You might be better off sautéing them in a pan, covered, with a little water, and cinnamon, dash of salt, a few raisins and then once softened, add a splash of calvados, remove lid and reduce down :) That would be quite delish with the pork too! xx

Hi Beth! Thank you for this great recipe. Can you recommend how many time do I refrigerate my pork in a brine and grill it if I'll use a grill pan? Does cocking time depend from a type of a grill?
Kateryna_knits Sure you should brine the chops for at least 4 hours and then with a grill pan, I'd say 7-8 mins on each side depending upon how thick they are. Or you can also grill them until they have nice grill marks (3-5 mins each side) and then pop in a 350F oven for 10 mins or so to finish cooking through. Enjoy! :)
Beth, what salad would go with this? Will rocket salad with arugula do? I know there's the fennel as veggie but my health conscious parents will absolutely ask for salad.

One of the best schools out there is the CIA www.ciachef.edu/ amazing chefs have come out of this school :) or there is also www.cordonbleu.edu/ personally I would have loved to have gone to one of these schools, but when I was younger didn't realize that food could be a career. So I took the long way around Ha! Which reminds me that if you find something that makes your heart sing, the universe will find a way to bring you back to it :) I really just learned to cook from my family, from travel and just from cooking, constantly. Doing something and making mistakes and doing it again, is really the best way to learn anything. Follow your bliss and DREAM BIG DREAMS xx

The trick I learned to perfect meat is when you gently touch your thumb to the different fingers on a your hand and press the fatty section under your thumb (touching different fingers will have a different firmness, which indicates how done it is). Thumb to pinky=well cooked Thumb to ring=medium Thumb to middle=medium rare Thumb to index=rare
recently saw on your video how to make a white chocolate mousse tilted wine glasses using egg boxes together with another food (cannot remember which). I now cannot find this recipe, is it possible to show again.
Haru Niiki actually you could do this recipe with chicken too. Same technique just get chicken that is skin on bone in :) And proceed as directed. Enjoy!
