    To me pandan > vanilla. But weirdly enough, vanilla is so much more expensive. In asia some of us who dont live in cities just get out of the house and get a few leaves from the garden

      Next time when anyone is around piccadilly circus go search for chinatown and find a cake shop. They have some "pandan kaya sponge layer cake". I really recommend it.

      de0509 vanilla is a very labour-intensive spice to grow... it's the next most expensive spice after saffron. And true thing about Asia (I live in Singapore btw), the council of the town my grandparents live in grew pandan leaves beside the pavements, but they had to plant different shrubs after people kept snipping the leaves to make food lol.

    You know, out of all the people in SORTED food, I think Bens the mastermind. I know many people have probably said it, but ever notice how Ben will kinda take the spoon or bowl out of Mike, Barry, or Jamie's hands when they're doing it wrong? Lol he kinda reminds me of a mother... wich I know sounds weird...

      Gemmy MC The other guys are there to add a personality to the show. If Ben was not there this show would be basically over. None of the other guys can cook to his caliber. Remember when they "cooked" for Ben and it was basically pre school level stuff. He is always behind the scenes to some degree when it looks like they are cooking by themselves. So in a sense you're right when it comes to cooking Ben pretty much runs the show.

    omg I didn't even know this series existed ;---; I was so upset when they stopped doing their 'at the table' segment, it was my favorite. The white chocolate panna cotta video is what got me to subscribe. I haven't watched this channel for a while, but I decided to come back and see what they were up to. This series is literally the same thing as at the table, and I've never been so happy in my life ;u;

    Usually in Indonesia when we cook rice, we put 1 pandan leave and tied a knot and it smells AWESOME!

    Jamie used too much pandan and yes the sweetness will come through, but when you add too much you end up with a bitter after taste. Just a few drops to add a little sweetness and color will be perfect~ Ben had it right.
    I use pandan in my Filipino cooking (mostly sweets).

    My mom always makes those pandan pancakes! She would put some pandan leaves in a blender (with a splash of water),then squeeze the juice out and mix them into the pancake batter. They taste AMAZING!

    Stuffed deep fried pancakes are amazing! When you have pancakes you can stuff it with a spicy tuna filling and then cover with breadcrumbs. Then you just fry it and it tastes amazing! I was a bit unsure when my mum said she was going to make it but, it was the best thing I have ever tasted!

    I love pandan !! especially when you put Pandan leaf in hot tea ... the aroma and taste is sooo yumm. Sadly, my mum don't make them anymore =(

    Pandan reminds me of a Hmong sweet drink called nabvaam (soooo good), which uses pandan extract for these floaty things that my mom always called the tadpoles, and the sticky rice I made with my mom a few years ago. She made a huge load of sticky rice mixed with coconut milk, and had plenty of pandan leaves to bunch the sticky rice in. Within each bunch, she would either have a piece or two of taro or banana. It was really good.

    Pandan is very common in my country, Indonesia. And if you try our traditional dessert in a traditional market, which is some are pandan flavor, the color will be more like James' pancakes rather than Ben's, but here that's because the food coloring. But if it's homemade, it will be more like Ben's, with natural panda leaves and its color, no food coloring added.

    We actually get pandan waffles smothered with either a chocolate spread (think Nutella) or a sweet coconut spread (kaya) here in Singapore. It's fairly common in our neighbourhood bakeries, and the smell of the batter cooking in the waffle iron is simply the bomb! Crisp on the outside, chewy on the inside, whilst dripping chocolate spread into the bottom of the paper bag it comes in... Mm mm~

    Pandan leaves! It gives the best aroma to your cuisine. You could use it in pudding, or any desserts you want.

    You should try making Nasi Uduk; simply cook rice with coconut milk, bruised lemongrass, and knotted pandan leaves. It goes incredible with sambal and fried chicken

    wow you guys actually know pandan? amazing!! pandan flavour normally goes well with gula melaka(palm sugar) or shredded coconut, it gives more authentic flavour if you guys likes it, try it out! :D

    The easiest way I've found to make fusion dishes is to take the flavors of one dish and mix it with the cooking style or application of another cultural dish. :)

    To be honest, I'm actually surprised you did pancakes. Pandan and coconut waffles are one of my favorite Vietnamese desserts! Never thought about pancakes, since you don't get that crunch :P

    It really depends on how green you want your food to look. The pandan paste you've used is artificially made so a small amount goes a long way.

    The pancake recipe looks really good! Think you could sub in a chia-seed water mix instead of the eggs and oil for the butter to make it fully vegan and it would work still?

    Try to use fresh spices in original form for your spiced fried chicken.Use blender or pestle and mortar.See the difference.

    Do you think it is possible that instead of just dipping the chicken into the buttermilk, you leave the chicken in the buttermilk overnight to make it more tender? Or will it be just as tender without soaking the chicken meat in the buttermilk ?

    Instead of using the store-bought pandan extract, you can blitz up some pandan leaves with your coconut milk in a blender and strain the mixture. Gives a nice natural smell, taste and colour :)
