I'm Guyanese and I cab tell you Jamaican food does taste so freaking good they take their time and season their meat well and let it marinate. So delicious!
No disrespect but Guyana is in South America & in my opinion Guyanese dishes like cook up doesn’t represent West Indian. I went to Georgetown & was sadly disappointed by everything I tried, pepperpot cookup & their version of curry I found it to be sour & watery. I also tried Guyanese food in Miami & NY & have yet to be impressed by that style of cooking. The food I found to be most impressive is Trinidadian , Jamaican & Haitian food also the Bahamian seafood. Guyana food anywhere I have tried has never been good.

The goat is lean because it is all organic. Goats are left to feed on the grass or land. In dry season we mix a little natural molasses in their water so that they can stay hydrated longer. No kind of artificial food are given to them. That is how lean our goat meat looks in Nevis🇰🇳 Another island in the Caribbean.

Kay, Can you tell me which dry seasonings he used to season the oxtails. I know that one of them is Goya Adobo all purpose seasoning but then he used a seasoning that was in what looked like an old bay seasoning container but they said it was chili powder . ??? Also. Can you identify the other dry spice that he used that was in the plastic bag.
@@jessical.dupree7860 the spice in the plastic bag is dry pimento, it's a type of spice grown on the island. Very flavourful. It is widely used with meats. He also used the Jamaican meat seasoning which is the dark colour powder that he placed on the oxtail.

@@admobeer9551 I am not a 100% sure but it was brought to Jamaica during slavery to feed the slaves. My mother is a history teacher and I remember her saying this. It was a cheap source of protein for slaves and poor people. I guess it is one of those items that has been around so long it becomes apart of your culture. Personally I don't care for it, never had as a child too. I prefer my ackee with vegetables or shrimp.

Only the ackee cook right the oxtail missing things and must be fried individually then cooked, u dont put carrot and thyme in curry goat it clashes the flavour. U can take that chance with curry chicken even that no thyme. Thyme is for beef, ackee and those kinds but not curry because it clash with the natural curry flavour. Fo try street food and see

@@King-pv8fk although there is crime here in Jamaica, you should be unaffected by it, touristy areas are mostly crime free and are watched by the police often. If you do choose to venture away from your hotel then so long as you stay away from "ghetto" like places and communities you will be totally fine, those places are where 90% of the crime occurs. Most places where you would go as a tourist (like attractions, activities and adventure places) are usually crime free. Btw the best beaches are not on the hotels so don't be afraid of exploring

As a visitor I love the Jamaican food. We went to a fish market in negril bought a 30 lb snapper went into Revival (up in the hills) and had someone cook it for everyone one at the family owned mini stores.
When the chef put it in his hand to taste brought back so much memories...my grandma use to tip the gravy in my hand when I was a kid now I do it with my son...he loves it when I ask him “it gd or it need sumting” lol

@@raiethefantibae Guyanese food is heavily influenced by Jamaica, as far as spices go but also it depends on your ethnic background as well since there's a cultural custom to how you prepare your food, so for me my family is comprised of both Indian&Afro Guyanese, but as far as the curry dishes, rice&pease, cook-up rice...etc, they're very similar in that way. distinct in how they maybe prepared though(speaking to the spices). I hope I answered your question.
I recently made Guyanese style curry chicken and maaaaaan it was good. When I tell u people licked their plates clean. It's so different yet the same from Jamaican curry chicken. Caribbean food is awesome!

@@admobeer9551 I am not a 100% sure but it was brought to Jamaica during slavery to feed the slaves. My mother is a history teacher and I remember her saying this. It was a cheap source of protein for slaves and poor people. I guess it is one of those items that has been around so long it becomes apart of your culture. Personally I don't care for it, never had as a child too. I prefer my ackee with vegetables or shrimp.

Only the ackee cook right the oxtail missing things and must be fried individually then cooked, u dont put carrot and thyme in curry goat it clashes the flavour. U can take that chance with curry chicken even that no thyme. Thyme is for beef, ackee and those kinds but not curry because it clash with the natural curry flavour. Fo try street food and see

@@King-pv8fk although there is crime here in Jamaica, you should be unaffected by it, touristy areas are mostly crime free and are watched by the police often. If you do choose to venture away from your hotel then so long as you stay away from "ghetto" like places and communities you will be totally fine, those places are where 90% of the crime occurs. Most places where you would go as a tourist (like attractions, activities and adventure places) are usually crime free. Btw the best beaches are not on the hotels so don't be afraid of exploring

@@raiethefantibae Guyanese food is heavily influenced by Jamaica, as far as spices go but also it depends on your ethnic background as well since there's a cultural custom to how you prepare your food, so for me my family is comprised of both Indian&Afro Guyanese, but as far as the curry dishes, rice&pease, cook-up rice...etc, they're very similar in that way. distinct in how they maybe prepared though(speaking to the spices). I hope I answered your question.
