  • Jamaican Curry Goat
    ***************************
    3lbs - Goat
    2 Large Russet potatoes - Cubed
    3 tbsp Oil
    Goat Seasoning

    2 tbsp - curry powder
    4 cloves of garlic
    3 stalks - Green onions
    1 small Onion
    1tbsp - Dry Thyme
    12 pimento seeds
    1 scotch bonnet ripe (add more if needed)
    1tsp salt
    1tsp black pepper
    1tsp garlic powder
    1tsp brown sugar
    2tbsp white rum
    Pot Seasoning

    1 small onion
    2 stalks of Scallion - beaten
    1 whole green scotch bonnet
    3 cloves of garlic
    2tbsp Margarine
    1tsp brown sugar
    1/2 tsp black pepper
    1/2 tsp garlic powder
    Salt to taste
    Steps:
    1. Wash the Goat with Vinegar and lime juice. Rinse, drain and pat dry
    2. Add all the seasonings listed under 'Goat Seasoning' to the Goat and mix thoroughly.
    3. Let it marinate at least for 6 hrs or overnight in the fridge
    4. Before cooking, take the seasoned Goat out at least 1hr before cooking so it can come to room temperature
    5. Heat pot and add 1/2 tsp of curry powder to the pot, let it roast for 30 sec to 1 min.
    6. Add oil and cook the curry powder for a minute before adding the seasoned Goat
    7. Cook for 2-3 mins and add hot water to cover the Goat and let it cook
    8. Lower the temp to medium and let the curry cook for at least 2 hrs.
    9. Check the pot from time to time and make sure to add hot water as needed.
    10. Par cook the potatoes and set aside.
    11. Once the Goat is cooked, add all the seasonings under 'Pot Seasoning' and adjust as required.
    12. Add the Potatoes and cook for 15mins on low
    13. Let the curry sit for at least an hour before serving over white rice.
