Even in cameroon we don't add tomato, ginger garlic onion. This is my tradition meal. We put only traditional spices and they aren't fat. They are very tiny. Maybe this is her method. I have never seen this before.
The reason one puts tomatoes is just for that extra nutrient. If not its just cocoyams and leaves. People are just trying to reinvent things which is not a bad thing. It doesn't mean that she doesn't know how to cook ekwang. For those saying its a Calabar dish, why are some Africans so ignorant? The fact that they haven't travelled to different countries, can't they just learn? It's just like people say jellof rice is Nigerian. It's originally from Senegal or Gambia. Other African countries because of migration just tailored it to their environment. People should simply learn to expand their horizon. Different people do things in different ways so we should learn to appreciate others. Take what you want to take and leave the rest, there is no hard and fast rule. The fact that you can talk faster and louder about your own doesn't mean it is the best.
Please can you tell me where you got the pot from? The size and what material was used for making it. I love the fact that it is very wide. Great job though.
Were there little particles of cocoyams that were not completely pureed. Coz I bought the exact juicer seasoning angels had but I got some particles in it and I ended up doing everything all over again with a blender.

How many countries have you travelled to? Different dishes are cooked in different ways in different African countries. Perhaps you need to get a shock that jellof is not originally Nigeria. It came from Gambia and Senegal. Check the way they cook their Jollof also.

What if i put tomate,ginger,garlic,onion in yellow soup/achu ? How will it taste like ? Don't disrespect the traditional meal of other people. Ekwang spices are :Country onion, crayfish,bush pepper,3 corner,pepper.Thats all

Check in african shop, here in the hague african shops sell the coco from time to time.
Try Asian shops especially Indian grocery you will find macabo.
And you can use spinach leaves too
