    I used to grind the meat for one of the busiest gyro places in my city. They actually used a beef and pork blend. This is pretty common as lamb is expensive here. It's also very lean and can be gamey. Pork is fattier and keeps the meat moist. So if you can't find ground lamb pork is a great substitute if your diet allows for it.
