Another thing I wanted to add: what about simmering all the stuff instead of boiling? I believe if you boil the "tea" too hard it's going to destroy some aroma chemicals instead of extracting them. I think simmering might give you a different result. That's no critique, just a thought :)
the best result would probably come from making a concentrated extract from the aromatics with a neutral alcohol (such as vodka), and using that. This is what "bitters" are in cocktail making - concentrated infused liquors that impart aroma and flavor, needing only a few drops to have an effect
Just on a chemistry note, boiling water never goes above 100 ⁰C, simmering water sits a little below that but not much. Not impossible, but its unlikely compounds would have a strong difference in their decomposition between (lets say) 90-100 ⁰C. Below about 85 degrees id says thats getting more likely (purely hunch in this case, but from a chemistry researcher who spends a lot of his days looking at how various reactions change with temperature). More likely is that more volatile flavour compounds are evaporating off faster, as mentioned in a previous comment. Depends a bit what you count as simmering temperature though, that seems to be quite ambiguous.

The perfect temperature to extract the desired chemical compound depends on each compound I guess. @havocmusicinc has a great point too! Not every molecule is soluble in water. So trying to extract it in alcohol or oil may be more effective. I've watched "Glen and Friends cooking"'s series where he tried to recreate the original Coca Cola recipe, as well as a few other Colas and if I remember correctly he used oil based aromas as well. It's been a few years but I think I'll give it a watch again, highly recommended if you guys are interested. This guy goes great lengths to recreate Pepsi. He also cracked down the KFC chicken recipe, he bought a huge pressurized deep fryer for that lol!
I followed your receipe. The result: Aroma: Tea notes, ripe orange and hay. No traces of the roots. Taste: Mouthwatering sweetness. Ripe and sweet oranges, with a hint of plum and dates. A little bit of pepper and a subtle spiciness. Texture: With 1:4 ratio watery, very thin. Overall: Leaving caffeine and taurine out, its a delicious sweet tea which reminds me of isotonic sport drinks. Without sugar, it would actually make a really healthy drink, which I would suggest for sports or as a diet supplement curing appetite. However- The sugar to extract the orange does not justify its existance. Neither in taste nor in effects. I suggest distilling the oranges for the oils, which need the bitterness for the taste. Leaving sugar out will also help making it richer in taste. Which will also make it easier to reach this sour sparkling punch with the citric acid. What could be better? We
Taurine is actually supposed to have a relaxing effect. It can help with anxiety and lowers blood pressure. It might be added in order to reduce some side effects of the caffeine.

Taurine absolutely does help you relax. (but it is also used in energy production) After several months of bad sleep, trying all kinds of herbal teas, magnesium etc. and nothing really helping, taurine was the game changer. I really hate the stance of "This substance does nothing because it hasn't been proven in our approved study". The FDA probably doesn't allow the claim that water helps with hydration because no study has proven it - and nobody would fund such an idiotic study.
you need to cut the peels off instead of peel them when u do this, these are juicing oranges so they cannot be peeled like regular oranges. they're similar to limes or lemons in the way that they're nearly impossible to peel like a regular orange and it just makes a huge mess

@TheFishinMortician nah I see the vision. I think if you take both the taurine and caffeine out, it's basically a cocktail or a tea. I'd toy with the type of sugar though. Or I'd experiment with the sugar levels. Keeping the vitamin B12 can help long term.
I quit energy drinks about half a year ago. However I think I would have loved to see a monster recipe just without the caffeine. This is awesome keep it up.
Monster had a version without caffeine - "Unleaded", unfortunately it was discontinued, but I also like a taste a lot and was really disappointed that it's not available anymore.

What I've found that gives red bull is flavor is Guarana. If you've have the opportunity to drink Guarana soda, it's basically identical, and Guarana is naturally caffeinated - the color is even similar. I would venture to get that red bull is mostly naturally caffeinated and taurine is added.

It is kind of a ginger ale, but with the licorice and ginsing as well, very "root herbal" but the high caffeine, taurine, and B vitamines make it that "energy drink" making one without the additives and reduced sugar would be nice, the sourness is also there to raise the pH so the acids kill off mold and bacteria, so you could adjust that to taste if you don't plan on it having a really long shelf life.
Taurine actually gives the effect of undoing the "kick" effect of Caffeine. Why not just study the reasons for adding each ingredient first. I bet most of people here don't even know Redbull was formulated by a Thai, not an Austrian. The Austrian businessman was the one who modified the taste to favor westerners more while retaining the formula and introduced it out of Asia.

It literally translates to Red Bull and it was founded in 1975. They even created the Logo l with the 2 bulls. The founder of Red Bull basically stole it 1982when he visited Thailand, as far as I understand.

Lemon citrate medication is what they use for lemon btw. I tested it in my lab taurine burns fat and helps digest it it also helps conver cholesterol into hormones cholesterol can also be converted to thyroid hormones using copper as a catalyst.
You really shouldn't say things like this on an instructional video. Whether it's true or not for most cases, there's going to be a few that fall out of that norm
I wuld say, its very unlikely, that oleo saccharum will go bad easily. A high amount of sugar alone lower the risk of microbial infestation significantly (otherwise honey also wouldn't have that long of a shelf life). And considering, that the orange and lemon skins still have et least some citric acid, it could slightly increase the acidity of the syrup, which also decrease the possibility of getting bad. Therfore its safe to say, that it's very, very unlikely to get microbial infestation. And if something still happens, you probably are able to see, smell or taste it, if something went wrong. In the end, its still almost pure sugar with citrus aroma (and a relatively low water content) 😅
Great video. I learned a lot. I am curious if it really is even remotly close to the taste of an energy drink. Your taste disciption about it somehow led me to belief that. Yet I was very surprised that in theory the ingredients feel so "natural" when you do it yourself. This feels like an recipe that you would encounter somewhere on a bazar when traveling 3rd world countries. Some roots, bullsperm and lots of sugar to sell it like lemonade. haha Now, with sugar breaking down the lemon, I finally understand the concept of lemonade. If you would have simply mixed sugar, water and lemons with eachother, you would not get such an intense taste as if you let the sugar react with the lemon first. How about adding citric acid? (in its synthetic form), to me when I drink Redbull I feel that sour you get on sour sweets, perhaps it could make a difference as opposed to using lemon juice. Also another thing that came into mind is, if instead of using sugar to extract the oil from oranges you boiled the peels with the "tea" (and added sugar, Also not sure how Caffeine, Tourine and B vitamin react when boiled, so maybe you would have to add it after), you could let it boil for quite a while (~15 minutes) which would extract a lot of flavour, the downside of this would be that since you would have to use the infusion itself you would need a water carbonator, but made me wonder how it would taste.
I do not care what people say, RedBull is the best tasting. Ive had the pleasure of tasting some without the caffeine and other additives, and always thought it could be its own drink.
I believe the beer technique you mentioned is a filtering process using finings which are traditionally made using fish guts which basically gets rid of any haze/impurities the beer may have. However New England IPAs are unfiltered making them organic unless you’re using a seaweed based finning which is vegan friendly.

About making your drink clear; When I used to make wine I used to "polish" the completed wine which would result in an ultra clear bright finish. It involved using bentonite clay mixed into the wine then sieving through a cloth mesh for a first pass which would leave a bentonite residue on the cloth, takes about thirty minutes for a gallon. Then sieve a second time through the clay coated cloth and the wine becomes polished, takes several hours for the second process. The results are worth it.. Make sure there are no vinegar flies around and cover the filtration set up for hygiene though. Wine polishing kits are available online.
There’s this one channel that has this series called “Make it or Buy it, where they break down the making of common store bought items (like matcha tea, bread, etc…), and one thing they do (that I really appreciate) is they not only break down the making of the item in question, but also break down the cost, effort, and time needed to make the respective thing. It’s really cool that you were able to make Red Bull, but I can’t help but think things like “man, ginseng is so pricey” or “oh, but I really like (X) flavor”. You’ve listed the ingredients, shown the process, but haven’t discussed the price or whether the drink is worth making at home or not. I haven’t checked the video description at this time, so maybe the prices are listed there and I could just decide for myself if this is worth making, but it’s a short step of effort that would certainly be worth including IMO. Don’t get me wrong, it’s really cool that you were able to make something comparable to the original, and I might just try making it myself… assuming I don’t need to sell my soul to get some ginseng lol.
Would be just as well if anyone left out the licorice root due to the glycyrrhizin content and potential side effects. Especially if someone decides they really like this home brew and intend to make it often.
Nice info, check this out. It’s Lipovitan diluted with carbonated water. Used to get it as a kid in the Asian markets. Twenty plus years later when I tasted my first Red Bull, it was unmistakable. Red Bull stole the recipe

Only if there is no water left. Like crystallized ginger and other "candied" things you get at the grocery store. In the bowl, where he is leeching the water out of the fruit, there is still plenty of water present to keep it liquified. So if he left it in the fridge toooo long, it would get moldy. Same if you were salting cod for baccala or beef for beef jerky. You have to get all the moisture out, otherwise it will spoil. You can see this with authentic parmesean cheese grated from a big cheese wheel (not that junk stuff full of fillers and anti-caking agents in the green bottles in the store). You can store it in your cupboard because of how low the moisture content is. Even though it's cheese, you don't have to refrigerate it.
4:30 "Original Red Bull" looked like the Austrian knock-off. The original Red Bull from Thailand is sweet, with less tartness or bitterness. Quite a different flavour profile but you can tell the family resemblance.

This is so cool. I start work at 5am, so I’m a huge fan of energy drinks…Red Bull makes me gag a bit, so I think the homemade version sounds a bit better, honestly. It looks better, too! I love the idea of playing around with fruit flavors a bit, and customizing it to taste.

A quick reminder, most commercially available citrus nowadays has chemicals and waxes added to the peel to extend shelf life, therefore unless you take steps to remove the chemicals beforehand, they are not safe for consumption.
The ginseng was left whole when you cooked it. Try slicing or crushing the ginseng, to release more compounds. The skin is tough and papery, trapping the good part of ginseng inside.
Redbull has a very exotic note in edibles: animalic. It tastes like the deer musk commonly used in perfumery. What I get in redbull is vanillin, caramel, citrics and this musk as DNA (identity).
Would they use the malic acid and citric acid to extract the peels like you did as well as sugar? Super juice video described the same thing which might account for the taste discrepancy.

Pro tip. Ginseng needs to be put to a boil then simmered for about an hour if you want to fully extract it. I’m sure that’s part of the whole red bull gives you wings thing. It also needs to be cut up, was hard to see if that was done in the video. Might have helped add more medicinal type flavour to the re-creation.
Man I used to love the old Red Bull Cola that they sold for a while. I remember seeing a flyer about it and all the different herbs and spices they used, cola and clove and mustard and all this You should try to recreate that!
I was looking into one of the ingredients because I’m extremely addicted to the point I get migraines and become very bitter without it. It seems one of its ingredients is also an ingredient in industrial glue which may explain the addiction.
I'm actually very curious to know what the flavor is of Yellow (tropical) red bull is because it is my favorite drink flavor but I can't discern exactly what it is besides sour and citrus.
This is yet another reason for me to want to build my nitrogen "resting" box. Keep things at a chill 60f, keep the pressure at 105% or so of the normal ambient PSI but it's 99% nitrogen. Opens from the top to prevent the cold nitrogen "air" from falling out. Then you could give it SEVERAL days without it being quite at the fridge temps. the fact nothing can breath should keep it safe right?

What I've found that gives red bull is flavor is Guarana. If you've have the opportunity to drink Guarana soda, it's basically identical, and Guarana is naturally caffeinated - the color is even similar. I would venture to get that red bull is mostly naturally caffeinated and taurine is added.

It is kind of a ginger ale, but with the licorice and ginsing as well, very "root herbal" but the high caffeine, taurine, and B vitamines make it that "energy drink"
making one without the additives and reduced sugar would be nice, the sourness is also there to raise the pH so the acids kill off mold and bacteria, so you could adjust that to taste if you don't plan on it having a really long shelf life.
Taurine actually gives the effect of undoing the "kick" effect of Caffeine. Why not just study the reasons for adding each ingredient first. I bet most of people here don't even know Redbull was formulated by a Thai, not an Austrian. The Austrian businessman was the one who modified the taste to favor westerners more while retaining the formula and introduced it out of Asia.

It literally translates to Red Bull and it was founded in 1975. They even created the Logo l with the 2 bulls. The founder of Red Bull basically stole it 1982when he visited Thailand, as far as I understand.

You really shouldn't say things like this on an instructional video. Whether it's true or not for most cases, there's going to be a few that fall out of that norm
I wuld say, its very unlikely, that oleo saccharum will go bad easily. A high amount of sugar alone lower the risk of microbial infestation significantly (otherwise honey also wouldn't have that long of a shelf life).
And considering, that the orange and lemon skins still have et least some citric acid, it could slightly increase the acidity of the syrup, which also decrease the possibility of getting bad. Therfore its safe to say, that it's very, very unlikely to get microbial infestation. And if something still happens, you probably are able to see, smell or taste it, if something went wrong.
In the end, its still almost pure sugar with citrus aroma (and a relatively low water content) 😅
Great video. I learned a lot. I am curious if it really is even remotly close to the taste of an energy drink. Your taste disciption about it somehow led me to belief that. Yet I was very surprised that in theory the ingredients feel so "natural" when you do it yourself. This feels like an recipe that you would encounter somewhere on a bazar when traveling 3rd world countries. Some roots, bullsperm and lots of sugar to sell it like lemonade. haha Now, with sugar breaking down the lemon, I finally understand the concept of lemonade. If you would have simply mixed sugar, water and lemons with eachother, you would not get such an intense taste as if you let the sugar react with the lemon first. This can make the great difference in taste. Might seem so obvious, but it still gives me joy to have learned this. Thanks.
How about adding citric acid? (in its synthetic form), to me when I drink Redbull I feel that sour you get on sour sweets, perhaps it could make a difference as opposed to using lemon juice.
Also another thing that came into mind is, if instead of using sugar to extract the oil from oranges you boiled the peels with the "tea" (and added sugar, Also not sure how Caffeine, Tourine and B vitamin react when boiled, so maybe you would have to add it after), you could let it boil for quite a while (~15 minutes) which would extract a lot of flavour, the downside of this would be that since you would have to use the infusion itself you would need a water carbonator, but made me wonder how it would taste.

Well, I don't know how Red Bull tastes in other countries, but in Brazil the taste is basically guaraná. More specifically Guaraná Antárctica.

I believe the beer technique you mentioned is a filtering process using finings which are traditionally made using fish guts which basically gets rid of any haze/impurities the beer may have. However New England IPAs are unfiltered making them organic unless you’re using a seaweed based finning which is vegan friendly.

About making your drink clear; When I used to make wine I used to "polish" the completed wine which would result in an ultra clear bright finish. It involved using bentonite clay mixed into the wine then sieving through a cloth mesh for a first pass which would leave a bentonite residue on the cloth, takes about thirty minutes for a gallon. Then sieve a second time through the clay coated cloth and the wine becomes polished, takes several hours for the second process. The results are worth it.. Make sure there are no vinegar flies around and cover the filtration set up for hygiene though. Wine polishing kits are available online.
There’s this one channel that has this series called “Make it or Buy it, where they break down the making of common store bought items (like matcha tea, bread, etc…), and one thing they do (that I really appreciate) is they not only break down the making of the item in question, but also break down the cost, effort, and time needed to make the respective thing. It’s really cool that you were able to make Red Bull, but I can’t help but think things like “man, ginseng is so pricey” or “oh, but I really like (X) flavor”. You’ve listed the ingredients, shown the process, but haven’t discussed the price or whether the drink is worth making at home or not. I haven’t checked the video description at this time, so maybe the prices are listed there and I could just decide for myself if this is worth making, but it’s a short step of effort that would certainly be worth including IMO. Don’t get me wrong, it’s really cool that you were able to make something comparable to the original, and I might just try making it myself… assuming I don’t need to sell my soul to get some ginseng lol.

Only if there is no water left. Like crystallized ginger and other "candied" things you get at the grocery store. In the bowl, where he is leeching the water out of the fruit, there is still plenty of water present to keep it liquified. So if he left it in the fridge toooo long, it would get moldy.
Same if you were salting cod for baccala or beef for beef jerky. You have to get all the moisture out, otherwise it will spoil. You can see this with authentic parmesean cheese grated from a big cheese wheel (not that junk stuff full of fillers and anti-caking agents in the green bottles in the store). You can store it in your cupboard because of how low the moisture content is. Even though it's cheese, you don't have to refrigerate it.
4:30 "Original Red Bull" looked like the Austrian knock-off. The original Red Bull from Thailand is sweet, with less tartness or bitterness. Quite a different flavour profile but you can tell the family resemblance.

This is so cool. I start work at 5am, so I’m a huge fan of energy drinks…Red Bull makes me gag a bit, so I think the homemade version sounds a bit better, honestly. It looks better, too! I love the idea of playing around with fruit flavors a bit, and customizing it to taste.

Taurine with caffeine has been discussed in a few studies as modulating the cardiovascular effect of caffeine. Not sure if a mechanism was ever found and I don’t remember how strong the effect was observed to be.

I appreciate the science behind why something happens (like the sugar in the peels). Cause I hate doing things in recipes (and life) when I don't know why.
A quick reminder, most commercially available citrus nowadays has chemicals and waxes added to the peel to extend shelf life, therefore unless you take steps to remove the chemicals beforehand, they are not safe for consumption.

Pro tip. Ginseng needs to be put to a boil then simmered for about an hour if you want to fully extract it. I’m sure that’s part of the whole red bull gives you wings thing. It also needs to be cut up, was hard to see if that was done in the video. Might have helped add more medicinal type flavour to the re-creation.

I was looking into one of the ingredients because I’m extremely addicted to the point I get migraines and become very bitter without it. It seems one of its ingredients is also an ingredient in industrial glue which may explain the addiction.

I'm actually very curious to know what the flavor is of Yellow (tropical) red bull is because it is my favorite drink flavor but I can't discern exactly what it is besides sour and citrus.
This is yet another reason for me to want to build my nitrogen "resting" box. Keep things at a chill 60f, keep the pressure at 105% or so of the normal ambient PSI but it's 99% nitrogen. Opens from the top to prevent the cold nitrogen "air" from falling out. Then you could give it SEVERAL days without it being quite at the fridge temps. the fact nothing can breath should keep it safe right?
