I've just made your cake for my daughter's birthday today and it was so soft and delicious. Nobody could tell that it was gluten free. This is one of the best gluten free chocolate cake's that I have ever made. Thank you for this recipe.
Hi! Hope you don’t me asking, do you work with frozen cake layers? I’ve heard it’s better to use them frozen for tall cakes as the buttercream hardens between the layers and the cake becomes more stable..
Every question is welcome! I love to freeze my cake layers after baking (and before assembling) for flavor development. There’s something about the process that continues to make the cake so yummy. As for building a tall cake with frozen layers, I actually do it sometimes but not always. I feel like the trick to building a tall cake is making sure to press between each layer to help reinforce the cakes stability so the cake doesn’t start to lean. Hope that helps!
