As a Mexican American I never thought of adding mustard to lentils, but dear lord these are delicious. Traditionally we serve lentils with fried pork ribs (in small pieces) with a garlic, serrano or jalapeno, and tomato (costilla en chile). I love new recipes that not only taste good, but are also simple and traditional.
I love any food like lentils that will last forever in your kitchen, but are still fresh. It makes it easy to eat healthy knowing you have good food that never goes bad.
I am so happy to see you mentioning that you should not add salt to lentils, beans or any kind of legume early in the cooking process. I see so many recipes on these cooking channels that do not mention that. I learned the hard way many years ago. I don't think my beans ever did get soft.

I prefer these to most other lentils and find they take a little longer to cook than many other varieties. I make a version of this I call Creole Lentils or Cajun Dal which are cooked in an unsalted homemade chicken stock with onion, garlic, and a good golden curry powder and the meat is a good rich Louisiana Cajun Andouille in large chunks. The same dollop of grain mustard, local to Louisiana, Creole Mustard goes atop when serving

Made this tonight. Only change I made was to start with some lardons. I also threw in a couple apple and pork sausages I had along with the smoked gamon steaks. I used a bit of chicken bouillon to season it when it was cooked. 10/10 So easy and simply amazing,
Just a handful of easily obtained, inexpensive ingredients, prepared simply and with a minimum of technique, producing a delicious dinner anyone can make in under an hour (and most of that is hands-off time that can be devoted to other activities). just made this dish with a pork loin on the side. first try was not bad, did not add enough dijon mustard. definitely will make again. thank you for the recipe;so easy
I made this last night. I was a little nervous that it would have a strong mustard flavor. I was pleasantly surprised. The mustard flavor was very subtle. A very nice recipe!

I’m not a chef. I made this recipe today and it’s one of the tastiest french green lentil I’ve had so far. I added a bit of courvoisier cognac not much at the end. Can pork belly be replaced with escolar (butter fish)? Has anyone tried that way? If so how much of butter fish was added as it has a strong flavor?! I tried this recipe last night and it turned out amazingly delicious. I followed this recipe but omitted the pork belly as we are vegan. I used whole red lentils this time, I’ll try it with du puy lentils next time. The aromas generated as soon as soon as this soup started boiling were so enticing. I highly recommend this recipe. Wonderful dish! Add a Frankfurter or Wiener sausage and some Spätzle, and you have the suebian staple meal. I use vinegar instead of mustard, but must (and will) try this version.
I got the highest praise for this meal. Thank you! I used lentil mix (50%), together with bean mix, and chickpeas. That was at hand. It looked and tasted 👌.

Great series of vids! You have reawakened my love of french cookery, after having lost my heart to cucina Italiano. But I have a comment to make about your advice about cooking pulses: it is my experience that adding salt to pulses at the beginning of the cooking process does not result in hard beans/lentils, in fact I soak my pulses in a brine solution to re-hydrate them, rinse, and then cook them WITH salt and believe me you get a much more consistent result, and no ‘burst’ beans. Believe me try it. Keep up the great vids!
Lentils are so delicious. One of my favourite 'lazy' meals is green lentils boiled in mushroom bouillon. Served with a dollop of homemade mayonnaise and a soft-boiled egg. Heavenly!

ollie1471 I’m not sure I can find pork belly either. I think I will use smoked ham hocks and then fry up some bacon and sprinkle it on top at the end.

I use this as a substitute to ground beef in spaghetti sauce and it is a great as a vegetarian sauce, even without tomatoes.
