    One of my children has sensory issues. They had a problem with many textures or flavors in a soup. We read the story "stone soup" and recreated it in our kitchen. I made a stock and they tasted it. One by one, we added ingredients so they understood the role each plays. The sweet carrot, the umami mushroom, the tangy onion...once they understood each vegetable's contribution to the pot, they could tolerate the many flavors and textures better.

      I’ve use that story for years! I take peoples kids camping I have plenty of rules like if you’re under 18 you have to bring a parent, everybody Hass to bring their own pot to cook in. I bring the ingredients and we had them one at a time they can stop when they think it’s done. I.e. no more vegetables :-). And they have to take one bite of the finished productFrom my pot. They may never eat it again but they’re happy to eat it when they’re camping. PS they’re allowed to bring their own food but they have to eat it after they have one bite and make their pot of food.

      I love this comment and what I love even more is that you took the time to articulate and share this charming report with us all. Comments like this give me hope for humanity and that's no exaggeration. Glad I took the time to scroll through the comments here. I wonder if you'll have fun making Japanese savoury custard cups? There's usually a shrimp or some sliced shitake mushroom placed at the bottom of each ramekin/cup so this bit of 'hidden texture' is another cooking lesson to share. Such a delicious way to eat eggs, like nothing else due to the silky, creamy 'set' texture. Breakfast addition I rarely cook but really ought to as it's cheap, quick, nutritious and of course, delicious. Hope you have a lovely Christmas season.

      I feel exactly the same as you Christopher. I can't wait to go back next year and throw all my hard-earned tourist dollars into the Japanese economy. I've missed it so much. A quiet onsen bath followed by a cup of coffee, a delicious pastry whilst watching really funny Japanese TV whilst lying on my futon. Does life get any better? It does; the next morning at breakfast. 🥰

    Sukiyaki Hotpot variations with Daikon Radish is some of the best japanese food outside of sushi and sashimi that I have ever tasted. There is something special about Daikon Radish + japanese flavor profiles. Familiar yet different.
    Tonkatsu Udon (or a chicken variation made the same way) is a second favorite for sure. So awesome.
    I sorta want to eat Tonkatsu Udon with fried catfish as a replacement lol. That sounds epic.
    This food looks delicious. Noodle bowls and hotpots are awesone.

      @@MiwasJapaneseCooking If I remember correctly, Mirin (and obviously soy sauce) was an essential flavor for the broth. And then everything else is vegetable flavor, daikon radish flavor and whatever else you put in the hotpot.
      (Also, we did "fondue mode". So we were dipping paper thin slices of quality beef, raw vegetables and tofu into the 160+ Fahrenheit degree hotpot in the middle of the table, during the meal. After a little while the broth tasted extra amazing). That is obviously 'adults only' mode.

    So yummy! I can’t decide if i love udon or soba more, recently I discovered matcha flavored soba called “chia soba” and I’m obsessed, it’s such a beautiful color too and full of umami 🤍

    I love adding udon to any nabe (never add rice, that is not for me, but my husband and daughter like that as well). And udon and sesame is one of my favourite combinations. And sesame sauce for any nabe next to a spicy one. I'm putting this on the menu sometime this winter. i think after new years. It's easy and I love such simple yet homefeel cooking after the holidays.
    I always use green onions as a substitute for negi, and use both with and green part. If I would use the Dutch leeks, the green part is very tough so I would only use that to make stock.
    I recently saw a interesting side dish. On more like the shojin ryori cooking I saw someone making daikon pickles by mixing and overripe kaki with salt and putting daikon slices in it. I made it this morning so I can't wait to see next week how it turned out. :)

      @@MiwasJapaneseCooking that's so funny :) Do you know the eact measurents of salt to one kaki? I had to guess since I only saw someone making it but they did not say how much you needed of salt, kaki and daikon. If your mother would be willing to share the recipe I would be so grateful.

      Agreed lol. Tofu can be a replacement though for protein if you really want full on vegan mode.
      Tofu basically is like a flavor sponge once you figure out the correct types to use in the correct dishes.
