How to make homemade Lamb Gyros with Tzatziki sauce recipes

GYRO RECIPE
1 medium onion
2 lbs ground lamb
4 cloves garlic minced
1 Tbsp dried marjoram
1 1/2 ts dried rosemary
2 tsp dried oregano
1 tsp kosher salt
1/2 tsp black pepper
preheat the oven to 325
put the onion in a food processor and process
turn out onto a tea towel, gather the ends and squeeze until all the juice is removed - return to the food processor
add the lamb, garlic, marjoram, rosemary, oregano, salt and pepper and process until it's a paste
place the meatloaf onto a jelly roll pan and shape into a rectangle about 1 1/2-2 inches tall - don't forget to add a meat thermometer
bake at 325 until the meat hits 155-160
take out of the oven and let rest for 10 mins
turn the oven to broil
then slice the meat thin and lay out flat on a baking sheet (or two)
broil 2-3 mins, or until the meat starts to crisp on the edges
Serve on a pita bread with tzatziki sauce, thinly sliced red onions, diced tomato and feta cheese!
Tzatziki sauce
1 1/2 C greek yogurt*
1 medium cucumber
pinch of kosher salt
4 cloves garlic
1 Tbsp olive oil
2 tsp red wine vinegar
5-6 mint leaves (minced - more or less depending on your preference)
peel and de-seed the cucumber then grate - place the grated cucumber in a tea towel, gather the ends and squeeze to remove the liquid
You can either just stir all the ingredients together (in this case be sure to mince the mint leaves well)
OR place all the ingredients in a food processor and blend - you can blend a little or a lot depending on the texture you want in the end.
refrigerate and let the flavors develop together.
serve with pita bread triangles or on top of gyros
*if you don't have access to greek yogurt you can place plain yogurt in a tea towel, gather then ends and tie to a wooden spoon and hang over a bowl overnight in the fridge - this will thicken the yogurt to the thickness needed

As a Greek Man, I want to say BRAVO on a job well done! In fact, the lamb that you used is of better quality than the meat that is on the rotisserie beacuse what is on the rotisserie is all the left overs from everything but lamb. I cooked this and it was very good.

If you have a meat slicer, you don't have to cook the loaf. You can just slice it raw and frozen and pan fry the slices for more restaurant like taste and texture. You can slice even with a sharp knife if you don't care about the consistency of the shape of the pieces.

I love gyros and make my own as well. Your recipe is a bit different and the main reason I watched your video was to see about the tzitki sauce. I used a good store bought greek yogurt cucumber sauce which is fine for me. I make mine with 1 lb ground lamb, and 1 lb ground 80/20 hamburger, I also form it in a 9x9 pan, lightly oiled and parchment paper. Basically though we are both on the right track on loving these. My biggest qualm is the pita bread. I need to find a thinner, softer, more flexible pita bread than what I am using. Also one that is a bit larger too. By the time I add a small amount of each ingredients, onions, tomatoes, shredded lettuce, diced cucumbers, gyro meat and sauce, I need a bigger wrap to hold it all so it doesn't all fall out.
Yes it is interesting how many different ways you can make classic recipes like this!
Great instructions. I come from a Greek family but we didn't make food truck food. So this is something I am looking forward to. I think the spices are right on as opposed to the ones I have seen that do their own "Take off" on the traditional ones I am more familiar with. THanks a bunch

I made this today with ground chicken. It was ok alone but with tsatsiki sauce it was good. I wanted to use up my ground chicken so there you have it.
With the ground chicken the oregano and rosemary were stronger tasting. I don't like those to be too strong personally.
With that said I can't wait to make it with ground pork and lamb. I'm betting it will be delicious. Thank you for the video even if it is 3 years later. Those negative comments are obviously trolls and they get off on it. I laugh at their pitiful attempt at some attention! 😆😝

The only time I have ever had one was at arby's. With roast beef. I think I just love the bread but they are very good to me

gyros are made with lamb - you can of course use any ground meat you want - BUT it won't have the classic gyro flavor - and remember to cook to the temp of the meat your using - not all meats have the same goal temperature.

You know I've always wondered how you get your hair like that. You got wicked style.
awww thx! I started doing it like this like 6 years ago - it def took some training - the massive amts of bleach and damage (my hair is naturally black) and also thinning the top (crazy thick hair) also help with the style. I use mousse and blow dry it upside down and then use something like "play dirty spray" when it's short - something stronger like a wax stick when it's longer.

I love this! in the spirit of Greek food, I wondered if you could do a very similar Turkish food Doner?? We would have them in Germany and can't find them in the states. It's not a gyro but it's similar. Meat on a kebab that's rotisserie and shaved off it and placed in an unlevened bread like naan. crazy delicious but not a gyro.

Heidi H what you just described is gyros the way it's supposed to be made it's constantly turning on the rotisserie so the outside is crispy the only difference is that gyros in Greece is usually made with pork and sometimes chicken. Lamb is more common in Turkey since they don't sell pork

Refrigerate cooked meat for 2 to 4 hr...and then slice and pan sear for 3 min is really good also

If you have thoughts on using leftover lamb (from a roasted leg) for a gyro, I would love to see it.
already cooked lamb wouldn't work as it wouldn't hold together with all the other spices, and would dry out if as you baked it again. You could cook a thick sauce with the spices and flavoring from the gyro, brush it onto the slices and broil for a second to create a similar flavor, but the texture would be wrong. but you could add it to pita add tomatoes, feta and tzatziki sauce and I'm sure it would be delicious, but not the same thing.

ive been using greek yogurt for a cple of yrs not sure if its the area(New England ) but even greek yogurt is to soupy so i switched back to using plain and just drianing overnight i mince the cucumber add salt place in a colander strainer lined with coffee filters place yogurt on top cover with plastic wrap leave both to drian over night in fridge.
Deseed the cucumber, less liquid to drain that way. ;)

The one low-tech tool I don't have is the tea towel. Asking Amazon just gives me "kitchen towels". And what about the net curtain someone else mentioned?

Whatever works. Cheese cloth, coffee filters, tulle cloth/net curtains. As long as it retains the least amount of liquid.

well this is just an americanized way to eat it, I'm sure it's a little different with the right equipment.
This is not gyros this is Americanized bullshit lmao
Gyro is certainly not meatloaf, it can be fresh pork, lamb or chicken cut/diced into chunks.
The actual recipe calls for marinating fillets of your choice of meat, stacking them on a skewer and grilling them on a rotisserie, preferably a vertical one, and every now and then cutting the outer layer when it has started becoming crunchy. The meatloaf version is for when you don't have time, patience or the equipment to do all that.
