      wooden spoon if using non-stick pans. Otherwise, the metal
      chef spoon is perfect for scraping everything off the aluminium pan/karahi,
      etc. Using the aluminium pan/karahi, the sauce is meant to stick somewhat and
      this brings out a different quality and flavour.

    Ouch sorry but the metal spoon screeching and scaping in the metal pan really hurt my ears. You should have used a wooden spoon

    Do you blanch/pre-coock the spinach or just wash & drain before adding to the base mixture at 03:18?

    This went down really well. Used it as a side dish to a Morrocan roast lamb shoulder that I've been doing for a while and despite the fact they are dishes from different continents they complement each other really well.

    What's in your onion paste other than the obvious?

      Fadeypoo Onion Paste (aka Bunjarra)... well I can't improve on the recipe I use from a chap called Mick Crawford, also known as CBM (Curry Barking Mad). He has written two very good eBooks. I recommend both of them for their no nonsense recipes. His RUclips channel is here.. ruclips.net/user/CURRYHOLIC1. The Onion paste is slow cooked with onions and spices, and after patience and love yields a delicious sweet depth of flavour.

      Fadeypoo Love the music too and listen to Classic FM when ever I can. However, I had to endure almost 20 mins of this tune on a loop when I telephoned my insurance company and was put on hold. Most annoying. I agree about the curry. Mmmmmmmmmm

      Companies intentionally do that to encourage you to use their website, thus saving them money. I record all calls with private companies and their on hold musical choices get on my tits too. I'll often put my own music on and concentrate on that. Defend myself with some Floyd or Paul Simon :) peace

    This is the second time I've made this dish. First time with frozen spinach. Not bad but still felt I could do better. Made tonight with fresh spinach. Wonderful. Wife say's best we've had in five years. Restaurants here in Toronto are not BIR, in fact dreadful. Thanks again for your terrific and well informed dishes. Also yours is the best base I've made so far. Can't wait for more dishes....

    I used a small amount of olive oil and coriander seeds. No onions just spinach potatoes and garlic n a bit of salt. It was amazing

    Hi, do you use yellow mustard seeds or black mustard seeds? Or does it not matter? Thanks for the video; the dish came out GREAT but I had to omit the mustard seeds as I did not have any 😂 But it was still wonderful!

    Made this last night and it tasted absolutely divine on a whole new level. I am obsessed with meat, yet this was so good I didn't even crave meat. It's just as good as a main as it is a side dish! Great stuff Misty, this surely exceeded my local curry house even!

      I will definately give it a try, I have made many of your madrases, masalas and kormas, they are a regular in my house and all my family loves them. And not at all my friend, thank YOU for teaching me/us how to make curries, can not express my appreciation enough for all your lessons. You are a teacher, but you do not teach for money, you teach for the good of humanity so amatuer chefs like me get to learn the tricks of the trade and share the love of food with others.       Panch phoron literally means "Five spices" - Cumin, Brown Mustard, Fenugreek, Nigella and Fennel seeds

    It's an incredible video..... wonderful recipe, superbly cooked, no doubt delicious!
    Then in the final photo; coriander. Fucking coriander absolutely everywhere! Like parsley in the late '70's, shitty portions in the '80's, lemon twists and balti bucket's in the '90's and bastard tapas in the whatever. Please stop chucking it over everything! For 20% of folk, it tastes like crap by way of adverse chemical reaction - but even still... it's old hat and annoying!

      Dear Goat Gruff, It appears you had a bad experience with coriander in early life, affecting your emotional reactions when experiencing it in real life, or even visually on a screen. You obviously have lived through decades of food related trauma, both herb related and otherwise, resulting in 'grumpy old man' syndrome, for which you have both my sympathy, and respect. May I tactfully suggest that you seek further help from your local counselling service, or, even better learn to desensitise your fear of the soapy green herb by eating it every morning with your stewed prunes (by the way, are the prunes working yet?).       MistyRicardo I think you're right... It's actually something from a PAST life! I was forced to work as a Plongeur in a post-war 'British restaurant'.... the damage is irrevocable.
      I still believe it's lazy presentation however. Especially for such a finely produced dish.

      Also, is it possible that in a past life you were indeed a goat, who overgrazed on coriander? Perhaps you lived on a coriander farm, and lived a generally oblivious life until one day ending up as the main feature... goat vindaloo. How ironic, but impressively appropriate.

      Yes a little sugar helps lift the dish, not always necessary. Onion paste is a bunjarra (onions very slowly fried in oil with spices until dark brown). It adds a lovely depth flavour. I use someone else's recipe for this, but may be producing my own soon.

      MistyRicardo I can use the powder and seeds.... I would LOVE to enjoy it (it smells wonderful) but - and you can look this up - it tastes like cleaning products....
      Trust me, I'm a real cynic about 'delicate temperaments like 'lactose /wheat intolerance' and such.
      When I first tasted it, I thought the chef had left washing up liquid in the pan. It's apparently genetic.

      Thanks Goat. I want to entertain you with something... Coriander doesn't taste like soap. Soap smells/tastes like Coriander. It's used to scent soap.

      Hi. Buy some fresh garlic and ginger. Peel and roughly chop the garlic cloves. Chop the ginger into smallish chunks, removing any dark brown flesh. Blend together to a fine paste, adding a little neutral oil to help loosen things up. Ginger can be quite powerful, so depending on your taste, use a ratio of 2:1 Garlic:Ginger by weight. If unsure, experiment and find the balance you like.

      ... or you could buy it ready made in frozen blocks. Make sure it is pure garlic and/or ginger without any additives. Avoid jars or tubes, as these contain preservatives which taint the flavour.

    Are you using frozen spinach? Would a 200g bag of fresh spinach be enough?

      Hi. Yes I was using frozen spinach in this video. 200g bag of fresh (wilted and squeezed) should be plenty.

    misty your good but not that goodyou have extended what bengali cooking culture is all about...that is quick quick quick done..your way can be simplyfied down very easily dont try to fool ppl that know itll backfire on you son...simplicity is the way to go with speed but u really should know that. there cultures are not like the rest of the world..take that tip and work it is my best advice.

      Just to add to what Kevin kindly said, it's a mixture of fennel, fenugreek, cumin, kalonji, and black mustard seeds. Very common in Bengali cuisine.

      Just have everything prepared in bowls, it doesn't even take that long, and then cooking it is easy!

      Sahara B look at the shop if you want ready made.......this is a how to make video.....you need a "how to buy" video tutorial. Google, "how to buy saag alloo for dummies".

    I am not sure why everyone calls is SAAG aloo. Any mention of saag means pureed Mustrd or spinach leaves

      BEN MINN all kinds of leaf which is eatable u can say saag as an Indian style
