    I was born on a ranch 40 miles south of Sonora in '71. There is no taco blasphemy in my opinion. There's what you can eat off a truck bed or a 5020 so you stop being hungry and then there's what you eat at the dinner table. If I got migas and I need to keep working, then shovel that greatness into a flour torilla!

    I worked in Crane Texas for a few years back in the 70's and early 80's and where I met my late wife.
    I miss the Pecos melons and my wife.
    Probably the very best in the country.
    Thanks for bringing back good memories mi amigo.
    I make migas quite often.

      I was born in Monahans a very long time ago, I miss those melons as well, and I actually mentioned them to him a couple of weeks ago. I’m in N Texas now and this year I didn’t buy a cantaloupe or watermelon because I’m just tired of being so disappointed in the quality. I remember going out to Coyanosa and we could pick our own cantaloupes and fill a grocery bag for 50 cents. I was highly allergic to those little fuzzy things growing on the vines, would get home with my arms and feet totally covered in a red itchy rash.
      In spite of that, it was fun seeing how many melons we could get in a bag.

    So Cal born & raised, never been to Texas but I grew up on migas & carne gisada. Mom was from Alice TX & Dad was from Donna. My wife is from Italy & she'll often ask me to make migas for her, she's hooked. Thanks Arnie for the awesome content...I can't make migas as good as my mom or grandma lol

    Mexican/Tex-Mex is so localized. I grew up in San Antonio and have roots in South-Central Texas. The migas I learned to make are done in one pan. Corn tortillas cut or torn up in to prices, cooked in butter, before they get crispy and then add the eggs.

      I like to fry up some chorizo first, then the tortillas to let the chorizo oil season them. Then eggs and cheese. Man, now I gotta go make!

    Migas takes me back to my childhood. The woman that took care of me as a child used to make it. It's so good.
    Right now I'm actually making the chili con carne recipe from Tasting History using some beef from a Zebu my friend killed.

    Man....migas! I always thought it was just a local chicano breakfast that no one else ate but Mexicans in our town Saginaw, MI.
    Then I grew up a little more and realized it was a huge Texas thing. And we have a huge from Texas origin there. So, we eat that delicious Tex-Mex style Mexican food that blows a lot of other Mexican food away flavor wise and we like it saucy and cheesy there too!
    My wife's Puerto Rican and I changed her life breakfast wise when we introduced her to Migas con salsa and Sunday morning Barbacoa tacos with sliced avacado! Got the side eye on a taco for breakfast.....till that first bite! Lol!
    Love the throwback breakfast!

    hahah yes I do.. so delish.. i remember my dad making migas.. if we did not have corn tortillas he would use his favorite FRITOS.. omg.. I make it like that too because my husband loves Fritos..lol.. but I like it with fried corn tortillas, onion, tomato and jalapenos in a homemade flour tortilla..

    Now I know after all the years. The Mexicans that work for me for years, others in there family have the Taco trucks where we worked. Fed us breakfast and lunch. I remember eating that as a taco. So good. I'm making it tomorrow morning but with some leftovers pork chops.

    I'm from McAllen, and I have been making and eating (and loving) migas since I learned to cook. I recently visited a vegetarian restaurant in Frederick, MD called Cafe Nola, and imagine my surprise when I saw migas on the menu. I had to try them, and I have to say, when I took that first bite, I knew I was eating some of the best migas I ever had. What a pleasant surprise. It made my day.

    My grandma always called it migas so I did too. Everybody tells me it's chilaquillas. I still call it migas!!!! Love ur content man!!!!

      Chillaquilles are with full-size chips simmered in adobo sauce with fried eggs on top. 2 main differences

    Our TEXMEX recipes are our favorite and I love that you are sharing how you both prefer your MIGAS at home. There's no way we aren't moving back to South Texas soon. The West Coast makes nothing as good as true TEXMEX for sure brother. Haters gonna hate. But that's truth!

    Very nice meal. Nice recipe. Nothing beats a seasoned iron skillet. By the way. Mine are over a 150 years old. My great grandmothers. From Poland. My family Mexican, Cherokee, and European. Me, a kitchen manager, in a mexican restaurant for awhile. I can make masa flour tortillas, by hand. Better than store bought. I add a little sprinkle of sugar. Just a difference. Learned that over 50 years ago.

    As a Mercedes girl…. I didn’t discover migas until I moved to Austin (La Reyna). One of my all-time favorite dishes. Then moving on to Arizona found many different influences on Mexican food (New Mexico, Mexico & Native American). Arnie you are right…. ain’t no wrong way. It’s what you want & how you like it. Regionality plays a huge role in cuisine. As does necessity. Yep…so if I wanted migas….it was DIY. And yes, one day I made a taco filled with migas. Never knew anyone else who did so. Necessity. Now back in Texas (north) my only complaint is lack of fresh green chiles. Road trip to New Mexico for Hatch & Colorado for pueblos. Love your channel!

    My all time favorite Mexican food breakfast! If I could eat it every day I would. I’m 66 and I ate it for the first time 3 years ago. I feel so cheated that I didn’t know about this delicious meal before then. Now I have to make me some tomorrow morning. And yes, the homemade flour tortilla is a must have with these! And of course, your delicious breakfast salsa.

    Thank you thank you so much for all these videos ❤ I remember my bio dad making this amazing food all the time in New Mexico before he and my mom separated when I was 3 it was a part of his culture when he was young (my grandparents on his side were Mexican immigrants rip to them) I am now having to learn how to cook this wonderful food from mine and his childhood on my own my mom and grandma are white and really don’t know how to make Mexican food like he did and I haven’t seen him in person visit since I was 6 we call but it’s hard to teach your daughter to cook over video call I live in Wyoming and him in New Mexico and I hope next time I visit my moms sister down there I can see him❤️💔

    I eat migas ( crunchy) with flour tortillas all the time lol. I like to throw in the miga chips in 1st then the raw egg. This allows the egg to stick to the migas. Cooked in high heat and constantly folding the ingredients together. This way, when you eat it you always have eggs with the tmigas and they don't separate. So every bite has egg.

    I've been working the oilfields in Southwest Texas for a few years now and LOVE the Tex-Mex restaurants in the area. When I go back home to Missouri, I like to try to recreate the dishes I've tried. Your channel popped up on my feed and I immediately subscribed. Awesome Migas recipe.     If I could like this video thousand times I would. I love this video because I did the same thing when I was a kid. My dad side of the family is Mexican so I can remember either going to Mexico or having breakfast at home we would make eggs. I would cut up the corn tortillas and fry them first and it made the best breakfast ever. Bringing back good memories man!!!😊

    This is such a crazy coincidence for me! I've been on a strict diet for two weeks and have just been eating eggs with homemade salsas for dinner. Just this Monday I started getting tired of the eggs because there is no texture, so I cut up some corn tortillas and put them in the air fryer to crisp them up, then I mixed them in with the eggs as they were cooking, and I've been doing that all week. I never even knew that was a thing until I saw this! 😁

    I used to have no idea that migas were such a localized food. It was only when I moved away that I realized what a hidden gem this dish is. I still make it for my family, and love to throw in whatever leftovers I have in my fridge. I usually cheat and just use bagged tortilla chips. It's a great way to use up the little bits at the bottom of the bag.

      In a pinch regular Fritos corn chips work just fine.
      I live in Arizona so no problem getting corn tortillas, but have to admit Fritos have been used on a camping trip or two with canned Herdez salsa on the side.

      I tend to do "migas" where I pan fry some corn tortillas in butter before I toss my eggs in. They don't get as crispy, but they taste good just the same.

    Ooooo I've never deep fried the tortillas like that for migas, just chilaquiles. I usually shallow fry them in a skillet with onions until browned and then scramble the eggs in.
    I'll have to try this method too!

      Same here and I make a few batches ahead of time put in a ziplock lined with a paper towel. Makes for a quick and easy meal.

    I have made a few Batches of your beans…. Oh man soooo good.
    This last batch I added a bit more hickory bacon and added a small amount of diced carrots.
    BAM. Best bean & bacon soup ever.

    I cut up my corn tortsfry them with a little cooking oil in a non stick pan with a little onion and when I see good color on the torts I add the egg because I want the egg to stick to as much of the torts as possible. I also use cheese sometimes but a mexican blend and then normally eat papas fritas with them.

    Hey der! Watching you fry the migas reminded me of a recipe my mother used to make: Texas Frito pie. I didn't realize that Frito chips are basically migas! Good because the price of chips is cray cray these days! Writing this from Flathead Lake, Montana but I will be back in Texas for the winter!     I recently tried Migas... I used 2 tortillas, just ripped w hands, fried in frying pan w some oil & butter... Then added eggs abd scrambled em in, added shredded cheese & Verde sauce.. Was freaking delicious.

    Your migas taco reminds me when I was a teenager working at Don Carlos Mexican restaurant in Corpus waaay back in the early 90s. Whatever fits in a taco is fare game! 😂

    I am from Aguascalientes Mexico. I am not sure if this concept existed in the times of your dad but, yes in some states of Mexico, we make tortas de tamal,.tota de chilaquiles, torta de enchiladas, etc. I have eaten tacos de fideo. So I am sure taco de migas is also as delicious. Thanks for your recipe.

    When we get our bushels of roasted green chili, we have a big gathering to peel and freeze the peppers for year round access. Migas with fresh roasted Mirasol peppers onion and eggs and calabasitas with zuchinni corn and peppers. Fine eating on those days.

    No manches! I've been making this for over 30 years. First time I had it was on the rachito as a kid using old tortillas and fresh eggs. I didn't know this dish had a name until recently. When I make it, I let some of the tortillas be limp so they better absorb the egg. I also add the tortillas at the very beginning, turning everything off when it's 3/4 done. I then add cheese, diced onions, salsa, crema and cover it for about 10 mins so the cheese melts and the eggs just cook. I'll have to try it as a burrito, I'm sure its fire!

    My family moved to California’s Central Valley from south Texas in the 60’s to work the fields. They brought tex mex cuisine with them so I grew up eating migas every Sunday morning. I was shocked when most of my other Mexican friends whose family had either came from Mexico or had always been in California didn’t know what they were. This video brought back a lot of happy childhood memories for me thank you.

    I didn't know these were called migas. My mom always made them for breakfast whenever we had some left over tortillas. I might be biased here too but Salvadorian tortillas are where its at!

    Mexican here; I do migas on a flour tortilla! Salsa, pickled onions, jalapenos and a bit or crema!

    best way to eat migas con huevo is in a gordita with a migas con huevo y queso taco on the side, with a plate of migas a la mexicana with beans and papas. could eat it every day!

    Pecos Texas, my buddy I grew up with his parents lived there and he goes back each year in Sept for some hunting. I have never been there but it was fun to hear you say you grew up there. I bet your families know each other. I will argue that we have some of the best tacos in EAST TEXAS hahaha, Love it and just messing with you sir.

    I'm a bread guy, no matter what kind. I have been known to make a sandwich with 2 slices of left over pizza. Bread, no matter what, can be stuffed, or topped with whatever you have!

    Arnie, don't know if you've done this one yet...? Milanesa de res con blanquillos con llema.
    2 sunny-side-up eggs, with a breaded Mexican chicken fried steak. Its a favorite in Nuevo Leon along with Machacado con huevo. Also show folks how a simple guacamole doesn't need to have a damn vegetable salad in it to be delicious. Just 1 Serrano chile in the molcajete, ground-up, then the avocado. Sal, and a squeeze of fresh lime.

    Im 44yo from San Antonio. My whole life ive been putting my enchiladas into a flour taco w rice and beans, its the only way i eat any enchilada plate at restaurants, You get 2 tacos per enchilada you order. My Fav is Mi Tierras baby! lol
