Along with all these other great suggestions, you might also try storing the cleaned scallions in a damp paper towel inside a baggie. I always cut off the roots before bagging them. Then you can put the roots in water for a few days to sprout and plant for more green onions if you want to be a little extra.

Migas is one of those dishes that I wish more people knew about. I make it for my family when I visit for holidays and everyone loves it. I will usually be lazy and use salsa rather than the pepper and onion chopping and sauteeing. Eggs, tortilla chips, salsa. That's all you need. But cheese and other accouterment are very welcome.
For real this guy's great. He knows so much more than he's saying but dumbs it down enough that I feel I could cook most of what he's making. Going to try some of these Migas mañana!

I just love how many styles of cooking you seem to love and display. I learned to cook from all of Gordon Ramsay’s instructional videos, but really haven’t watched many cooking vids since then until now, and I’ve been binging on your vids and trying to make some of them which turn out great. Your getting me almost to the point of trying Chinese or Asian cooking. I’ve always been psyched out by the unfamiliar ingredients and unfamiliar methods compared to the basic French stuff that learned from Ramsay.
The loudness of the chewing and the little grunt of deliciousness at the end of these late night videos in particular always gets me. 😝 I guess it’s just the GoPro, but man, it sounds like there’s a boom mic in your mouth. Really sells the moment.

I like the mini-trashcan on the countertop, that's a good idea. I love keeping my cooking/cutting area free from clutter and cuttings, and it beats walking back and fourth between the cutting board and the trash can.

This is an incredible dish to make, and extremely cheap. Back when I was in college I used to buy 2 pounds of corn tortillas, eggs, onions and vegetables for about 3 dollars. I would fry the tortillas and break them up and in the same oil throw in the eggs with the vegetables. Could do like 3 days or more worth of meals from that, I sometimes added deseeded tomatoes, and always had a habanero, serrano, tomatillo and avocado sauce I made. I also always had black beans in my refrigerator because it was soo cheap. 2 pounds of uncooked beans could last me like 2 weeks lol. Good times

This is what I often make for my three year old in the morning because it contains currently everything savory on earth that he loves, eggs, tortillas and I always throw in beans. Literally I have a child whose diet is mainly eggs, beans, tortillas, rice, berries, bananas, apples and melons. His digestion system ranks among the best on earth, I think.
Migas are a day-after dish for me. I use leftover tortillas and salsa bandera. Tear/cut tortillas, fry in oil. Add eggs, scramble. Add salsa, stir, cook briefly. Serve with cilantro and queso fresco next to leftover refritos. Variants: If no salsa, remove tortillas once cooked, fry fresh veg (onion+chiles+?), then reintroduce tortillas with eggs. If no tortillas, use chips instead. Can add leftover meat.
You Kenji, Let's see a video on storing fruits, vegetables, greens, etc in the fridge. What goes in high humidity and what goes in low. What's can be stored in closed containers vs what needs air.

Hi kenji! I believe you recently started using the motion stabilization tool a bit more frequently (maybe youve always used it) because some viewers were complaining about the shake. However... I am of the opinion that during times when the stabilization ends up cropping and zooming a lot (like around @2:20) the viewing experience is not worth the tradeoff. my 2c! love u thanks for teaching me everything i know

1.) No-talk, late-night "pantry-raid" = BRILLIANT. (Alton: sorry, not sorry.) 2.) Do you just keep roasted chilies in your fridge? How do you store them? 3.) Back in March, I bought a "lifter rack" [for lack of actual terminology--similar to a wok-ring, but for flat-bottom woks... to raise them above the heat source(???)]. I bought it at the my local Asian market, right next to the wok rings and I use it basically (exactly) how you use it for in this video, but on an electric stove. LOVE IT! 4.) Double-carbs, sir!? This is clearly DRUNK FOOD. (Did I mention that I'm totally appreciating the lack of narration?) 5.) There's a local hot sauce here in central-PA called Red Hawk "Evil Granny"... made with Granny Smith apples. Amaze-ballz on any pork dish... also chicken or eggs. Production is limited. Call the company and have a case sent. (No, really, PLEASE. They don't make it regularly and it's the best hot sauce they make. Please help encourage them to up their game! Folks will pay.) 6.) Bringing it back around: Kenji this vlog entry is almost the anti-Ragusean approach. ;p I love you both, but please have more videos like this.
Tip: don’t leave your chips in the egg so long. I like putting some in right when the eggs hit the pan, and some as the eggs start to set. That gets you some that are mushy and some with more bite. Also, leave off the scallions!
One of the best things about Kenji and his videos is he doesn't care if we see mistakes. Burn a tortilla, throw it out and get another one. Clearly the video is edited to some degree as he has some jumps but that seems to be about eliminating some dead time. He could have edited out that entire part but instead leaves it in. In other videos he may mention that "oh this butter browned a bit too much" or "this may be a bit burnt for some people" but its all part of the process of cooking. Some things still taste fantastic even when these little things happen but you move forward and know that even the best make mistakes.

Looks like a great lane to be in, delicious food and ASMR
1.) No-talk, late-night "pantry-raid" = BRILLIANT. (Alton: sorry, not sorry.)
2.) Do you just keep roasted chilies in your fridge? How do you store them?
3.) Back in March, I bought a "lifter rack" [for lack of actual terminology--similar to a wok-ring, but for flat-bottom woks... to raise them above the heat source(???)]. I bought it at the my local Asian market, right next to the wok rings and I use it basically (exactly) how you use it for in this video, but on an electric stove. LOVE IT!
4.) Double-carbs, sir!? This is clearly DRUNK FOOD. (Did I mention that I'm totally appreciating the lack of narration?)
5.) There's a local hot sauce here in central-PA called Red Hawk "Evil Granny"... made with Granny Smith apples. Amaze-ballz on any pork dish... also chicken or eggs. Production is limited. Call the company and have a case sent. (No, really, PLEASE. They don't make it regularly and it's the best hot sauce they make. Please help encourage them to up their game! Folks will pay.)
6.) Bringing it back around: Kenji this vlog entry is almost the anti-Ragusean approach. ;p I love you both, but please have more videos like this.
Tip: don’t leave your chips in the egg so long. I like putting some in right when the eggs hit the pan, and some as the eggs start to set. That gets you some that are mushy and some with more bite. Also, leave off the scallions!

One of the best things about Kenji and his videos is he doesn't care if we see mistakes. Burn a tortilla, throw it out and get another one. Clearly the video is edited to some degree as he has some jumps but that seems to be about eliminating some dead time. He could have edited out that entire part but instead leaves it in. In other videos he may mention that "oh this butter browned a bit too much" or "this may be a bit burnt for some people" but its all part of the process of cooking. Some things still taste fantastic even when these little things happen but you move forward and know that even the best make mistakes.
Your videos are really satisfying to watch.
