thought of meatballs last night when I went to get chorizo out of the freezer to thaw for today's soup (9 qts made, 7 canned) & I put my hand on meatballs first. I needed this video!
    Question: you said you had your jars in hot soapy water with vinegar.... I didn't think you could add vinegar to dish soap but I need to know how you did. Hubby scored appx 150 at jars for me, used. Some are fairly easy to wash, some I'm having a hard time with white or even brown residue, some are seriously scary to think of cleaning by hand. I don't have a dw, I AM the dw. I hate the smell of vinegar but am willing to use it to clean the jars if it works well. I need help please! These jars belonged to a lady who passed & her nephew sold them. They were stored in a place not clean without being very clean. I didn't see the place but I can only imagine by looking at these jars. There's even glass mayo jars (can I use them?). I'll appreciate any help you can give me!! I just started canning two days ago & ran my 3rd canner load ever today. Watching you & others has been my training, lol.

      Vinegar added to your dish water will remove any leftover residue off your jars. 1/3 cup white vinegar to your dish water.

    Those look delicious! I have canned some in plain broth and had to flavor it later. Never thought of adding the flavors before canning. DUH!! I would have canned up the extra broth for the next time.

    Hi! I don't know if you see comments since you did this a while ago but were the potatoes raw when you added them? I canned some potatoes using the Ball Canning Book. It said cook the quartered potatoes in water for 10 minutes then put into jars. That seemed way too long as they could have made mashed potatoes when I strained them to put in jars.

      I soak them in water with lemon juice overnight and rinse several times before canning them. I do tell you I. The video. 😊

    I heard you say you used Idaho and russet potatoes I’m still new to canning but I thought those type of potatoes wasn’t good to can with

      They are fine to can, they will just have more starch at the bottom of the jar.

    I found that little pig sausages fit perfectly in a pint jar. I can get 10 to a jar. I then fill with V8 which I have added a bit of Siracha to and then process. I have also done this with about 15 Costco rotisserie chickens. Buy 3 or 4 chickens, strip the meat off, throw 2 of the carcasses into a crock pot and make stock. then add and layer garlic cloves and chicken, then a sprig of fresh Rosemary down each side of the jar. Top with stock and process.

    I have my first load in the canner now. I had to sneak a taste of one first..OMG!! These are awesome! This is the exact flavor combo I have been wanting..and I am also gonna use it when making salisbury steaks. Can`t thank ya enough & looking forward to your Italian meatballs. Note to self..buy some more ground beef! LOL

    Just curious was the potato chunks raw packed or boiled for 2 min. Both look delicious so you know that means thats going to happen at my house. Thank you

      Because it takes off any residue left from the the dishwasher or from canning raw meat. 😊

    Jan 2023 ... I want to can meatballs. Wondering is I could try a variety
    of flavors. Chilli sauce and grape jelly, and Marinara . What do you think ?

      I think that would make it too dense. and the sugar from the jelly would leave a scorched taste form pressure canning so long.

    Jeni I can meatballs that I had purchased at BJs Wholesale. they were frozen when I bought them. I allowed them to thaw before I canned them. I did not cook them cuz they were already cooked. I did use hot broth in each jar. when they came out of the canner the broth was up to 3/4 of the jar so there was a little bit of siphoning. as they cooled all the liquid disappeared but there was no siphoning showing on the towel they were sitting on. could the meatballs have absorbed all of the broth that was in the jar? have you ever experienced the same thing?

      Yes, meat will absorb when it cools down. It happens too me too with the siphoning. 😊

      Yu can use 73%, just pour off the grease right after you bake them, before adding them to the jars. 😊

    Hi Jenny. I just made a batch of meatballs following your video, and I have a question (new canner here). I just took all the jars out of the canner and they are bubbling like mad, except for one. I noticed that the liquid level has also dropped below the one inch headspace level, and there is some "grease" in my canner so I know it leaked. The jar is sealed. Is this jar still ok to put on the shelf or do I have to use it right away? Thanks for the help.

      @@Jeni_Gough after washing the jars to put away, when I again lifted the questionable jar the lid popped off. That jar didn't seal so its for supper tonight. That one should be ok to eat? Thanks so much for your reply.
