The sugar is there to make a simple syrup. If you use sweetened condensed milk you could get a similar simple syrup effect. Let me know how it turns out if you try it with sweetened condensed milk.
who in their right mind would want a heavily sugared coconut cream? USE real unsweetened coconut cream but use Malibu OR sweetened Pineapple juice. Can't think of anything worse than sugar loaded cococream... Sorry Tastes vary

You can certainly reduce the amount of sugar. This is basically a type of simple syrup so you need some sugar but you can reduce it to taste.
