Hey Dee Dee, I understand the salt issue. There are lots of low/no salt seasonings out there. With this recipe, some will help the fats to crisp up and get that golden color. I'm not sure how it would work without using any.

So you're live fire grilling. That's cool, just make sure you have enough distance from the fire to the meat to allow for 20 to 30 minutes between flipping without burning. You'll get that color.
Golden goodness---would've guessed some herb potatoes could live in the pan to absorb that tremendous drip and maybe get some char given the time. I've definitely got to grab one of these racks next time they show up.

Ribs are always a favorite. Pretty interesting on your kettle set up. Always learning from your cooks.
