As a Mexican American I never thought of adding mustard to lentils, but dear lord these are delicious. Traditionally we serve lentils with fried pork ribs (in small pieces) with a garlic, serrano or jalapeno, and tomato (costilla en chile). I love new recipes that not only taste good, but are also simple and traditional.

I am so happy to see you mentioning that you should not add salt to lentils, beans or any kind of legume early in the cooking process. I see so many recipes on these cooking channels that do not mention that. I learned the hard way many years ago. I don't think my beans ever did get soft.

@@FrenchCookingAcademy Often this type is called French Lentils in the U.S. and are sometimes hard to find. I prefer these to most other lentils and find they take a little longer to cook than many other varieties. I make a version of this I call Creole Lentils or Cajun Dal which are cooked in an unsalted homemade chicken stock with onion, garlic, and a good golden curry powder and the meat is a good rich Louisiana Cajun Andouille in large chunks. The same dollop of grain mustard, local to Louisiana, Creole Mustard goes atop when serving

Can pork belly be replaced with escolar (butter fish)? Has anyone tried that way? If so how much of butter fish was added as it has a strong flavor?! Great series of vids! You have reawakened my love of french cookery, after having lost my heart to cucina Italiano. But I have a comment to make about your advice about cooking pulses: it is my experience that adding salt to pulses at the beginning of the cooking process does not result in hard beans/lentils, in fact I soak my pulses in a brine solution to re-hydrate them, rinse, and then cook them WITH salt and believe me you get a much more consistent result, and no ‘burst’ beans. Believe me try it. Keep up the great vids!
