    I need to try this....I did Dr. Berg's Cauliflower Pizza and I was surprised it turned out well on the first attempt. Cauliflower is so versatile . I did a flax bread and it was good but too wet and didn't rise enough. I lost 50+ lbs. in 4 months on keto diet last fall and went off keto and now I've gained 20 lbs. back. Back to keto I must go. Best effect for me was Blood Pressure went from 147/80 to 117/70 when low carb.

    I tried this recipe and I was truly amazed how how good it was! I am exploring other flavor adds for diversity but cauliflower bread is going to be a regular addition in my house. Thanks Tracey for sharing!!

    Try using mashed canned white beans in place of cheese for the crust. This suggestion is for those who want to cut down on the fat. The bean substitution should allow you to bind the ingredients to make a crust that doesn't fall apart.

      That won't work for Keto & low carb. Keto diet is a HIGH fat, low-carb. So the more fat the better. The idea behind it is to train the body to use fat rather than carbs to fuel your body. Beans are carb heavy. IMHO Lowfat, high carb diets are a scam.

    We prefer this to "ordinary bread".....it freezes well to bake later too x I just pulp it up in the food processor till it looks like couscous.

    For those intolerant to eggs, the best replacement would probably be ground flaxmeal. You can google to find out the ratio mixed with a little water.

    would the way you made this be good for a pizza crust to ?
    i think i am going to try this for both . its worth a shot i would use instructions from a pizza crust video using the ingredients from this also can we use a processor if we do not have a grater?

    I have really enjoyed some cauliflower recipes lately. Adding garlic salt to the cauliflower seems to help the taste for me.

    I don't know what is in your packet of Italian seasonings. I put in regular Italian blend. This was extremely easy to make. With my herbs it tasted like focaccia bread. I'd like to substitute the cheese if anyone has any tried suggestions.

    It has never lasted that long for us to see. I have made it in the morning, taken it for lunch and warmed it up in the toaster oven. My rule of thumb for most things I make ahead is two days.

    I used a salad shooter to grate the cauliflower; so much easier. Have not baked it yet and will leave another comment when I have finished the process. I did not have packaged Italian seasoning, so I just improvised with basil, oregano and garlic powder.

    Is that Italian seasoning pack a wet or dry mix? I've never seen anything like this, could I make it? Live in the USA.

      I think it's a dry packet for making an italian dressing. I could be wrong, but I think that's what it is.

      +Rosered57 If you go to Walmart the packet version of the dry Italian dressing is on the same aisle as the salad dressing and mayonaise etc. It's usually in the same vicinity as the croutons, etc. Not sure about the location in other grocery stores.

      +Rosered57 Yes. It's dry... in the packages just like Ranch comes. This is the same recipe that I use for Pizza Crust. It's awesome!

    VERY INTERESTING BUT...
    How many cups of cauliflower. Head sizes can vary w/ a large one yielding up to 8 cups of cauliflower rice. A small one might be 5 cups so that's a big difference.
    I noted that you said to only grate the florets (helpful hint about stems being bitter) so maybe that's not the same as cauli rice but a cup measurement would sure be helpful.

      Trish Truitt it's cauliflower and eggs. It really isn't going to be a massive problem if you have 2 cups of veg to 2 eggs or 8 cups. Worst case scenario you end up with an omelette

    Thank you!! I'm trying to eliminate wheat out of my diet completely & missed sandwiches so bad T_T. But other recipes called for yeast also which I'm not too big on cuz it causes bloating....I have to try this!!! In so tired of lettuce wraps XD. I wonder if I spread it really thin would it hold well enough to make a tortilla wrap for my fajitas too :)?

    Wonderin if it can be made w/one egg only, n does baking it that long dry it out enough that it's' not mushy?? I've made pizza crust outta cauliflower n it was good. But, cooking it, n straining was SO time consuming! Love how u don't have to strain. My pizza crust STILL was fairly mushy even w/straining, so wonderin how this turns out w/out straining?? Sounds amazing, wanna try. Thx for post.

    It would've been helpful to see you bite into the sandwich so that we can see how well the bread holds up or if it falls apart, before we make it. Anyhoos, anyone who has made this, did the bread hold up well as a sandwich bread?

      +Karen Cas I haven't made a sandwich with it but this is the same recipe for Pizza Crust... and it holds up for a slice of Pizza just fine.

      +Karen Cas To make it even less moist or soggy put the cauliflower in the micro for 5 min. and let it cool off. Put the cauli in the center of a towel and wrap it in a ball twisting it and squeezing the heck out of it. You'll see a lot of water come out and proceed with the recipe. I've made pizza with this technique and it works well.

      Look for a vegan recipe on RUclips. They know how to replace eggs with other ingredients such as China seeds, water and more :) (no, I'm not vegan)

    The cheese is definitely necessary for things to stick together, but you could probably skip the dressing and use whatever else you want for flavoring. Try this recipe for pizza crust, too! Nom nom nom.

    May I ask, what is the texture like for this bread? Does it crumble and fall apart? Is it remotely similar to bread?

      it's not like real bread, but kinda crusty, it did't fall apart it held together well while we were eating it

      its just seasoning, you could use any seasoning you like best i would think, when cauliflower is carmelized, it has just an amazing flavor with just salt pepper and garlic alone

    What about using frozen cauli? The fresh ones are about $4! Would frozen work, if grated and the same recipe?

      Yes, but you'll need to thaw it out and try to squeeze out /all/ moisture. Use a cheesecloth or something like that so you can handle the cauliflower while draining it.

      Yes, frozen cauliflower will work beautifully! Don't forget to microwave till soft.

      It's Italian dressing seasoning in the package.

    To find by far, the BEST way to shred cauliflower, search for "the fastest way to "rice" cauliflower" by BigRedKitchen. Just make sure you drain it very well afterwards. We make pizza crust with the recipe you have here.

    well It makes it a great pizza crust if its thin spread. But as a "bread" it doesent quite work out in terms of taste... :/
