You could either half the recipe or put it individual serving size ramekins or freezer safe containers to freeze for later. Take one out of the freezer and thaw before baking when you want just one.

Close. This is more like the love child of a bread pudding and an egg casserole. A crustless quiche does not use bread whereas bread pudding does.
