Today I'm showing you my three favorite vegan recipes I make when I don't really want to cook. Enjoy! 🥰
    ✹ Recipes ✹
VEGAN EGG ROLL IN A BOWL
16 oz vegan beef style crumbles (can sub crumbled tofu or tempeh)
3-4 cups shredded cabbage (or 14 oz bag coleslaw mix)
    1 shredded carrot
    1/2 white onion, finely diced
minced garlic, to preference (I used 4 cloves)
1 teaspoon minced or grated ginger (can use ginger paste)
    1/4 cup soy sauce
    1 tablespoon rice vinegar
    1 teaspoon toasted sesame oil
    sliced scallions, to garnish
Sauté onion, garlic and ginger in oil over medium-high heat in a nonstick skillet for 3-5 minutes, until onion is translucent.
Add vegan beef or tofu crumbles and pan-fry until browned, a few minutes.
Add in cabbage, carrot, soy sauce, and rice vinegar and stir to distribute. Add 1/2 cup water to the pan, reduce heat to medium-low, cover and allow to steam for about 10 minutes, until cabbage is wilted.
Stir and adjust flavors, adding more soy sauce if you feel it’s necessary. You can also add black pepper or chili paste for some heat. Stir in the toasted sesame oil.
Enjoy as-is or serve over rice or noodles. Top with fresh scallions and enjoy.
    SOUTHWESTERN QUINOA SALAD
    -1 cup quinoa, thoroughly rinsed
    -1 cup water
-1 (15 oz) can black or pinto beans, drained and rinsed
    -1 red bell pepper, diced
    -2 tablespoons minced red onion
    -2 roma tomatoes, diced
-1/2 cup corn (frozen, canned or fresh)
-1/2 cup fresh cilantro, chopped (optional)
    -2 tablespoons olive oil
    -juice of 1/2 lime
    -1 teaspoon chili powder
    -1/2 teaspoon smoked paprika
    -1 teaspoon ground cumin
    -salt and pepper, to preference
-1 tablespoon red wine vinegar or ACV
Cook quinoa in a rice cooker, or prepare just like rice on the stove. (Bring water to a gentle boil, reduce heat to low, cover and steam 15-20 minutes.) Allow to sit for 5 minutes after removing from heat, then fluff with a fork.
To assemble the salad, whisk all dressing ingredients in the bottom of a large mixing bowl, then toss the vegetables and beans to coat. Lastly, fold in the fluffed quinoa. Can be served chilled or lightly warmed over the stove or in the microwave.
    ROASTED VEGETABLE ORZO
    -1 cup orzo
    -1 tablespoon vegan butter/olive oil
    -2 cups vegetable broth (I use chicken-style)
Toast orzo over medium-high heat in butter until golden brown. Add vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, until liquid is absorbed. Remove from heat and allow to sit for 5 minutes, then fluff with a fork and enjoy.

The egg roll in a bowl is honestly one of my fave meals at this point - on its own without rice when I want something light. Hella lazy version for me is:
    - bag of coleslaw mix
    - a burger thawed and mashed and/or whatever tvp/crumble I have on hand
    - soy sauce or liquid aminos
    - ginger garlic paste (my store sells a jar with both in one. Miracles do happen)
    - and a load of sriracha

I'm the opposite! I hate chopping veggies but I love mixing all the ingredients in a pot to see everything come together and the smells of the flavors lol.
To chop veggies, I usually just throw them in a food processor and make like... veg slop. It sounds gross but I loooove it.

Because I am soooooo cheap, I seldom eat vegan hamburger. I use 1/2 bulgur and 1/2 TVP, soak in broth for 15 min. Meanwhile sauté an onion til it starts browning, add the bulgar/TVP mix and sauté until the liquid is absorbed. Do not cook till completely dry or the bulgar will harden. Use in any dish asking for 'vegan hamburger crumbles'. It's yummy and filling.

Thank you so much for this video. The egg roll in a bowl recipe is amazing; super easy, uses cheap vegetables, super healthy. It is on permanent rotation in my home, this week we actually ate it three days. I make it with crumbled tofu (made into ground/mince) which is much more affordable where I live. Have added an extra vegetable if I need to use it up (asparagus, very small broccoli florets, red pepper strips). Have sometimes used a bit of a Thai or Chinese or Korean sauce (tom yum, black pepper sauce, gochuchang) as well. We eat it alone, as a big bowl of veggies, or sometimes with udon or spaghetti.

If now we eat aqua faba, why do we rinse the chickpeas?
Prior to aqua faba (the liquid that chickpeas are canned in) was rinsed because of the sodium content of the liquid. We were told to 'dump it' and then rinse the beans well.
But if the sodium is still a concern, then why is aqua faba promoted as something we should now consume?
Thanks for any insight to help me work through this, lol.

These recipes all look delicious (as always!) but I don't think they're a very good representation of "don't want to cook" meals as they do still involve a fair bit of prep. As someone who enjoys cooking and finds chopping meditative too, this wouldn't bother me, but usually when people don't want to cook, it means they really have no energy for chopping/stirring and just want to dump everything in a pan and walk away. Maybe a better description in future would be "hands-off" recipes or something similar?

Every vegan and vegetarian should take at least every second day early in the morning on an empty stomach 1 tablespoon (= 15 ml) castor oil in order to prevent an intestinal blockage, for in the case that you will eat a lot of fruits or vegetables your large intestine will be really filled and you will remark this one occasionally unpleasant, this especially during the night. In this case it will be very helpfull to take your dosage castor oil in good time.
