I thought Arabic Qahwa was supposed to be made from Green Coffee (unroasted coffee beans) and cardamom. Roasting the coffee changes the flavor profile and color of the beverage. I'm curious if Qahwa is made in multiple ways or if there is one preferred way of making it.

Actually arabic coffee is always roasted, but the roasting can vary from light to dark

No, most Gulf Arabs like their coffee light roasted.

Won't boiling for 10 minutes over-extract and make it bitter?

How do i go about searching for the right coffee if i need to buy it? I would not be able to roast it myself but i do have a grinder.
