For those saying that he made a "partial omelette" or "overcooked" it, he's making the American version of scrambled eggs, and this folding technique is exactly how you do it. Some people are used to scrambled eggs that are slightly runny right out the pan, but that doesn't mean anything more is overcooked. These are actually perfectly cooked eggs that are served right after they solidify. There are tons of ways to make eggs, and your way and this way are just some.

Ideally, it still requires the eggs to be slightly wet, but the chunks are still much larger than the European scrambled eggs. Most people make omelettes and call them scrambled eggs anyways, so it doesn't matter to me.
It's not as much an us version of scrambled eggs as a pretty common misunderstanding of what scrambled eggs is supposed to be like. There's nothing wrong with this cooking technique, but it's not scrambled eggs.
This is my definition of scrambled eggs. I HATE runny eggs it's so fucking nasty. Like everything Americans cooks is so "lazy" from their steak to eggs, Americans just can't seem to cook it. They always want it a bit raw yuck 😷
i don't cook anything unless it involves a microwave, so watching an experienced cook at a stove like this is like watching magicians at work. Might be simple and old school to others but to me this was a lot of fun. Cheers. =)
You can actually do scrambled eggs in the microwave, with decent results. Put them in a shallow dish and use the same procedure he uses in the video, stopping the micro every 15-20 seconds to push from the outside of dish inward.

Then you end up with a bunch of tiny, fluffy curds (what you call the solidified egg yolk/white mixture that defines scrambled eggs) instead of one or several large, rubbery curds. He's right though, that the key in any case is to NOT overcook them. Browned scrambled egg curds have a slight bad-fish taste/smell to them. BLECH.

Sorry but that is NOT scrambled eggs its an omelette you over cooked it and you should have done it in a saucepan and kept it stirred and not over cooked like you did... And what with the adding water Ahhhhhh. milk yes but NOT water....

Pan scrambled eggs. Just say no. Scrambled eggs done in a saucepan over a medium heat and stirred continuously. That's the way to do real fluffy scrambled eggs. What you did was to spoil an omelette by breaking it up.

Yep. Either liquid will cause a bit of steaming action during cooking that makes the eggs fluffy. I always use a bit of cold water.
Milk, and never put the salt on the eggs until they are done, because it make them rubbery.
