You can use 3 whole large eggs instead of 6 egg whites. The cake won’t be as white in color and will be a bit more yellow but if that doesn’t bother you then I say go for it! 🤗

Thanks! You can find all of those things on Amazon. The bowl cover came with my mixer but you can purchase that separately. The cake trimmer is Wilton brand, the one with a wire. The pans I recommend are either Wilton’s or Magic Line pans…8 inch round and 2 inches deep.

For sour cream you could use yogurt. For shortening you could use butter (use a little more than the shortening amount call for). Just know that the shortening is a what allows the cake to remain white and it’s what makes it soft. If you substitute it out, the cake may not end up as moist and soft as if you had used it.
You can use full fat plain yogurt for the sour cream. It’s not the same but will work in a pinch. For the shortening, you can try using butter in place of that. The texture of the cake may not be quiet as soft and it won’t be as white in color though.
It's best if you can use sour cream, but if you can't get it, you'll need to replace it with something else and not just skip it or the cake will be very dry. You could replace the sour cream with plain yogurt, but try to use the full fat version and not the low fat if you can get that.

It wouldn't really be quite enough batter to fill three 7" pans. I mean you could do it but the layers would be thinner and could possibly over-brown quicker (and possibly burn) since the batter wouldn't fill the pans enough. You could mix up a recipe and a half and then add the batter to the pans. You'd have some leftover batter though as you wouldn't want to use all of it to fill the pans as that would be a bit too much. Basically, just fill the pans about 1/2 - 2/3 of the way full and use the leftover batter to make a couple of cupcakes. Hope this helps.
I used vegetable shortening in this cake because it makes it moist and a little lighter and fluffier than butter in my opinion. It also helps keep it a whiter color. You can replace it with butter but it will not turn out exactly the same.

Google replacing eggs in cakes but just know it will take experimenting because non of those options will make it turn out exactly like the cake here. They’ll all have different textures. I would also check out Gretchen’s Vegan Bakery channel. She is a wealth of knowledge and has tons of recipes for vegan cakes.
I'm a vegetarian and i usually use 1/4 cup of milk for 1 egg. I'm not sure how well it will work for this recipe but Baking is all about trial and errors

May I substitute egg white for the pasteurized egg whites in the carton please? If so how many ounces or grams should I use? Thanks so much!!
I haven’t tried it but I think it would work though. Try using about 2/3 cup of egg whites or around 4-5 ounces or so.
