      I've got one question about Bread. Understood about the mechanism and the whole glucose adsorption. But how can you compare that to thousands of years of Mediterranean people consuming only bread (almost) their whole life to survive and even today healthy people in Italia, france, spain..that religiously consume bread every single day. I cant believe that if you do "every" else right in your diet or life and consume bread you are still "destroying" your body.

    I started the 30 day challenge yesterday, 1/5. Ive been diabetic since 1999. I was put on insulin about 2 years later. I am 62 now and feel worse than I ever have.
    I have been working very determinedly to reverse these issues. I came across yor channel on 1/4 andI watched your video on the benefits of cutting sugar out of my diet. It was the motivation and information I needed. I made the commitment on the spot. I have had the pattern to cut sugar and as soon as I start feeling better I allow myself a sugar reward.
    Just prior to being diagnosed I quit smoking cold turkey with a resolve that my life depends on it. I felt that same resolve to quit sugar. On top of that resolve I recieved a Jumpstart this morning with my A1c dropping from 6.8 to 6.1. It is the first time I have been at the normal range since 2003. I am on the edge of control.😊

      Agree..following him for a year….no meds, 100% better diet ( flexitarian: wild pacific salmon 3x / week, grass fed humane dairy…2 eggs daily, full fat milk, scant grass fed cheese, cottage cheese, fruits- mostly berries…some organic vegetables, no
      No processed or fast foods. BP dropped to 115/ 70, weight maintained at 110# ( small 5’ 75 yo Nonnie)

      He does sell his own electrolyte formula, Eulyte. It’s great, I have it and use it when I’m fasting. He knows what he is doing.

If it comes from him, I'm sure it's excellent, but at the same time, don't feel like he is shoving it down our throats to buy anything, which I truly appreciate.

    My mother is diabetic and I've been telling her for years to stop the meds and eat different foods. I'm a chef and a certified dietary manager so I started her a no carb no sugar diet this past monday....its Thursday and she already feels better, less lethargic and more energy. It's also improved her gut health as she also has diverticulitis. 4 days and a difference already. She's 71.

      This worked for my wife and I. Her blood sugar will progressively get better and will reverse diabeties not needing diabetic medicine. Many other good side effect including a loss of weight also. Good luck and good health.

      Hi Joel how did you start? I want to start tomorrow to eat 2 meals no bread or other gluten products, only fresh food, raw nuts, vegetables and cheese, wild fish, fat grass fed meat and chicken. Thanks Yvonne

      Thank you @l33t00r. Repetition is the mother of skill. I'm glad you realize the value of it. First you get exposed to an idea. Then you start understanding it. Then it starts growing on you and finally you own it. Even then it needs reinforcing, because there are so many distractions.😄

    Hi Dr Ekberg, thanks so much for sharing this video with us. I was diagnosed with Hashimoto’s over 10 years ago, and about 15 years ago several thyroid nodules were found and one of them is growing into fairly large size. I had a flare about 10 years ago and was diagnosed with hypothyroidism for a short period of time, after a week in the hospital on a drip, I haven’t been on any medications since as my TSH, T3 and T4 levels are still within the normal range, however, my antibodies have been extremely high.
    I have been suffering with hair loss, dry hair, headaches/migraines after doing sports, tiredness, eczema, depression, and anxiety for years and never even realised it was all related to my Hashimoto’s disease.
    I discovered your channel a couple of years ago, I am so grateful for all the content you made to educate us how our bodies truly work. I have been sharing your videos to my families and friends although hardly anyone appreciated it and they just kept living an unhealthy lifestyle as they always do which frustrates me so much.
    I tried keto diet for a while and then it was sort of discontinued as I had a three months holiday in Europe last year so I was eating loads of carbs and sweets during the trip. After the trip, I haven’t been able to commit to a strict diet again until 3 weeks ago.
    I went to my GP to get blood tests done a while ago and I was told there’s nothing I could do with my high thyroid antibodies, one day my thyroid gland would be completely destroyed and I would have to be on thyroid hormone replacement for the rest of my life. It made me extremely depressed thinking about when that day comes. I knew I had to do something to fight against it.
    Finally, three weeks ago, I was determined to commit to a strict diet and intermittent fasting. I started doing intermittent fasting for 18-20 hours a day without eating and only eating during a 4-6 hours’ period. I cleaned up my fridge and pantry, threw away all the food I am not supposed to eat. I have eliminated all the wheat products, dairies, soy products, sugar, nightshades vegetables, foods contain lectins, etc etc. off my diet. I also stopped drinking black tea and replaced it with matcha green tea.
    I have been eating grass fed beef, pasture raised eggs, free range chicken, wild-caught salmon and prawns, leaf greens, sweet potatoes, bone broth, sauerkraut, I use only EVOO and coconut oil for cooking, I drink a smoothie each day with one banana, one avocado, some chia seeds, hemp seeds, flaxseeds, and organic coconut milk. (I only buy coconut milk/cream with 100% coconut meat extract in it)
    I am extremely proud of myself for keeping this up for almost three weeks now. During these three weeks, I have noticed a lot of positive changes to my body, including less cravings, less hunger, less fatigues, less depression and anxiety, more energy, weight loss, clearer skin etc. my hair loss hasn’t improved but hopefully it would get better soon.
    I have done a lot of research about Hashimoto’s diet. It’s a bit frustrating as apart from not eating soy, gluten, dairy, goitrogenic fruits and vegetables, legumes, sugar, and processed foods,
    I have found all different information regarding which nuts to avoid, which vegetables are good or bad for Hashimoto’s, which made me very confused and not sure whether if I should avoid some of the foods in my current diet or continue eating, such as eggs, almond milk, oat milk, sauerkraut, ginger pickled in apple cider vinegar, bananas, pears, cruciferous vegetables, onions, garlic, hemp seeds, chia seeds, flaxseeds, cocoa powder, buckwheat, matcha green tea etc.
    I was wondering if you could make a video about the proper diet for Hashimoto’s disease with details of which nuts, vegetables, fruits, plant milk, seeds or even meat should be avoided, and also which foods are beneficial to people with Hashimoto’s disease.
    It would be extremely appreciated as your channel is the only reliable source regarding health advice for me or even for all your followers. ❤🙏

      You need to watch Dr Gundry. A lectin free diet is what puts Hashimotos in remission

      Saturated fat is the biggest killer which is why keto diet has the highest incidence of heart attack and stroke

    I am a new watcher (and a fellow Swede), and I must say this is one of the best health channels and coaching I've seen. I've been gradually changing my diet going from five meals per day with tons of carbs to doing 2MAD for the past two years, and I'm never looking back. I thought I was living healthy, but turns out I wasn't at all! Still working on improving my diet, but I'm getting there. Bread is the hardest for me to shake, but I'm eating the heavy loaves with sourdough and rye, no additives. Same with fruit. I have a weakness for raisins, dates and other dried fruit, but now I know that's sugar too and needs to be dropped.
    Anyway, if I could make one request it would be for a video going over the E-additives. There are so many of them, and they are in everything. A list of which are the worst and if some might even be OK would be very helpful! Thank you, Dr. Ekberg and please keep making these videos!

      (1) As a recommendation look into:: Ezekiel Bread made with “no” flour but rather from sprouted wheat instead. I use this brand:: Silver Hills Bakery made from “organic” sprouted wheat. I store it in the freezer frozen and then thaw it out very lightly in the toaster.
      (2) Also, did you know that you should always freeze your Bread or at least keep it cool in the refrigerator. Because, REFRIGERATION for about 12 hours or more AFTER cooking or baking CREATES “Resistant Starches” in high carbohydrate starchy food like Bread, Pasta, Rice, and Potatoes. “Resistant Starches” are not broken down into glucose in the stomach so they have a lower calorie content, because glucose is stored as FAT in the body including the Liver. “Resistant Starches” instead pass through to the large intestine, where they act more like a dietary fibre and can provide all kinds of useful gut benefits. Then reheat this food and eat it. That is why Rice should be refrigerated for at least 12 hours after cooking it to build “Resistant Starches”, then reheat it in the microwave.

      @@martinsvensson6884 → When that subject comes up, such as those on line CGMs, it seems that people just WANT it to be better. My wife and I test our blood sugar most days. We normally freeze bread since we don't eat it often but we do eat a slice when it's fresh from the store. We have both tried to find that difference and simply can't. My wife has normal insulin test response, I'm type2.

      @@themanftheworld8439 if you drink it without any artificial additives. Should be 100% cranberry juice, which in general it is bitter and no sugar in it. It becomes bad when mixed with other juices or sugary water.

    The typical breakfast made me laugh. I was in a hospital and was served a breakfast of orange juice, a banana, sweetened fruit yogurt, pancakes with 2 packets of syrup and coffee with 2 packets of sugar. I calculated the sugar content to be over 103 grams. When I told the hospital dietician about it, she didn't believe me until I showed her the calculations. She asked what I would like the next day and I told her high protein/low carbohydrate. I did get eggs, but also toast with jam, orange juice, a banana, yogurt, and coffee with sugar. I ate the eggs.

      Similar. I asked for the Diabetes Diet Menu.
      The hospital must have been using the “pie plate” meal model, as they had blueberry muffins as an option.
      Hospitals use buillion cubes as a “soup,” but they are salt bomb chemicals.

      Yes my mom unfortunately has been in the hospital for the last 3 months so the hospital is my second home right now. The food in the machines and the cafeteria is shocking. Even the foods the nurses eat really surprises me.

      I spent a few weeks in the hospital last year. The patient menu was really high on muffins,pudding,granola bars and fruit juice etc.

    Just happened to come across this channel and I love it and have shared with some relatives including sons. I’m considered a health nut but I’m so enlightened by Dr Sten!! I too, take a ton of notes and have subscribed. I’m in the medical field and totally impressed by the simplicity of his presentations; anyone can understand the message. Let us all understand that medicine is a business. You have to take care of yourself! Thank you for these great presentations.

    Great program Dr Ekberg. I've been trying to do pretty much what you have said the past 3 months when I found that my sugar was high. I have lost about 16 lb and now have my sugar at around 100. Sometimes a little lower sometimes a little higher. Your teaching will help me to stay on track. I'm assuming you're probably from Sweden. My grandfather's last name was soderberg and he came over in the early 1900s from Sweden. He actually was supposed to come over on the Titanic but got held back because of a baby dedication for his cousin. They ended up going about 2 weeks later after that happened to the Titanic.       I've had saccharine since I was about 12 and now I have changed to Aspartame. I'm in my 70's and I'm fine. I don't eat any fried foods but I do wear clothes or I might frighten people, especially young people 😀

      Worrying, not many people have the funds or not even sold in the stores by them. Nothing but advised eating fish, blueberries, veg and now to find out they are maybe even more harmful. The last year I have therefore been eating mercury and pesticides taking advice on using foods to cure illnesses. The answer is not to eat or don't worry about anything you eat and take medicines to dampen the symptoms and try and enjoy life. At the end of the day we all die anyway.

    I watched a mother the other day at a convenience store blocking the door to soda pops from her son. She was telling him he couldn’t have a coke because it had to much sugar and wasn’t healthy. She told him that he was allowed to have Gatorade.
    People have know clue what they are drinking and eating. Thank you for your videos!

      Exactly! Same thing with so called “diet” sodas, which have a sugar replacement that has a higher Glycemic index -Maltodextrin. All drinks on store shelves r bad. Best to juice on your own.

    I totally agree with your opening statement- Why would anyone eat something that would ruin their health. This is why I won't eat plants anymore. I'm a carnivore and I'm living the best life ever since figuring this out. I haven't been sick in 10 years and naturally lost All of my body fat without trying. I'm a lean, Lion Looking Guy in his 60's. Never going back!

    I feel healthier now at 72 than I did in my mid 60s. I started listening to my care givers and changing my eating habits. The biggest misnomer to me is how nutritionist know you're going to cheat, so they give you allowances in foods you should not eat at all.

    The 2 very best things for your health. Eggs(Pasture Raised, dark yokes) and grass fed red meat. I recently went on Keto, not to lose weight, because I already weigh 175 for 6ft2 But just the feeling you get after eliminating sugar and about 95% of carbs, its absolutely amazing after the first week... The brain fog is gone, and full energy all day. I no longer eat any bread either. But once every 2 weeks, I cheat one time, and either eat my favorite pizza or Rao's pasta with organic red pepper spaghetti sauce. Everyone should try Keto for 1 week, and watch how incredible you feel after getting thru the first few days.

      I’ve been on Keto for 7 months and lost 30 pounds and noticed an improvement in my digestive system. My main objective was to reduce inflammation caused by RA. Unfortunately that hasn’t happened and I didn’t get any of the other benefits most people get when on Keto.

      @@myrtlemaude47 that’s ok. Just reduce slowly over time. Switch to whole grains that take longer to process AND to chew! Once in a while have the sweet treat or pasta or delicious French bread and enjoy! We all know those super healthy eaters and exercisers who have all sorts of illnesses and others who smoke into their 90’s. I have become a believer in 80% clean and 20% splurge. This has kept my weight stable and blood results in normal range.

    Good information.
    About the only thing left on my "top 10" list is the seed oils. But I use butter, lard or bacon fat whenever possible.
    The "keto" lifestyle eliminates and replaces most of the "top 10" foods.

      Seed oils are a killer. Avoid them at all costs. They're everywhere. Use butter, Extra Virgin Oil, coconut oil and avocado oil instead. Chosen Mayo (avocado based) works, never regular mayo sold in stores.

    I'm a zookeeper and whenever we feed our omnivores, the protein portion of their diet is always the food they eat first. They also tend to leave the fruit portion behind. We can learn a lot from animals. The traditional American breakfast has always made me feel poorly. Bring on the eggs!

      My Grandparent's breakfast was egg and bacon and wintertime whole rolled cooked oats. It wasn't given till 11a.m. we had to do our chores first. Us girls had the house to go through, washing laundry and then feed water the chickens and collect their eggs and wash them. The boys feed the pigs and washed down the cows for milking, their day started at 4a.m. After breakfast we worked the kitchen garden. It was a healthier lifestyle. The USA changed all the recommendations for diet in the 60s recommended a more sugar lean diet that my Mom took to heart and basically destroyed our diet.

    I love your videos. I find it so knowledgeable and interesting. I have always struggled with my weight and sugar addiction. Now I am older I want to eat a clean diet. I know people who live at McDonald's and are a bad influence. I know somewhat what is healthy. I don't smoke or drink alcohol. You are a great example of looking fit.     I am diabetic, when first diagnosed I was offered by my GP to put me on Netformin, as I had read that I could reverse the diagnosis by changing ing my diet I told him I would try that first. I loathe white bread and rarely eat it, fruit juice ie bought in supermarkets, I never buy it. I do eat fruit, should be berry fruit but sometimes I also eat other fruits. Sugary cereal never buy it, prefer oatmeal porridge. Fast food only fish and very few chips. Alcohol I rarely drink a small amount as it upsets my stomach, art. Sweeteners never, deep fried food fish and chips only, margarine never after reading what it is made of, only butter now. Energy drinks and soda, never buy them. I did feel very much different by watching my diet and got into the “ normal” range for blood sugars, but my downfall is chocolate and sweets, I’m trying very hard to avoid the confectionary and cakes and biscuits aisles when in the supermarket but it’s not easy.

      Hello Jane, I managed to be able to walk past the bread and cake isles after 90 days by cutting out all sugar, all sweet tastes, and grain carbs, but I had to read alot of food labels on the way. I worked at it, one food stuff at a time, and was surprised that I did not feel that "pull" to buy, while walking through the cake and sweet isles.
      I wish you success on your goals.

    Nutrition in the form of food is most beneficial to your health.
    In’23 my ex’ was in NHS hospital in Staffordshire. I was shocked that for weeks, they gave him tomato soup, (HIGHLY INFLAMMATORY/HIGH in SUGAR) and juice,(WITH SWEETENERS!) hardly anything else at all as he wasn’t allowed a main meal in months. Strange, they were giving it to start with (mushy meat, potato, & some veg). They wouldnt let us try stuff, but did @ the start & son juiced greens which he drank & improved, could move his arm a bit and hand.
    Then as they weren’t giving him any protein or vitamins, they were making the inflammation a lot worse, he went down hill, and deteriorated. We didnt get to take him home as expected.
    I told someone he’s not getting ANYTHING his body needs to live. I told him you need protein and vitamins, even a bit of starch and youre not getting any. Your body cant live without it!
    Absolutely disgusting food in our hospitals anyway even if you CAN HAVE meals. I hardly ate anything in 8 days when i was in. They said youve got to eat. I said get me something healthy and I will. I tried stuff but didnt eat the rubbish. How on earth are you supposed to get well. Or, perhaps thats it.

      It was probably easy to digest though. IV's can sustain you. I lived on just that for months once. It takes a lot of energy to digest whole foods. Not saying the food was great- it wasn't but just pointing this out. They want no issues- they deal with this every day. They probably know real food makes people gassy and vomit. Nutrition can come when you get home.

    I have started following you, and most of what you say makes sense. I am planning on doing the Whole 30 diet for the third time in January, so I know what it’s like to give up sugar-it's not easy.
    The main issue for me is that I travel for work, so I’m forced to eat at restaurants, which is almost impossible to do healthily. Do you have any advice for this?

    I work in a grocery store . Hyper inflation and the cost of white bread tripled. I'm wondering would people eat better if food didn't cost more than a house payment ? And that is white bread . The cost of eating healthy means they would have to live out of their car and fix it from the dash board. There was a kid that use to buy a cart full of healthy foods . He can now afford 1/4 of that cart . He said...I still eat healthy, I just have to not eat for three days due to high cost. Rich get richer and poor eat white bread.

      You can take over inflation due to Joe Biden hundred dollars of groceries for years ago is now over 300 I just cut back my eating a little bit and I tried to concentrate on my main food items to be organic and non-GMO

    Redefining 'food' is critical on a personal level as well as societal. In this video you describe it as 'real food' vs 'fast food'. I distinguish them by calling them food and "food".

      Teaching children how to eat a nutritious diet is a PARENTAL RESPONSIBILITY. Parents need to stop being lazy and pushing their responsibilities onto teachers and schools. We already have more than enough to do! And how about teaching your children proper, kind, and polite behavior, too? Most people these days raise their kids like pets. They feed and clothe them, sit them in front of a screen, and think they’ve done their job. Sad.

      well no, you couldn't do that, because the food industry sells at the institutional level these very products to the school systems and an educated population of school children would be very bad for business.

      I think it’s when and why you drink alcohol or wine. Wine has been drunken in France for years to accompany the meal and may be occasionally drunk in the evening. I think Dr. Ekburg stresses that too. I think it’s when you drink to suppress your worries or depression you begin on the spiral down maybe. An holistic doctor once told me you can nearly always tell a person suffering stress by looking at their face and hands. He said if stress causes these signs on the outside what do you think is happening on the inside?

    i started OMAD and KETO more then a year ago after watching your video, Doctor. Feel great, loosing weight , blood work is amazing. My family doctor is confused:). I am 67 , type 2 diabetic. Thank you Dr. Ekberg!!!!!!!!

      What difference have you seen in your A1C numbers? If you keep it up, you will likely no longer fall in the diabetic category.

      I have nafld because I ate sugar and sweets too much of my life. I’m 5’1& 131#. No alcohol! Now I have issues with my stomach even though I’ve backed way off sugary foods! I’m 82 and no meds so I’m blessed.. but I do have pain and belching and gas occasionally. Any ideas what causes that and what I need to do? Thanks sooo much . Blessings

      We humans have been making bread a long time......I too make my own and add lots of seeds ....a few slices and it fills me up
      Meat is very expensive

    A friend of mine is an alcoholic. I've been warning him for more than a decade about what is coming his way health wise. He drinks 16 bottles of cheap wine every week. He's now in hospital being tested for bowel cancer after he went in to have his piles taken care of, as if that wasn't bad enough. If he doesn't stop he will 100% die from his drinking, no question.

    I had my VA doctor tell me one time that he would rather take a pill and eat what he wants then to change his diet for the good he was overweight as well

      Went to the hospital for a CAC scan. I was amazed at all the overweight doctors and other health care works that were overweight and just looked unhealthy. Even the security guards had lots of extra weight on them.

    Needs to add 2 important things to bread: 1) Eat sourdough bread only and in small portions, as sourdough breaks indigestible proteins (ie gluten). Plus sourdough bread has a much lower glycemic index. 2) Whole grain bread is full of lectins, which damage your intestines. So don't eat it at all.

      Thank you @djmalou. Unless you use raw dairy, it has already been heated, so - not much happens after that. If you can get raw dairy though, it has enzymes and bacteria that helps you digest it. 😄

      ​​​@@drekberg If I cut back on milk I start having bad cramps in my legs at night. If I eat eggs and bacon for breakfast I get constipated. If I eat organic rasin bran cereal with 1/2 of a banana and blue berries everyday I am fine.
