    Without going into too much detail, matcha is essentially processed green tea leaves that have been stone-ground into a delicate powder. It is usually whisked into hot water or milk and made into a tea.
    Matcha tastes like the smell of freshly mowed grass...pleasant, I know, but, people either love it or find it too bitter. It is high in antioxidants and supposedly enhances calm, boosts memory and concentration and burns calories. I just like the way it tastes.
    Here’s a simple recipe for matcha cookies. I opted for a shortbread-like cookie, buttery and crisp; a perfect treat to go along with your afternoon cup of tea. Enjoy!
    Prep Time: 10 minutes
    Cooking Time: 10-13 minutes
    Yields: 2 dozen cookies
    Ingredients:
    1 cup of unsalted butter, room temp.
    ½ cup of sugar
    1 tsp of vanilla
    2 tbsp of matcha powder
    1 ½ cups of flour
    Directions:
    1. Preheat oven to 350°F and prepare a parchment lined baking sheet.
    2. In a large mixing bowl, cream together butter and sugar. Add vanilla and and matcha powder, mix until well combined.
    3. Slowly incorporate the flour until everything comes together.
    4. Place heaping tablespoons of cookie dough onto your parchment lined baking sheet, don’t forget to leave room between each ball of cookie dough. Work in batches if needed.
    5. Bake at 350°F for 10 to 13 minutes. Cool on wire rack.
    6. Enjoy with a cup of tea!
    Notes:
    If your cookie dough is too soft, pop it into the refrigerator for 10 minutes.
