Duros preparados : we use pico de gallo, avocado, sour cream or refried beans as the base, cabbage, the cueritos, lime and either homemade salsa or valentina
I rub the ends of my cucumbers too, zucchini also. It’s some my mother and grandmother did. I skipped the step only once to test if it really made any difference. It was subtle but detectable so I’ve stuck with it ever since. I had a girlfriend who later explained some of the science to me. When you first pierce the flesh of those particular vegetables, they start to oxidize immediately and that oxidation travels fast, faster than an avocado or an apple or potato. By rubbing the ends, the oxidation slows down considerably. Unlike other vegetables that discolor when they oxidize, cucumber just turns bitter. You can counteract the effect with seasoning, especially salt which draws out the moisture and protects the flesh or sweetness like mirin or even sugar to just alter the flavor profile. But this is the wisdom of the ages passed down by generations. It isn’t just superstition or ritual. There really is something to it. Sorry for the long comment. Re: rubbing cucumber end to remove bitterness... My mom taught me that 5 decades ago and I always wondered did it really work. Yesterday, I watched a grandmother in Sri Lanka do the very same thing! I think there really must be something to it for the oral tradition to be so prevalent across so many cultures for such a long time. ❤️

Made this on the first day of the new year and it was awesome! Only changes I made was to add thinly sliced sirloin steak which I seasoned with taco seasoning, then chopped fine. Looking forward to making a seafood version of this snack. Will definitely be trying your other recipes! Happy I came across you channel.
