we eat matzo on Passover which is when remember the Israelites when the fled slavery in Egypt and when they were making food on the run from the tyranny they didn't have time to let the bread rise or Levin is the word we use so matzo also (matzah) is unlevin bread
I do recall learning about unlevin bread and it's origins in my religion classes growing up. So is it traditionally eaten plain or with any sort of toppings? Fascinating stuff!
