Today I'm showing you my three favorite vegan recipes I make when I don't really want to cook. Enjoy! 🥰
✹ Recipes ✹
VEGAN EGG ROLL IN A BOWL
16 oz vegan beef style crumbles (can sub crumbled tofu or tempeh)
3-4 cups shredded cabbage (or 14 oz bag coleslaw mix)
1 shredded carrot
1/2 white onion, finely diced
minced garlic, to preference (I used 4 cloves)
1 teaspoon minced or grated ginger (can use ginger paste)
1/4 cup soy sauce
1 tablespoon rice vinegar
1 teaspoon toasted sesame oil
sliced scallions, to garnish
Sauté onion, garlic and ginger in oil over medium-high heat in a nonstick skillet for 3-5 minutes, until onion is translucent.
Add vegan beef or tofu crumbles and pan-fry until browned, a few minutes.
Add in cabbage, carrot, soy sauce, and rice vinegar and stir to distribute. Add 1/2 cup water to the pan, reduce heat to medium-low, cover and allow to steam for about 10 minutes, until cabbage is wilted.
Stir and adjust flavors, adding more soy sauce if you feel it’s necessary. You can also add black pepper or chili paste for some heat. Stir in the toasted sesame oil.
Enjoy as-is or serve over rice or noodles. Top with fresh scallions and enjoy.
SOUTHWESTERN QUINOA SALAD
-1 cup quinoa, thoroughly rinsed
-1 cup water
-1 (15 oz) can black or pinto beans, drained and rinsed
-1 red bell pepper, diced
-2 tablespoons minced red onion
-2 roma tomatoes, diced
-1/2 cup corn (frozen, canned or fresh)
-1/2 cup fresh cilantro, chopped (optional)
-2 tablespoons olive oil
-juice of 1/2 lime
-1 teaspoon chili powder
-1/2 teaspoon smoked paprika
-1 teaspoon ground cumin
-salt and pepper, to preference
-1 tablespoon red wine vinegar or ACV
Cook quinoa in a rice cooker, or prepare just like rice on the stove. (Bring water to a gentle boil, reduce heat to low, cover and steam 15-20 minutes.) Allow to sit for 5 minutes after removing from heat, then fluff with a fork.
To assemble the salad, whisk all dressing ingredients in the bottom of a large mixing bowl, then toss the vegetables and beans to coat. Lastly, fold in the fluffed quinoa. Can be served chilled or lightly warmed over the stove or in the microwave.
ROASTED VEGETABLE ORZO
-1 cup orzo
-1 tablespoon vegan butter/olive oil
-2 cups vegetable broth (I use chicken-style)
Toast orzo over medium-high heat in butter until golden brown. Add vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, until liquid is absorbed. Remove from heat and allow to sit for 5 minutes, then fluff with a fork and enjoy.

Love this so much! Do you have a “simple/minimal” ingredient cook book? Nudge nudge.. lol
Your “don’t want to cook” meals are my “want to cook” meals 🙃
I was thinking the same thing lol
Really? Its just: Cut it, season it, put it in a pan or bowl.
Same 😂
100%
@@heikesiegl2640I’m only on the first recipe and she’s chopped, grated and used a pot and pan to cook the filling and rice. That’s quite a bit of cooking in my opinion.
Hey Sarah, Aunt Colleen. You and your Dad were really the only ones on the Sullivan side of your family who loved to cook. You remind me so much of your sweet dad.❤
I love how these are "lazy day" meals for you but for me would be "putting in effort" meals 😂 I do appreciate the simplicity, cost consciousness, and straightforward instructions. Thanks for these great ideas! xo
Honestly, this is one of the most realistic meal videos for me. I love all these meals and I make them (in some variation) all the time because they're easy and minimal cooking, but still good!
My family gave eight thumbs up to the egg roll in a bowl and asked me to put it on regular rotation, so thank you so much for the recipe. :-)
A no cook meal for me: open a can of black beans--drain. Open a can of corn--drain. Dump into a big bowl. Add hot sauce and eat. Done
The egg roll in a bowl is honestly one of my fave meals at this point - on its own without rice when I want something light. Hella lazy version for me is:
- bag of coleslaw mix
- a burger thawed and mashed and/or whatever tvp/crumble I have on hand
- soy sauce or liquid aminos
- ginger garlic paste (my store sells a jar with both in one. Miracles do happen)
- and a load of sriracha
Thank you for this Sarah so much… I’ve been struggling to make meals at home when I’m just so not in the mood to cook and do dishes especially
I'm going to try the egg roll bowl but with lentils as the protein. ❤
Hey there! Loving your video on easy peasy healthy meals, especially the vegan goodness! 😄 Those lazy days hit us all, but your budget-friendly ideas got me inspired to whip up something tasty without the hassle. Keep those plant-based gems coming! 🌱🍴
I'm the opposite! I hate chopping veggies but I love mixing all the ingredients in a pot to see everything come together and the smells of the flavors lol.
To chop veggies, I usually just throw them in a food processor and make like... veg slop. It sounds gross but I loooove it.
Same! I hate chopping, so I toss veggies into my food processor. Or, I buy them chopped in bags.
I don't like to cook but after binging on your videos I tried the egg roll from this video and the butternut squash and carrot soup from another of your video. Not only I enjoyed cooking but both were very good 🙌🙌🙌
That Egg Roll In A Bowl has me salivating!!! Will definitely be making this for dinner. Amazing recipes as always x
egg roll in a bowl is DEF happening this week for me! Cheers from Canada.
Awsome ideas, Sarah! Whenever I am not in the mood of standing in front of the stove I let the oven do most of the work like in your last recipe 😅
I’m definitely going to try that quinoa black bean mix ☺️
I lreally like your taste tests/vlogs with Eric, please do more!
Because I am soooooo cheap, I seldom eat vegan hamburger. I use 1/2 bulgur and 1/2 TVP, soak in broth for 15 min. Meanwhile sauté an onion til it starts browning, add the bulgar/TVP mix and sauté until the liquid is absorbed. Do not cook till completely dry or the bulgar will harden. Use in any dish asking for 'vegan hamburger crumbles'. It's yummy and filling.
I make a similar dish to the first one a lot! With beyond beef, and minus the carrots and scallions. It is sooo tasty 🤤
These look amazing and my tummy is now growling wanting to eat them all!!
Everything looks delicious
Everything looks great! I especially want the egg role in a bowl!
I’m making this thanks
I don’t know where to start! They all look amazing ❤
Will try to make the first one today thx😊
These recipes are to die for. Think this is my all-time fave video.
Meals for days I can't be bothered to cook are actually what I need now so thanks Sarah for sharing this awesome video with yummy 😋 recipes. Love 🥰 the video and love 💕 Sarah & ❤ Eric.
Great video Sarah! That southwestern quinoa bowl looks like it would solve all my life problems 😍🤤
Thank you so much for this video. The egg roll in a bowl recipe is amazing; super easy, uses cheap vegetables, super healthy. It is on permanent rotation in my home, this week we actually ate it three days. I make it with crumbled tofu (made into ground/mince) which is much more affordable where I live. Have added an extra vegetable if I need to use it up (asparagus, very small broccoli florets, red pepper strips). Have sometimes used a bit of a Thai or Chinese or Korean sauce (tom yum, black pepper sauce, gochuchang) as well. We eat it alone, as a big bowl of veggies, or sometimes with udon or spaghetti.
Anyone know what temperature to cook veggies in the over for? And how long??
That was SO HELPFUL!
these recipes are great! Thanks so much Sarah.
All of the meals look delicious!
Great vidéo ! Thank you Sarah
Great ideas! I think I am going to make the egg roll in a bowl recipe!
I am definitely going to try this
so good. just solid recipes that seem like they'd store well too.
I can't wait to try these! My partner and I love your recipes
I watch you for your personality so I dont watch food related videos but I'd love if you posted vlogs every now and again ♡
Thanks 4 the inspiration! I'm doing the first dish today! :)
Delicious vegan meals at home.
Loved the video! I've made variations of these over the years and I love the way you made a lot of these. Looking forward to next weeks meal prep! What kind of cookware is that?
I love how calming & smooth your voice & presence are
Awesome, live watching vegan cooking.. Im nkt vegan but I never really liked meat much, and am trying to change my diet to more vegan/vegetarian options, just hatd for me to fund things that'd are tasty too me.. These gave me some great ideas ty.

Wow! I want to make all 3! So so yummy looking!
I want to try the quinoa one. I had no idea that you could cook quinoa in a rice cooker. I need a recipe.

Those all look so amazing. I can’t wait to try them. Thank you for your amazing videos.
You are so welcome!
your voice... and these recipes.. omg so relaxing and delicious all at the same time
So good! Thanks
Maillard effect/caramelization happens when veggies are single layered without touching. Otherwise, food steams, fwiw.
The orzo dish looks yum. TQ for the recipe
Walnut meat is a great substitute for ground beef
If now we eat aqua faba, why do we rinse the chickpeas?
Prior to aqua faba (the liquid that chickpeas are canned in) was rinsed because of the sodium content of the liquid. We were told to 'dump it' and then rinse the beans well.
But if the sodium is still a concern, then why is aqua faba promoted as something we should now consume?
Thanks for any insight to help me work through this, lol.
😂
Keep it up, Sarah!!! You rock!!!!!!
All this looks so amazing
❤❤❤❤
Trying to eat more veggies so this is perfect. I’m not vegan so I’ll just add meat to these recipies and I’m already knowin it’s gonna be good!
Hi Sarah I have some questions for you like I’m very interested in this ritual symbiotic vitamin but I’m wondering I don’t eat vegan I’ve been thinking about it but I don’t as of now but will these be beneficial to me even if I don’t eat vegan because I’m really interested in purchasing them and seeing how they work. And your comments because I didn’t catch the code I’ll try to play it back again but could you remind me in the comments what your code is for the symbiotic because I’ll use your code to please get back to me thank you
Lovely video. Thank you for sharing
great recipe! Thanks 🤗
Hey thx you so much delicious easy to prepare
I’m new and you Chanel
New vegan
So glad 🥰 that I found you. Thx
❤❤❤
When i dont want to cook i roast a pile of veggies, lol. Your recipes are wonderful, cant wait to try them out. Big thankyou, i needed some new ideas. 😊 I don't mind cooking, its the clean up that sucks lol
Ciao Sarah and many greetings from Brunswick in Germany.. personally i live as a vegetarian again, since last friday 🙂 and thank you for your videos..i really like them.
Love this! Will you make a “simple/minimal ingredient” cookbook?
Cough. Cough. Nudge. Nudge. 😊
i love doing the bag of cole slaw route, otherwise i end up having way more cabbage than i know how to use
3:48 is rinsing diced onions a thing?
It takes out some of the raw bite of the onion!
@@SarahsVeganKitchen I didn't know that, thank you!
These look delicious although I’d say anything with that much chopping isn’t a don’t want to cook meal for me. Nevertheless definitely giving me summer meal inspiration!
Great recipes but goodness, that is a lot of prep for someone not wanting to cook!
I made a quinoa salad like that once to take with me when I was working in the field. Unfortunately, the onions or something went bad really quickly and it stunk up my hotel room really bad! Lucky that my roommate was smell blind! Lol 😂
Very healthy and delicious food 💜🧡💚💙💜💚🧡❤️
These recipes all look delicious (as always!) but I don't think they're a very good representation of "don't want to cook" meals as they do still involve a fair bit of prep. As someone who enjoys cooking and finds chopping meditative too, this wouldn't bother me, but usually when people don't want to cook, it means they really have no energy for chopping/stirring and just want to dump everything in a pan and walk away. Maybe a better description in future would be "hands-off" recipes or something similar?
Great video
The quinoa salad looks like it would also be such a good dip with tortilla chips for a snack!
✨💜✨
Why do you rinse the chopped onion?
Love your vids so much
I've seen so many people rinsing their raw onions recently. Any specific reason you do this?
did you just rinse onions?
Thank you. I dislike cooking all the time
👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏
These look a lot like cooking to Me. They look delicious but when I don’t want to cook, I am not chopping or steaming anything
Thanks.. my vegans friend come to our house.. I'm very worried 😃😃what I will make.. thanks again for sharing..
I've been plant based for 10 years and I feel so sad that I only just found your channel
Every vegan and vegetarian should take at least every second day early in the morning on an empty stomach 1 tablespoon (= 15 ml) castor oil in order to prevent an intestinal blockage, for in the case that you will eat a lot of fruits or vegetables your large intestine will be really filled and you will remark this one occasionally unpleasant, this especially during the night. In this case it will be very helpfull to take your dosage castor oil in good time.
Cool - but, is *this* what you make when you _don't_ have power to cook??? 😂
Ehhh for me it’s the prep and chopping veggies vs actually cooking that’s a pain
Bro im litteraly drunk stop the fucking adds i wanna eat
Being vegan you really get burnt out on cooking unless you just eat canned beans and raw veggies all the time. 😅 why is it so much work to be healthy
That’s a lot of work and ingredients for times you don’t want to cook…..!!!
Your lazy meals are my high effort meals as a depressed person. Please use different words like “quick”, “easy”, “simple”. 🖤
She says "I, personally".
@@adventureexe6032 Not in the thumbnail.
@@julietteferrars3097isn’t it redundant to say that? Obviously all of these meals are personal to her. I agree that these are high effort to me, but it goes without saying that she’s sharing a subjective opinion about the simplicity
ONIONS ARE PURPLE NOT RED
Are you vegan
Microwave it s not healthy
total starvation, pls stop

Sriracha sounds so good in that actually wow
