French Toast Muffins

  • With the same traditional custard base as French toast, these muffins are easy to make and have tons of sweet flavor. After the bread soaks, it’s formed into a muffin tin and sprinkled with a sugar topping. When a glaze is drizzled on top, it’s like having this special breakfast treat all in one compact morsel.

    INGREDIENTS
    - 4 large eggs
    - 3/4 cup heavy cream
    - 3/4 cup whole milk
    - 1/4 cup powdered sugar
    - 2 tsp vanilla extract
    - 1 1/2 tsp cinnamon, separated
    - 2 tsp orange zest
    - 1/2 tsp kosher salt
    - 6 cups 1-inch cubed bread
    - 2 tbsp white granulated sugar
    For the glaze:
    - 1 cup powdered sugar, sifted
    - 2 tbsp orange juice
    - 1/2 tsp vanilla extract
    - 1/4 tsp kosher salt
    INSTRUCTIONS
    - Preheat the oven to 350°F. Butter a 12-cup muffin pan and set it aside.
    - In a large bowl, whisk the eggs until they are smooth. Add the heavy cream, milk, powdered sugar, 1 tsp cinnamon, vanilla extract, orange zest, and salt. Whisk until smooth. Add the cubed bread and stir the bread into the custard. Allow the bread to rest until the custard is soaked in, 5-8 minutes.
    - Once the custard has soaked into the bread, portion the bread and custard evenly into the prepared muffin pan.
    - In a small bowl, combine the white granulated sugar and the 1/2 tsp cinnamon. Sprinkle the mixture over the prepared muffins. Bake the muffins in the preheated oven until the French toast is beginning to brown and puffed in the middle of each muffin, 25-35 minutes.
    - Once the muffins are baked, remove them from the oven and allow them to cool for 5 minutes. Once cooled slightly, drizzle with the glaze and serve.
    For the glaze:
    - In a small bowl, combine the powdered sugar, orange juice, vanilla extract, and salt. Whisk until smooth. The glaze can be adjusted with more orange juice to thin it down or more sugar to thicken it slightly.

    Caleb I was so happy to see the orange sting on your counter. I have always used orange in French toast. I’m so glad to see others do also. It cuts the richness and livens up the flavors. These look delicious, I’m definitely going to give them a try

    I’m using your vanilla extract recipe. Your instructions were the most complete. I’m wondering if you could do some other extract recipes. Coffee, coconut, mint, almond, cinnamon, orange, lemon, lime, and whatever else you think of.

    Oooooo you could make these and eat some now, freeze the rest, then breakfast is ready whenever. Maybe add some raisins or craisins or nuts. Great recipe.

    🤔The metal ringed stand that you have your eggs in today...Is that it's original purpose? I have something like it, & never figured out how to use it? I thought maybe for cupcakes. MAYBE a new use could be for Keurig cups? Not sure if the size works. Your French Toast Muffins look delicious! I look forward to your daily stories in my Fbk feed!🌞

    Brilliant! I love French toast and never thought about making it into a muffin; great idea here. I'm expecting a house guest who may be here for more than a few days...this recipe will certainly simplify mornings and the entire breakfast routine since our schedules will not be synchronized.(How about adding a pinch of fresh nutmeg to the custard?)     I made my own vanilla for the first time, it’s been a little over a year now and I want to put it in little bottles to give away or use my self. My question is what do I do with the vanilla beans? Can I add vodka back in there with new beans and old beans what do you do with your old beans? Please help!

      YOU USE THE old beans!!! Do not throw away. You snip off the tip, or in the middle and squeeze from the top down. All the vanilla bean seeds (goodness) come out like a vanilla bean paste. Put in a recipe that calls for vanilla. That way you have actual real vanilla in it instead of the extract. It is like magic what happens to the inside. After you squeeze all the beans out, set the bean shell aside to dry for a few days. Toss that into some granulated sugar in a jar. Keep adding the old bean shells over time. You will have Vanilla scented sugar. Then if you really want to get fancy, you blend all the sugar and bean shells together and make vanilla powdered sugar. That makes things really yummy.

    I have always mixed my eggs in anything before I add them to the recipe. I hate when you find bits of yoke that didn’t mix in.
